By Kyle LoJaconoklojacono@cnewspubs.comBrad Carlton and Richard Matthews competed against some of the best track and field athletes in the nation at the National Senior's Championships in Houston June 16-30. It was the first time either has participated in the national event,competing in the 60-64 age group,since they began doing senior events three years ago. "We didn't know this stuff even existed," Carlton,62,said."I went on the computer and searched for track and field.We both competed in high school,but hadn't done anything like this for 40 years.I found this thing called the Sunshine State Games,which is for people right up to 100." The senior's championships,formerly the Senior Olympics,includes track and field events along with basketball,archery and other activities.The games are every two years. Matthews,62,competed in the pole vault, where he came in third with a vault of 9 feet, 6 inches.That performance set a new Florida record in Matthews'age group. "It was awesome,"Matthews said."There were a lot of people and the competition was good." Matthews also does the shot put,discus throw,javelin toss and 100 and 200 meter dash,but focused on the one event for the national competition. Carlton,who has lived in Lutz for 20 years, did the triple jump at the championships, coming in sixth.He also competes in the shot put and long jump and plans to pick up the discus and hammer throws this year. "I didn't do as well as I wanted,but it was still cool to go and rub elbows with the top athletes,"Carlton said. For Carlton it's more about the personal competition than trying to beat others. "It's not just you against the competitors; It's you against yourself,"Carlton said."You have to push yourself to get the most out of your body.It's not like football when you're on the other side of a guy.It's about,can you squeeze every last drop out of yourself." Carlton did track in high school while also playing football.Today,he trains about four hours daily. Matthews,who has lived in Lutz for 12 years,grew up in Tampa and attended Plant High.He had the Panthers high jump record with a pole vault of 14 feet,1 3/4 inches for 30 years. Matthews puts in about four hours a day at the gym and running,but finding time to practice pole vaulting offers its own challenge. "For pole vaulting there isn't the equipment to do it just everywhere,"Matthews said."Both of us volunteered to help coach at Land O'Lakes High School for the boys and girls teams.That way we could practice and help the kids too."Lutz duo proves age only a numberSome of the kids at Nye Park learned to play traditional African instruments last summer. The move,approved July 27,will save the county $7.5 million and will help plug the $50 million hole in Hillsborough's budget for next year.Commissioners Les Miller,Ken Hagan and Victor Crist,who represents District 2 including Lutz and Odessa,voted against the cut. Participation in the program,such as one at Nye Park in Lutz,has decreased in the last few years.The numbers topped out two years ago when 6,000 kids were enrolled. While participation has dropped,the cost has remained about the same because of insurances rates and salaries. "The reason we're sitting here is the business model doesn't work,and hasn't worked for years,"said Commissioner Mark Sharpe. "We maintained it because we had the resources and people were comfortable with the ways we were doing things." While the participation has dropped by more than one third in the parks'program, enrollment in the Hillsborough County Public Schools version,called HOST,has jumped from 4,000 to 8,000 in those same two years. District spokeswoman Linda Cobbe said HOST could add most of the 1,800 children to the school's program without too much difficulty. Parks department director Mark Thornton added the cost for a week of after-school care is the same at the school and park programs. "It is also the same for a week at the YMCA,"Thornton said."It's $48,so it shouldn't be too difficult to find a good place for kids to go after school." The three commissioners that opposed the move stated they do not believe it would be as easy to find quality after-school care as Thornton makes it out. Eight years ago,Rapp was a firefighter/paramedic,fresh out of the Army Rangers and ready for whatever life could throw at him.Then one evening,while out with his wife and friends at a bar,he walked out to his car to put his phone away when Rapp said a gang of a dozenplus men approached him,looking to take his money. Rapp managed to successfully fend them off,in part,he said,due to his Army Ranger training.Out of fear,he quickly attempted to escape with his wife before anything else could happen. However,the cops showed up,saw the knocked-out gang members and assumed the worst. Rapp said they hauled him out of his car,and when they found him still standing,assumed he was a threat. He was charged with multiple felonies, including battery on law enforcement. "That moment,"he said,"changed my life considerably." Ultimately,the battery charges were dropped.Court records show Rapp was sentenced to probation on lesser charges; Rapp said he completed an anger management class.ChangeThat moment made Rapp re-evaluate his life and everything he had come to know.Wanting to make a new beginning, Rapp opened The Program of Land O' Lakes at the Impact Sports Academy with the goal of providing the community with a sports center and an after-school care environment.The Program provides 12-18 year olds with a safe environment after school that Rapp believes they can't find elsewhere. "It's so dangerous out there these days," Rapp said."There's kids getting tangled up in the wrong thing one time and it kills them. "It leaves kids to fend for themselves after the bell rings at 2,and we want to be here for those kids who are too old for after-school programs." His idea came to life July 16 with the grand opening of The Program.StruggleBut getting there was no small feat. After the major conflict,what came next was the most challenging.Eight long years passed by,with Rapp struggling each day to overcome damage done to his back during the incident. But soon,he found it affected too much of his everyday life.He couldn't pick up a stretcher.Couldn't do his job.Couldn't do anything.Rapp had to quit his job.Beyond that,his commitment floundered in other areas of his life too. His involvement as the assistant wrestling coach at Pasco High also decreased as his injury worsened. "As I grew worse and worse,I just couldn't handle it,"Rapp said. Forced to work odd construction jobs here and there,Rapp continued his struggle as he tried to provide for his family.RecoveryIt wasn't until May that Rapp finally had reconstructive surgery done. After visiting surgeon Dr.Anthony Moreno,Rapp discovered that treatment was available and do-able.The surgery was performed,Rapp said,without any complications. Recovery brought its own series of challenges. Lying in bed late one night,Rapp woke up suddenly in pitch darkness to discover he was covered in blood.It coated the side of his body and bubbled in one massive pool between his legs. According to Rapp,his catheter came unattached and wasn't fixed,causing blood to flow back out of his vein freely. Rapp believes that had he not woken up so late at night,he wouldn't have made it to where he is today. "I can tell you what it's like being in a room full of machine gun fire and know that you're not supposed to have these memories and live.But I knew that this was the closest I was to ever truly dying," Rapp said. "It was a sign from God that I made it," Rapp said."It made me realize I need to be thinking,I have one shot on this merry-goround of life,how can I do something great for my community?'" That's when Rapp emerged,after eight years of strenuous turmoil,a new man ready to make a change.New BeginningLuckily for Rapp,the change came to him. "My neighbor came to my door one day while I was resting and asked if I was interested in working with wrestling again and kids." From there,The Program pieced itself together. Rapp went and spoke to local churches asking for volunteers for his new project to help watch the kids and assist them with minor homework-related problems. He bought a bus.He went out spreading the word and hiring instructors for the various classes he hopes to have. Officially,The Program is a nonprofit organization,and it offers indoor batting cages,softball,wrestling,martial arts,gymnastics,cheerleading and group fitness. For the after-school care,Rapp also contracted Knowledge Points learning program for those children who need further assistance or tutoring. "We made it,"Rapp said."Our expectations for this are way up high and we're not quite there yet,but we've had a great response and everyone's ecstatic. "We're just going to keep getting better and provide for the community in every way possible." People want to eat healthy,but they don't have time to track down the good fruits and vegetables they need. So this Lutz-based company will do that job for them by delivering the fresh fruits and veggies wherever the customer wants them their front door,back porch,business, even a neighbor's house. It's a customer-driven business,said Jessica Papesh,the marketing director of the company,located on the west side of US 41, just south of SR 54. The company makes deliveries once a week in a market area that stretches from Clearwater to Plant City,Ruskin to Shady Hills. The service area will continue to expand as the service grows,Papesh said. Customers choose how often they want deliveries and decide whether they want a small,medium or large box of produce.They also select whether they want all veggies,all fruit,or a combination.The prices are $29.50 for a small box;$38 for a medium box;and $47.50 for a large box. They can indicate if there's a fruit or vegetable that they never want,and they can make up to three substitutions for items in every delivery,Papesh said. "These days,people want exactly what they want,and I don't blame them,"said Al Tizer,one of the company's owners. The company guarantees the quality of its produce. "You don't get charged until the day after your delivery,so we can make sure everything makes it to you safe and sound,"Papesh said. Tizer said he's not aware of any other business in the Tampa Bay region that provides a home delivery service for organic produce. The service provides a convenient source of fresh organics. "The fact that it's brought to your doorstep,it just can't be beat,"Papesh said. "People want to save time.When you're busy and you want to lead a healthy lifestyle, it's difficult.It's hard to find the time to eat healthy.Especially,if you have a family,you want to keep healthy food in the house.You won't find the variety of food that we have in a grocery store."You'd find yourself going to many stores and spending countless hours and still not being able to find what we have,"Papesh said."We just want to make it very,very easy for people,"Tizer said. Besides having access to a variety of organic fruits and vegetables,patrons can rest assured that they're getting genuine organics, Papesh said."We're strictly organic.All of the farms and distributors that we use are 100 percent certified USDA (U.S.Department of Agriculture) organic.So,our customers know that everything they're getting is organic,and that comes with the labels on each of the individual items,"she said. "We try to buy local as much as possible," Papesh said. During the local growing season,the company will buy as much local produce as possible,Papesh said.At other times,they buy from distributors of organic produce. "Our menu varies on a weekly basis," Papesh said. Last week's small fruit and veggie combo box,for instance,include oranges,a cucumber,a mango,spinach,carrots,apples,corn and grapes. "We take suggestions from our customers and we try to keep a good variety in the boxes."We've got some staple items,like apples,bananas,we'll do every week.We'll always do a leafy green. "We try to do like one item that you may not necessarily buy all of the time at the grocery store.Keep it fresh for the customer.If we ever do something that you may not have heard of,or you've never bought,then we'll put something in our email that goes out,like try this recipe,or cook it like this,store it like this,"Papesh said. The idea is to keep customers informed and to do the legwork for them,she said. The company makes its deliveries on Tuesdays,at the moment.As it grows,it plans to increase its deliveries. "We ask that everyone leave a cooler out and some ice packs,just to keep it as fresh and crisp as possible.We do put an ice pack in with the delivery." 813-909-2800 / THE LAKER / LUTZ NEWS August 10,2011 4 By Kyle LoJaconoklojacono@cnewspubs.comThis week,our final installment of What's in a Name will look into how Wiregrass and Zephyrhills got their names. (1) WIREGRASS RANCH is named after an actual ranch owned by the Porter family,which bought 14,000 acres of land in the section of Wesley Chapel in 1941. The ranch stretched from east of New River in Pasco County down into Lutz and New Tampa in Hillsborough County. Today,the Porters own about 5,000 acres of the original land. The Porters,who still raise cattle on the land,first moved to the area in 1946. At that time,the area was known as Gatorville,the name used to mail things to the town. A variety of wild grass known as wiregrass grows naturally in the area,which grew thick enough to make walking through large portions of the fields nearly impossible when the Porters first bought the land. It was not until 1950 when a friend of the Porters,Ed Madill,sent the family a postcard while on vacation in Mexico. Madill did not have the Porter's address, so he sent it to Wiregrass Porter, Gatorville,FL USA.It made it to the family's home and the name Wiregrass stuck. Today,Wiregrass Ranch is generally associated with the area of Wesley Chapel near the intersection of SR 56 and Bruce B.Downs Boulevard,including The Shops at Wiregrass and Wiregrass Ranch High. The Porters started selling large parts of the original ranch in 1972,with Saddlebrook Resort as the first buyer.The next year the land for Meadow Pointe was sold to a developer.The Shops at Wiregrass opened in 2008 and has more than 100 businesses. (2) ZEPHYRHILLS was first named March 10,1910.Before it became Zephyrhills,the area in east Pasco County was called Abbott,after a local doctor named J.M.Abbott.The former town became known as Abbot Station after two train depots were opened within it. Howard Jeffries,a retired Union Army captain,first came to central Florida looking for a land to farm to supplement his pension. In 1909,Jeffries bought 35,000 acres of land from James Lee Greer,who owned Greer Sawmill.Jeffries first planted the property in 1910. Zephyrhills was officially incorporated as a city in 1914 when the Zephyrhills Colony Co.was formed. There are two stories as to how the city got its name.The first comes from when Jeffries signed the contract to buy the land.The deal happened on top of LeHeup Hill between Zephyrhills and Dade City.The word Zephyr actually means breezes,so the name Zephyrhills stuck. The other speculation is the first person to survey the city had either a first or last name of Hill. This terror is well founded because homes are usually our biggest investment. The all-consuming termite can wreak havoc with our sanctuary and precious investment. So how do you know if the flying critter in the home is a termite or ant? There are a couple fundamental differences that are easy to spot with the aid of a simple hand magnifier. When looking at the offending insect, see if there is an obvious waist.Ants have a narrow waist while termites are straight up and down.As a friend describes it,ants have a "girl waist"and termites have a "boy waist."This is often visible with the naked eye. There is another easy way to differentiate,but this one will likely take some magnification.Ant antennae are bent,holding them up as if they were making a football goal-post shape,while termites stick straight out from the head of the insect.Even closer magnification shows the termite antennae look like a string of pearls stuck together. Timing also helps determine what the insect is and if it is a termite,which type. There are three termites in Florida,subterranean,drywood and dampwood. Drywood and subterranean require a different treatment process,so it is important to know which one is in your house. If all this is too difficult,you can always bring in a sample to the Extension office for a visual determination.An estimation of how many insects are in the home,a wing sample and even a pile of saw-dust material on a windowsill can help Extension agents make a more informed determination.Collect as large of a sample as is possible,hopefully with insects that have not all be flattened by the bottom of a shoe. Two years ago,Tracey Tripp and Kathy Vaughn were riding one Sunday morning and first starting talking about something new to the both of them:opening a business together. The wishful thinking resulted in Suncoast Running,which opened last fall under the ownership ofTripp and Vaughn and their husbands,Paul and Scott. "I've always loved running,"Tripp said. As a dedicated runner for the past four years,Tripp and her partners wanted to give the community a running store that would provide local runners with any necessities they might need and more. According to Tripp,one of the main goals of Suncoast Running is outreach. "Outreach is one of our big things here," Tripp explained."And one way to reach out to the community is through training programs." Training programs are used to help "people interested in running." "Through our training programs we get these people into the sport,"Tripp said. The training programs provide runners with the tools necessary to train for a race. Though the programs themselves may vary from race to race,runners who sign up for them receive a free gait analysis,proper shoe fitting,a pair of running shoes,socks, a water bottle,a program shirt,a Suncoast Running car magnet,the training program itself and training group runs. "It's encouraging in a group setting," Tripp said."It's the accountability,knowing that people are looking for you each week." So far,Suncoast Running has hosted two 5K training programs and a single one-mile training program for kids. According to Tripp,18 people signed up for the most recent 5K training program. "I think people are more interested in group training,"Tripp said. That's intentional. The owners of self-service frozen yogurt shop are hoping it will be just the first of many of its kind. "We wanted to do this one first,learn, and then see if we wanted to continue on doing the chain.So far,so good.We've had a great response so far,"said Joshua Candamo,one of the shop's owners. The plan is to open two more of the shops in Tampa within a year,although locations have not been selected yet. "We like to think of yogurt as being fun, tasty and fresh,"said Candamo,who owns the business along with Tomas Echarte,a friend he met when they were students at the University of South Florida. The shop opened in New Tampa at 6431 E.County Line Road,Suite 110 on July 23.It specializes in frozen yogurt,fruit salads,fresh fruit juices,espresso,cappuccino and lattes. "We've had a great response so far," Candamo said. "Our target audience in here is family first.The kind of music we have will always be safe for kids.The entertainment we're going to have on the weekends is always going to be for the families,"he said. The frozen yogurt is served from dispensers bearing the Yogury brand name.Flavors include Tahitian vanilla, classic chocolate,cake batter,very strawberry,mango sorbet,cherry amaretto and California tart. "You start there with a base.Our base is always going to be healthy, Candamo said. "You'll always see us trying to give the choice to the client,"Candamo said,adding patrons are encouraged to try a sample of as many flavors as they'd like. Toppings range from seasonal fruits to assorted candies.There's also fruit puree sauces as well as caramel,white chocolate, sugar free dark chocolate and dark chocolate toppings. Once they finish topping off their yogurt,they are charged by the ounce. Most customers spend between $2.50 and $4.50 on a treat,Candamo said. The shop also serves 15 kinds of lattes, with flavors including caramel,peppermint,toffee nut and white chocolate,just to mention a few. The idea is to offer variety. "You can come here with your kids and everyone can get whatever they want," Candamo said. "We have the sweets.We have the tarts. We have the sorbets.We have the traditional flavors.We empower the client with a choice,thinking they're going to make the right choice because you know what's good for you." There are choices for vegans,too. Fresh fruit juices also are sold at the shop.They are squeezed by hand with no sugar or water added,Candamo said. The shop is open daily,from 11 a.m. until 10 p.m. The shop's icon is a heart,which it incorporates into some of its designs.It stands for having a healthy heart,Candamo said."It's nice that we have a healthy alternative." The school's previous lender the Bank of America filed a foreclosure action in March,but dropped it in April, allowing refinancing talks to continue,according to the school. The academy subsequently paid off its loan to the bank on July 8 and entered into replacement financing with two other entities,said Mark Heller,the academy's headmaster.Heller would not disclose the terms of the financing.He also would not identify the lenders,citing respect for their wish to remain anonymous. But,Heller said,the replacement loan was a good deal.The bank was happy and the school and lenders are happy,too,he said. "The real benefit is that our total amount of what we owe is drastically reduced,"Heller said.And,if things play out right,the school could be in a posture to acquire land for an expansion that would enable it to meet its needs for 100 years, Heller said. "This is a situation that could absolutely transform the footprint and the presence of the school,"Heller said.He said it is too early to discuss particulars. As the school gears up for the coming year,it is expecting its enrollment to exceed 400 students,its highest enrollment to date. That's a far cry from the school's initial enrollment of 32 when it opened its doors in 1992. Over the years,the school's enrollment and physical presence have grown.It now has campuses on both sides of Collier Parkway,just north of SR 54. The campus for the lower division is on the east side of Collier Parkway and the campus for the middle and upper divisions is on the west. The middle and upper campus includes a lake,Spanish moss-draped trees,a converted Georgian mansion and outbuildings designed to match the architectural elements of the main house. "We believe in the power of architecture,"Heller said,noting the environment has an effect on students. "They're not going to school in a plain box.They learn appreciation for design and aesthetic elements,"the headmaster said. The attention to detail in the school's architecture is just one example of the conscious decisions that school leaders make in setting a tone for learning and creating an atmosphere that engages students. This is a school where all high school students must take a foreign language, where high school students are expected to conduct scientific research that goes beyond the bounds of typical high school experiences. One hundred percent of the graduates go on to college, with most accepted by their "first choice"college,school leaders say. The school's middle division,for grades five through eight,is broken into subdivisions one for fifthand sixth-graders and the other for seventhand eighth-graders. "If your middle school is sixth through eighth,the gulf between the sixth-grader and the eighth-grader is enormous.It doesn't serve the sixth-graders or the eighth-graders well." In addition to encouraging curiosity and creativity,Academy at the Lakes emphasizes the importance of social skills. "We have a Day of Manners multiple times a year,where we teach kids appropriate social behavior,"Heller said."We think that's a very important asset for them,for their future." Knowing how to dress appropriately is important,too,he said. The school,which serves pre-kindergarten through 12th grade,requires uniforms through eighth-grade and has a dress code for high schoolers. "We try to teach girls that more skin equals less power,"Heller said."When girls err in the dress code,it's either too tight or too short or too revealing. "When boys make mistakes in dress code,it's usually that it's just too sloppy. "We try to teach the boys to be neat. We try to teach the girls not to succumb to being too revealing in their clothes because you actually lose power when you're too revealing." The school's enrollment includes students from Odessa,Lutz,New Tampa,Land O'Lakes,Wesley Chapel and other nearby communities.The base rate for tuition ranges from $8,925 for Pre-K3 to $17,840 for high school.Financial aid is available. The nondenominational school's student body is diverse. "You cannot go to school at Academy at the Lakes and fail to have friends who are a different race,a different religion,a different ethnic background than you,"he said. "We are a very worldly school in Land O'Lakes." And,while it's anticipating its highest enrollment ever,the school is tiny as compared to the community's public schools. The academy's relatively small size works to the student's advantage,Heller said. "When you are in a really big situation, the chance of anonymity is much greater. There is nothing worse than anonymity for teenagers.That's when bad things happen. "Part of the recipe at a small private school is that every student because we're small is that much more important to the functioning of the community," Heller said."Kids thrive when they're important." Then,Hough picked 27 semifinalists and, finally,it was up to America to go online and vote for the top nine. "We found out she was one of the nine on Good Friday,"Karla said. In the large pool of videos,Victoria believes hers stood out due to the fact that she discussed her hearing disability. "She was born with it,but it was at 18 months that I first noticed she had it,"Karla said. From there,Victoria was diagnosed with a 25 percent hearing loss and put into speech therapy so that she could learn to speak and carry out conversation despite her disability. As an incoming freshman at Steinbrenner High,Victoria doesn't think her disability will affect her in a negative way since she's learned to combat its effects. Therefore,for her video,she "mostly wanted to inspire other girls and teenagers." "It doesn't matter if you have a disability; you can still do anything,"she said."I wanted to base my video on that." The video features Victoria dancing,an activity she has enjoyed since she was 2. Once selected,Victoria was flown to New York City in May with eight other contestants for a 12-hour photo shoot.She was informed that all the winners would be featured on blogs and on the Seventeen magazine website plus ads in a variety of other publications (including the back page of this week's Lutz News). "It's a great honor to be a part of this," Victoria said."After the Power of 9 I've grown more confident.And this is only my first step.I know I can achieve what I want to do." Gwen Luney,assistant school superintendent for student services and federal programs,told commissioners HOST has a healthy snack program to make sure the kids are eating right.They also offer help with homework and get "physical exercise every day. "They aren't just sitting in a school cafeteria for hours after school waiting for their parents to pick them up,"Luney continued. While the after-school program is being eliminated,11 regional parks will continue to be staffed.Workers will be shifted away from 31 other locations,leaving them without permanent employees as a cost-cutting measure. "That can serve as after-school programs for many of the kids,"Hagan said."Those workers will be doing much of what they did with the old program.They will just be concentrated at 11 parks." Both men are retired Matthews after working for 40 years with CSX while Carlton was in customer service. One thing both athletes had to learn after four decades away from competition was to not push themselves too hard. "You don't heal as easily when you get our age,"Carlton said."I remember when we started running I tried to sprint and tore cartilage in my knee.I got it operated on and eight months later ran too hard and tore it again.Then I tried my first triple jump since high school and broke a bone in my foot.It's hard to take it slow. "I think there's some kind of formula where if you're out of competition for 30 or 40 years,you better take two or three years of slow training to get back,"Carlton said. Matthews had to fight through gout and other ankle problems.He said drinking fresh grapefruit,wheatgrass and carrot juice every day helped heal his body. Both athletes said their showing at the senior championships has inspired them to push harder to do better in 2013.Matthews has even built a pole vault setup in his yard to get more practice.Neither have any plans to call it quits stop anytime soon. "Hopefully more people in the area will start doing it too,"Carlton said."There were hundreds of people from Florida at the senior championships,but only us two from Lutz." Next up for both is the Tampa Bay Senior Games Oct.3-14.If either finishes in the top four in any event,they will qualify for the Sunshine State Games in December. Additionally,Carlton is looking for men ages 60-64 interested in playing in the basketball state championship tournament. Suddenly the 15 come together as one in a huddle and break with a mighty shout of "Quistas."It's the first day of practice for the Pasco-Hernando Community College volleyball team;the defending National Junior College Athletics Association (NJCAA) Division II national champions. The Conquistadors posted a 36-7 record in 2010 en route to becoming the first Florida team to win the Division II title.It is also the first athletic national championship of any kind for the school. "We had a great group of girls coming into last season,"said PHCC coach Kim Whitney."The year before they came up with goals and were literally one off of everything.It was kind of funny because it was in tournaments,GPA,everything.Just one off.It was in their mind coming into last year that we were that close.The good thing was,and this is really rare for a two-year school,most of the players were back.It drove them the whole year." Sophomore outside hitter Torii Koester was a part of the squad that brought home the crown. "It took a lot of hard work,but it was a lot of fun,"Koester said."I've never been on a winning team before,so to accomplish every single one of the goals last year was very special." The squad wanted to set the same goals as prior to the 2010 championship season. "I wouldn't let them do that because this team needs to find its own identity,"Whitney said."Something that is different for them. We'll keep those things a secret for now,but the big thing is they all want back-to-back national championships." Koester set a personal goal as well. "Now I'm one of the sophomores and I know I have to take on more of a leadership role,"Koester said."In fact that is one of the goals I set for myself.I want to help the younger players because I struggled a lot with the difference in college from high school." Whitney said the team will lean on leadership from returners like Koester and team captain Jessica Imbimbo.The right side hitter does not shy away from pressure of being the reigning national champs. "Because we are defending our title,it just puts that much more pressure on us," Imbimbo said."We're held to a higher standard now.We have a target on our back whether we like it or not.Personally I like that pressure,because that's when I get the most out of myself." Imbimbo can hardly contain herself when talking about getting back to the national tournament. "Just the thought of getting back to that national championship;I just can't even put it into words how much I want to get back," Imbimbo said."Feeling that moment and being there.It's just indescribable and I want to share that with this team again this year." Imbimbo knows it will be tough to get back to that point given the ever-changing nature at a two-year school like PHCC "Becoming a team is a huge part,and last year we did that right away,"Imbimbo said. "We fell into that right away and kept becoming closer all the way through.We kept working for each other and making each other better.I think that's why we made it to national championship." Imbimbo will also be counted on to produce on the court as well as in her leadership role.She posted 263 kills,298 digs,48 blocks and 28 aces,all the most of any returning player.Koester had 119 kills, 117 digs,13 aces and 11 blocks last season. The squad returns one middle hitter, Quynn Fonseca and her 20 blocks,23 kills and 27 digs from 2010.The Conquistadors also add freshmen Azya Glass and Lauren Wixted in the middle. PHCC will need to find replacements at setter and libero.Morgan Hill was the primary libero in 2010,putting up a team-high 955 digs while adding 42 aces. Ashley Seal was not only the starting setter last year,but was also the Conquistadors team captain.She led the squad with 1,471 assists and 83 aces plus 375 digs,105 kills and 59 blocks.She was also named the MVP of the NJCAA national tournament. "I look up to Ashley,"Imbimbo said."She's one of my role models in what she did on the court,off the court and in the classroom.She is a very special person and I want to take what I learned from watching her into this year." There are still questions with the defending national champs,but the enthusiasm is running high with the players. PAGE 17 / 813-909-2800 THE LAKER / LUTZ NEWS August 10,2011 17 SPORTS By Kyle LoJaconoklojacono@cnewspubs.comSaint Leo University's newest coach is no stranger to winning in Division II men's soccer.Keith Fulk was picked to lead the Lions earlier in June.He comes with a trio of NCAA Division II national championships,one as a head coach,another as an assistant and a third as a player.All three titles came while he was at the University of Tampa (UT),a member of the Sunshine State Conference (SSC) with Saint Leo. "We are very excited to have a coach who is a proven winner in the Sunshine State Conference and with the Division II NCAA championship title on his resume,"said Saint Leo athletic director Francis Reidy.He then added,"We had many very experienced and talented coaches involved in this search,but Keith's success,contacts within and name recognition in Tampa Bay as well as Florida,brought him to the top of the list." Fulk was equally as excited after learning he was picked as the man for the job. "It's really exciting to have this opportunity,"Fulk said."It's a conference I know and a sport I love.I can't wait for the season to start." Fulk spent the last eight years coaching outside the collegiate ranks, choosing to lead various soccer academies. He comes to Saint Leo after spending a year with the IMG Academy in Sarasota,and has also spent time as an assistant for the under17's national team.Fulk is an A licensed coach with the U.S.Soccer Federation. As UT's coach he amassed an 81-24-7 record in six seasons,including three SSC championships,three NCAA Division II tournament appearances and the 2001 national title.The Spartans went 19-0-2 in the 2001 championship season and were ranked the No.1 Division II team for much of the year. Fulk was named the National Soccer Coaches Association of America Coach of the Year that season. Fulk was the Spartans top assistant coach in 1994 when they claimed another Division II national crown and conference titles in 1994 and 1995.He was also inducted into the SSC Hall of Fame in 2008. As a player in high school,Fulk was a Parade All-American at Elco High in his hometown of Myerstown,Pa. Fulk won the 1981 Division II national championship while playing at UT.He played for four years with the Spartans before graduating in 1985,making the All-Conference and All-South Region teams all four years. Fulk played professional indoor soccer after college until 1992.He was also a player in the World University Games in 1985. Fulk is the third new Lions coach named this year,following Nikki Jessee and Lance Randall taking over the women's and men's basketball teams respectively. "Our goal for all of our programs is to be competitive in the league every year,and qualify for NCAA post-season play,"Reidy said."Keith Fulk has done this multiple times as a player,assistant coach and head coach.He knows the path and formula to achieve this type of success,and we are thrilled to have him on our staff." Fulk replaces Joel Harrison,who resigned on May 6,citing "exciting changes taking place in (his) personal life."Harrison was 69-40-6 in seven years with the Lions, including a 9-6 record last season. "They sent an email and kind of tricked us into thinking we weren't picked at first," Courtney said."It said,Many of you will learn that delivering the not so good is the toughest job.'I was disappointed,but I kept reading and it said,if you're reading this you were picked.I was so excited." Courtney read the email before Meghan. "My mom told me to check my email and I was really upset when I started reading it,"Meghan said."When I found out it was a joke,I was literally jumping for joy." The showcase is during September at Winthrop University in South Carolina. The Durbins,who are seniors,are two of 2,000 players from the United States and Canada who applied for the showcase.The 264 selected were picked based on their ability,academics,leadership and community involvement,according to event spokesman Kirt Whiteside. "It's a great honor to be picked because it's about more than just softball,"Meghan said. The fraternal twins have identical grade point averages (GPA) of 4.138,putting them in the top 5 percent of their class. Courtney said she is interested in history and science classes and plans to go into athletic training or physical therapy.Meghan enjoys reading/writing and history classes, but is unsure what career to go into. The duo made the Sunshine Athletic Conference (SAC) all-academic team for participating in at least two sports and maintaining a 3.2 GPA as juniors.Meghan is also a libero on the Sunlake volleyball team,while Courtney was on the girls weightlifting squad. As for school involvement,Meghan and Courtney are members of the National Honor Society,Key Club,Class of 2012 Leadership Club and Fellowship of Christian Athletes. The girls also volunteer for the American Cancer Society and Relay For Life,Miles for Moffitt Race,Metropolitan Ministries,the Land O'Lakes Food Bank,Treats for Troops and the Baldomero Lopez VA Nursing Home. "Everyone has a point in their life when they go through a rough patch,"Meghan said."My family has been there when my mom (Kay) had cancer,and I feel like you should always help people out because you don't know what they're going through.I feel as a person you should always give back.It's going to be worth it for the people you help." Kay recovered fully from the breast cancer,but that scare altered the way the Durbins see life. "Our mom had cancer when we were 8 years old,"Courtney said."When she was at Moffitt for treatment we saw so many people who went out of their way to help.It made us want to give back." Softball has been as important to the twins since the then 7-year-olds first started playing at Land O'Lakes Little League. "We'd been doing gymnastics and wanted to try something different,"Courtney said."Our mom and dad (Steve) both played in college,so we wanted to try it.I like the competition and that anyone can play no matter how big or small they are." Meghan said it's the game play that keeps her interested. "Whether it's a hit,running to a base or throwing a pitch,you always have to give everything for that one moment,"Meghan said. Meghan plays second base and pitches for Sunlake,but is a left fielder for her travel team and in the showcase. "I love outfield,"Meghan said."For high school I play wherever coach asks me,but for travel ball I love playing outfield." Courtney is always an outfielder. The sisters play for the Stealers Gold 16U travel club,which is made up of girls from across central Florida.The Durbins helped the squad win the Florida Armature Softball Association of America (ASA) State Tournament on Father's Day weekend this weekend,earning a trip to nationals in Tennessee in August. During the 2011 high school season, Courtney had a team-high 15 steals while batting .460 with 40 hits,34 runs scored,25 RBI and 13 doubles.She made the SAC east first team and the All-Laker/All-Lutz News second team. Meghan had a 9-1 record as a pitcher with a 1.52 ERA and while batting .393 with 24 hits,18 runs scored,14 RBI and three doubles.She made the All-Laker/All-Lutz News first team.Sunlake went 19-4 in 2011, but was upset in the quarterfinals of the Class 4A-District 8 tournament. The sisters are currently preparing for the showcase,ASA nationals and their senior year.Their schedules are almost always packed,but both agree it is worth it. Personally though,I prefer to eat only half of my salad and bring the other half home. Like most restaurants,they bring bread with olive oil for starters.They do creatively present it in bite-sized pieces so if you can discipline yourself to munch on just one or two,you won't break your "calorie bank." I tried a few new things that I would like to share with you.The first meal I ordered was their fresh Maine lobster,which was delicious.The dish comes with linguini,which I asked them to leave off since I wanted to stick to the veggies as my side dish. The lobster also comes with a small amount of delectable cream sauce,so the trick is to not eat the whole thing and save some for later.This way,you can enjoy rich foods without piling on the calories too much.So remember to discipline yourself.It also has caramelized fennel,a delicious new discovery for me. A serving of sautŽed broccolini was also a nice addition to the meal.No matter where I eat,I always tell them to go light with the oil on the veggies.Even though many restaurants use olive oil,it still has a lot of fat in it,so use it sparingly. The other meal I tried for this review (of course, both meals were not consumed in one sitting as I divided the portions for dine-in and take away) was the vegetarian pasta.It is a colorful mix of roasted vegetables and penne pasta;boy, was that fantastic! It's cooked in a vegetable broth and tossed with white wine spinach pesto.It is one of the lightest dishes on the menu and gets a kick from the spices infused into the dish.It may have white pasta,but it's not so bad as long as you don't eat the entire meal in one sitting and you don't eat white pasta all the time. Also,the vegetables help balance out the digestion of the pasta and control your blood sugar levels.If you're ever having carbs,especially white flour carbs,always try to eat veggies with them. Often referred to as a "back-to-school" tax holiday,the state's sales tax holiday allows consumers to purchase items of apparel priced at $75 or less,sales tax-free. The same goes for school supplies which are priced individually at $15 or less,according to the state's Department of Revenue website. This year's sales tax holiday begins at 12:01 a.m.Friday,Aug.12 and runs through 11:59 p.m.Sunday,Aug.14. The sales tax holiday is not restricted to shoppers of a certain age and does not require any proof that someone is heading back to school,said Renee Watters,of the Florida Department of Revenue. The tax holiday creates a bit of a buzz among retailers who sell back-to-school merchandise,said John Fleming,director of communications for the Florida Retail Federation. "It's sparked a lot of competitiveness," Fleming said. It also has ripple effects,as nearby businesses such as restaurants often jump on the bandwagon offering discounts to attract customers who are enjoying the state's tax holiday. "A lot of consumers perceive the holiday as something fun,"Fleming said. The tax break acts as a stimulus,increasing foot traffic at retailers selling exempt items,Fleming said. The most common questions that consumers have involve what items qualify for exemption and whether there is a limit regarding how many exemptions they can get,Fleming said. According to the state's website,exempt items include clothing,wallets or bags,including handbags,backpacks,fanny packs and diaper bags.Items such as briefcases,suitcases and other garment bags are not tax-exempt. School supplies are defined as pens, pencils,erasers,crayons,notebooks,notebook filler paper,legal pads,binders,Shoppers can get a break during this weekend's tax holidaylunchboxes,construction paper,markers,folders,poster board,composition books,poster paper,scissors,cellophane tape,glue,paste,rulers,computer disks, protractors,compasses and calculators. The tax break applies to each exempt item,no matter how many items are sold on the same invoice to a customer.Books,however,are not exempt from sales tax.Clothing and school supplies sold at a theme park,entertainment complex,public lodging establishment or airport are not exempt,either so expect to shell out sales tax on that Mickey Mouse pencil from the Magic Kingdom.
