LUCIE On June 13, the Port St. Lucie City Council approved an ordinance that tightened the rules concerning pain clinics within the city limits. N ot only does the new city ordinance spell out in detail what a pain clinic is and isn't, it also limits where the clinics can be located in the city. Here's a sampling, edited for length. Remember, just because it's online doesn't mean it's true! From NWFDailyNews.com : Man cleaning foot sets his house on fire Emergency personnel we re called to a Fort W alton Beach home where a man accidentally started a fire with rubbing alcohol and a cigarette, NWFDailyNews.com r eported. The man told deputies he was sitting on his bed cleaning an infection on his foot with the alcohol about 10:30 a.m., said B attalion Chief Shannon S tone of the Fort Walton B each Fire Department. S ome alcohol spilled on the sheets, the man told authorities, and when his cigarette touched the spill, a fire started. Stone said he did not know why the cigarette contacted the bedclothes. The man pulled the sheets off and left to get something to put out the fire. When he returned, the fire was much larger, so the man left the house and called 911, the site reported. "I guess it is a little uncommon," Stone told NWFDailyNews.com "But that's what he says. There's no reason not to believe it." All the people in the house were able to get out safely. Stone told the site the single-family home suffered significant damage and was uninhabitable. The fire was ruled accidental.See WE IRD, A9Learn how to prepare tasty veal, chicken cutlets. The city currently has two large drainage ponds close to the intersection. The ponds will be connected together using the 6-foot wide drainage pipes. The card, which will be accepted at all major chains and most independent pharmacies, will be offered at no cost to all residents, r egardless of income. The whole goal is to further assist our residents in saving money on their healthcare needs," said Stefanie Myers, community services manager. The $1 million was part of $7 million in grants that the Environmental Protection Agency awarded to communities in Florida for evaluation of brownfields properties. Br ow nfields properties are typically abandoned commercial and industrial sites that may be polluted, said Greg Vaday, economic development coordinator for the Treasure Coast Re gional Planning Council. The money is used to assess the sites and determine the extent of the pollution, he said. LUCIE In the middle of the afternoon on a hot June day, Jonathan Lebish can be found in a patch of land just behind Grapevine Community United M ethodist Church in Port St. L ucie, tending to a community garden growing a variety of fruits and vegetables. "W e' re a small church with big dreams," he said. C urrently, part of those developing dreams includes the Grapevine Garden Project, a garden Mr. Lebish helped to begin three years ago to help people grow their own food. No w, as caretaker and coordinator of the project, he has watched it evolve over the years into something more for the community. Mr. Weirick chuckles as he recalls his surprise, thinking he was attending another Eagle Scout presentation for a younger scout. "I was completely surprised," he said. "Now, we have a food pantry and a community garden that provides food." The food grown in the garden goes into the food pantry and the surrounding areas to whoever needs it. A ministry that also uses the church, Ministerio I nternatcional Ebenezer, helps to run food pantry. "P eople have needs, and we want to meet those needs," he said. "I'm really proud of our church and the way we're helping the community." A sign above the 40-foot by 80-foot garden reads, "W elcome to Grapevine C ommunity Garden. Planted in faith, shared in love." It 's a sign Mr. Lebish takes to heart. "I 'm not someone who knew who to do this, but I've been learning," he said. The growth of the garden is evident in the many beds containing sunflowers, pineapple, avocado, and marigolds that are beginning to line the front of the garden. Inside, tomatoes, kale, collard greens and green beans grow. On another side, Boy Scout Kevin Quackenbush from Boy Scout Troop 448 built a reflection area for visitors this May as part of his Eagle Scout project. An earlier troop project planted flowers in the area close to the garden. Almost all of the materials used to build the garden has been donated or r ecycled. "I 'v e found a use for anything that anyone has dropped off," he said. The needs for the garden are few, but great. Materialwise, more outdoor plywood is needed. More importantly, volunteers are needed to help with the basic garden needs, such as weeding and planting. Mr. Lebish now uses community service workers to help keep the garden up, but says that any volunteers will be gratefully put to work. This might be something for retirees or high school students," he said. He said that there's more than just work in the garden. Help is also needed with the teaching, planting and supervision of volunteers. F uture plans for the garden include involving area children in the growing process, starting with the church's preschool. "K ids love gardening," he said. "And the food grown will help feed people." I nside, the garden is evolving to raised bed gardening, so volunteers will have smaller areas to tend to. Mr. Lebish said the garden is open to all wanting to teach or learn about self-sufficiency. "I f there is a non-profit organization that wants to take part in the garden and grow some food, they're invited." F or more information, call the church at (772) 878-3484.GardenF rom page A1

Chief Deputy Garry Wilson of the St. Lucie County Sheriff's Office recognizes Ernest Weirick, 93, of Port St. Lucie during an Eagle Scout rededication ceremony at the First Presbyterian Church on Sunday, June 12. Mr. Weirick is the second oldest Eagle Scout in the country. Mitch Kloorfain chief photographer Mitch Kloorfain /chief photographerErnest Weirick, 93, of Port St. Lucie takes the scout's oath prior to his Eagle Scout rededication ceremony at the First Presbyterian Church on Sunday, June 12. Mr. Weirick lost his Eagle Scout award that was presented first in 1935. He is the second oldest Eagle Scout in the country. ing a regular visit. "I was talking to him about my children and how they were in Boy Scouts," she said. "That's when he mentioned his Eagle Scout r ank, but had since lost his medals. I mentioned him to Scoutmaster Bob Colonna of Troop 422, and the idea for rededicating him grew from there." A quick check revealed that Mr. Weirick had first r eceived his Eagle Scout pin on January 26, 1935. Bo rn in 1917, he was the y oungest of three children. He attended college at Lebanon Valley College in P ennsylvania, and played saxophone on a German cruise line in the summer. He w ent on to work at Eastman Kodak for 47 years and continued on with Boy Scouts by joining the Executive Board for the new Birth of Freedom Council in M echanicsburg, Pennsylvania. No w, more than 76 years later, another one was pinned to his chest an Eagle medal from 1932 the organizers had found that looked similar to the one he first received. H is wife, June, did the honor of pinning the medal on him. "E r nie and I were high school sweethearts, and will be married 70 years on S ept.2," Ms. Weirick said. "It was Ernie's roommate in college, Lloyd Beamesderfer, who talked him into being on the Boy Scout E xecutive Board." H is two daughters, Carol H agreen and Bonnie Carl, we re also present and helped pin the medal on. Ev en now, Mr. Weirick volunteers his time playing the saxophone for other seniors. "I wouldn't tell him who the ceremony was for," Ms. H alle said. "About 10 minutes before the ceremony, we took him to one side and told him it was for him." There was even a letter from Gov. Rick Scott, himself a former Eagle Scout. "I n all, more than 80 people attended, and so many pitched in to make it memor able," Ms. Halle said. "He got treated like the special person he is." Mr. Weirick had some advice for any Boy Scout looking to achieve scouting's highest rank of Eagle. "S tick it out to the end," he said. "The training that they give you lasts a lifetime. I know it helped me."ScoutF rom page A1

providing the cards and will actually receive $1.25 per prescription filled through the service. That money will be used for programs helping the needy in the county, she said. The Coast2Coast prescription card, offered through F inancial Marketing Concepts, based in Ponte Vedra B each, will replace another card the county offered that only provided discounts of around 20 percent. Ma r tin K. Dettelbach, chief marketing officer for Financial Marketing, said his company gets a percentage of the prescription dispensing fee that all pharmacies charge customers. Fr om that, $1.25 per prescription goes to the county, he said. The previous plan offered no revenue to St. Lu cie County. P harmacies participate because they are trying to create new business," Mr. D ettelbach said. They hope that new customers come into the pharmacy and get the prescription, as well as buy other products offered at the business, he said. They want that foot traffic," he said. Another factor is that it may increase business overall, he said. S ome people may not be filling their prescriptions because they can't afford their medicines, he said. The discounts may allow those people to buy the drugs, he said. One restriction is that people can't use the card on top of health insurance coverage benefits, he said. B ut in some cases, the discount provided by the card may exceed the benefits provided by health insurance plans, he said. F or example, a person may be required to make a $25 co-pay with their insurance, but using the card the medicine may only cost $15. In some cases, companies are offering plans that may not cover certain drugs, such as Viagra, in order to save on costs. How ever, the discount card covers Viagra and about 60,000 prescription drugs, he said. It doesn't cover controlled substances, such as oxycodone, because of the potential for abuse, he said. How ever, on a case-bycase basis the company may authorize the use of the card to buy a controlled substance, if the resident can provide proof they have a legitimate prescription, he added. The card also offers discounts on some dental and vision services, imaging and lab work. Ca r ds will be available in J uly at pharmacies, county offices and other locations, he said. A dditionally, people will be able to go to a website and print out a card, he added. F inancial Marketing Concepts will promote and distribute the card, something, which was the responsibility of St. Lucie County with the old card, Mr. Dettelbach said. That will be of great benefit to St. Lucie County, Ms. My ers said. "W e don't have the staff anymore to keep up with distribution needs," he added. The closure began this w eek, and the work is expected to take three to four weeks to be completed. As soon as that road r eopens, the city will then close Mariposa Avenue, on the east of Lennard R oad. The work there is estimated to also take three to four weeks to complete. The entire project should be completed by the middle of August. This project is part of the city's Eastern Watershed Improvement Project, and will improve drainage during rainy w eather. In the meantime, watch for detour signs to help guide residents around the affected area. There will a lot of alternatives to drive around the project," Mr. Cu nningham said. "D etour signs will be posted." He also requested that r esidents allow for a little extra driving time, and to be aware of workers in the area. F or more information about the project,go online to the city's website at www.cityofpsl.com. to approve the ordinance. She also praised the city staff for their diligence. "I commend staff for this," she said. "I know they put a lot of work into this." S he went on to state that the moratorium on opening pain clinics within the city limits was about to expire, and the city was unable to extend it. The moratorium was established a year ago. The new ordinance is part of a statewide effort to try to r egulate the pain clinics, which have also been dubbed pill mills" because of the ease in which people are able to r eceive prescription medication, leading to increased r eports of prescription drug abuse. The ordinance also created a minimum of 500 feet that a pain-management clinic could be from another painmanagement clinic, pharmacy, a residential building, childcare facility, school, park, public facility, or church. In addition, any pain clinic that wishes to open in the city would have to apply for a special exception use. This application would then be re viewed by city staff and then voted on by the city council before it would be allowed. It would also have to meet specific criteria, which includes hours of operation, customer use and type of physical activity. The Port St. Lucie police department also has a fulltime detective that covers prescription fraud and monitors any pain-management clinics that come into the city. Du ri ng a discussion by the z oning board it was noted by more than one member that this ordinance is just the first step, and it is a strong statement from the city of Port St. Lucie. The ordinance passed the city council with a unanimous vote.RoadsF rom page A1ClinicsF rom page A1DiscountF rom page A1

P ublic interest has become an entitlement. We get incompetence when we might get service. We get corruption when we might get efficiency. When we fail to get involved, we get what we deserve.Listen to the publicWe accept the concept that the majority is not always correct, but our political leaders do have a responsibility to listen to us, not ignore us as they too often do. A Rasmussen Report tells that 84 percent of voters believe people should show identification before being permitted to vote. It is a majority of Republicans. It is a majority of D emocrats, and it is a majority of Independents. Our state legislature should listen to us. F ollow up with actionIn one of his speeches, President Obama said, "It's hard to win the future if we lose our past." True, but like so many other areas, he has failed to follow up his smooth words with effective action. The National Assessment of Educational Progress tells us there is no progress. Despite multiplied millions of dollars poured into our public schools, performance has been stagnant. Congratulations to California Congressman Duncan Hunter who has authored legislation to scrap 43 Washington-funded education programs. They are costly. They are wasteful, and they are ineffective.A rant about the governmentIn 2009 the ATF hatched an operation called Fast and Fu r ious. They said that their goal was to bring Mexican drug cartel kingpins to justice, though it is hard to see how this could be done. The Phoenix ATF enlisted the help of legal and regulation compliant Arizona gun stores and told them to sell to illegal gun purchasers. There were 2,500 guns sold under this operation and all illegal purchases were reported and video taped to the ATF. ATF agents followed the illegal gun purchasers to other buyers, some unknown, each buy videotaped and reported to their supervisors that money and guns exchanged hands. After the handoff, ATF agents were told to follow the original gun buyer back to his home and they were told not to follow the new purchaser. ATF agents would ask why, that it made no sense and they were told by their supervisors to follow orders. Sometimes ATF agents watched and r ecorded the original gun buyers receive money from cartel members for the purchase of the guns. Documents show that the ATF did not follow the guns to Mexico and US destinations. Over 1500 guns have not been recovered. The ones recovered have been matched to murders and other criminal activity in Mexico and the U.S. Why would our government do this? Why would our government allow guns to be sold to criminals in the U.S and M exico? Why would our government attempt to use the illegal gun running data which resulted in many murders and increased criminal activity from this ATF operation to prove that Americans should have their second amendment rights restrained substantially through punitive laws and regulations? The government knew full well that this criminal activity was created by the ATF's operation. Is it a stretch that the goal of those that hatched the Fast and Fu r ious ATF operation was to restrain, if not eliminate, our r ight to gun ownership? As further proof of my last assertion, I submit that every time there is a high profile murder the progressive antigun radicals in this country yell for more restrictive gun legislation. A madman shoots and kills many people and wounds a Congresswoman and the first thing out of the r adicals yell is that the Second Amendment does not mean that everyone who is not a criminal or mentally unstable can own guns. Why didn't they ask why his college teachers, his friends, or his family did not commit him or at least r eport his erratic behavior to the police? If someone had tried to get this man help, he would not have been able to buy a gun legally. I think that in order to promote their subversive agendas, there are people in our government who are willing to r ecklessly assist in the murder of others by selling guns to brutal criminals. We know that this operation went outside of Arizona and we know that the DOJ, the FBI, ICE and many other government entities knew of this ATF operation. Who else knew and how far up the food chain did this criminal activity go? Who hatched this abomination? Will they be held accountable? How many more people in the U.S. and Mexico will suffer from the reckless criminal operation? Headed for troubleAs the nation's economy stumbles along and the unemployment rate trends up, it is obvious that the government's stimulus program was a failure, a gigantic, costly failure. President Obama's plan for Medicare lets costs spir al out of control, which will empower un-elected Washington bureaucrats to impose draconian cost reductions, inevitably leading to rationing. The country can't continue down this road. We are headed off the cliff. Labor lawsAmerica's labor laws, imposed by politicians beholden to the votes of labor unions, are driving U.S. companies to relocate overseas. DuPont is presently weighing whether to increase production of titanium dioxide here or to do it in China. The wage rate there is $100 per month and the tax r ates are lower. Environmental regulations are less stringent. America's labor laws date back to the New Deal era. No wonder we can't compete on a world-wide basis. No wonder we can't create jobs. Who helps us?If the socialist government of Greece goes bankrupt, the I nternational Monetary Fund, largely funded by the United States, may bail them out. It the socialist government in W ashington goes belly up, who will come to our rescue? C ommunist China? Do we really want to be owned by the Chinese? This can be confusing because it can be difficult to distinguish when it is an error on your machine or an error somewhere out there in cyberspace. P eople tend to forget that when they are accessing a w ebsite, the data that's displayed on their machine after entering the Web address may be traveling around the world, bouncing off machine after machine, before arriving at their desktop. Just one break in the path from there to here will result in an error message, such as "connection timed out," "unable to locate host" or even "404, file not found." F or example, let's say you are accessing a particular shopping website. The shopping site's server is out there in cyberspace somewhere. It's important to understand that there may be several computers between your machine and their server. Every one of those computers has to be working properly in order for you to access that w ebsite. So you access that shopping site and everything appears to be running great. Then it happens: you click on a link and the little hourglass comes up and just sits there. Your Web browser's little logo just spins and spins, but no new page pops up. Eventually, you get a message, such as "connection timed out" or "unable to connect to host." C oncerned, you check through your computer's settings and find everything looks fine. What could the problem be? What's going on? I like to think about connection problems like a telephone. We all have called a number that we know is active, and we might even know the person we ar e trying to call is sitting there by the phone waiting. B ut sometimes when we try to call, we get that annoying fast-busy signal telling us to try the call again. When that happens, is there something wrong with y our phone? No. That fastbusy tone is just telling us the system is busy, so you need to try your call again. Y ou can usually get through just by hanging up and hitting redial immediately or trying the call again in a few minutes. It is the same issue with w ebsites. When things get r eally busy on the Internet, sometimes you will get messages that are the World W ide Web's equivalent of the fast-busy signal: The system is busy, so try to access that link again later. The difference is that instead of hitting redial as y ou would for a phone, you click the "refresh" button so the system tries to download the information again. S ometimes your connection to the Internet may drop and you have to reset y our connection in order to get anything after you get an unexpected error message. B ut usually, the problem is out there somewhere. A surefire way to determine whether you need to r eset your Internet connection is to try to access other w ebsites. Try entering another Web address or two. If y ou can access other sites but not one particular site, then the problem is most likely network congestion or a problem on that particular w ebsite. In fact, if you are able to open other websites, there is a site where you can check to see if a site is down for everyone or just you. Just go to www.downforeveryoneorjustme.com and enter the address of the site you're having trouble with and it will tell you if everyone is having issues or just you. If y ou can't access any sites, then you might want to reset your modem or disconnect from your I nternet provider and try reconnecting; you might just have had a bad connection. It 's when you can't access anything online that you should start looking for a problem on your end. Fr om WBALTV.com : Rat crawls up officer's back in car, bites him A police officer was attacked by a rat while r iding to a crime scene in a patrol car. B altimore Police confirmed the officer was r iding in the passenger seat of an unmarked patrol car while cruising down H anover Street when he felt something on the back of his neck. The officer swiped at his neck and discovered the big rodent crawling up his back, police said. The rat bit his palm and thumb before the officer was able to throw it out of the car window. Police said the officer's partner rushed him to Harbor Hospital, where they were told they had to retrieve the rat to test it for diseases. The officer said he and his partner went back to where they threw the rat out, found it limping along the road, and, after a small struggle, one of the officers beat the rat to death with an umbrella and bagged it. The officer who was bitten is on leave waiting to see if the rat is diseased. P olice said it's believed the rat crawled up through the car's underbelly and bit apart some wires before it crawled into the back seat. F our Appellate Division justices agreed with a state tax appeals commission's earlier finding that dances onstage or in private rooms at the club Nite Moves in suburban Albany don't qualify for a state tax exemption as "dramatic or musical arts performances." N ite Moves contested a tax bill of nearly $125,000 plus interest on lap dances and admission fees stemming from a 2005 audit. Its attorney, W. Andrew Mc C ullough, said the club has a later, larger bill it is also challenging, and that he would probably appeal the Appellate Division r uling. Mc C ullough said the impact of the ruling probably won't be widespread since most establishments featuring exotic dancers as entertainment are bars mainly selling alcohol where other tax r ules apply. LUCIE A sign just inside the door at U mberto's Restaurant and Pizzeria says, "Good food, good friends, good times." After my recent visit for lunch, I have to agree. There seemed to be something for everyone as I looked over the menu. F or those looking for a quick bite, the restaurant offers a lunch menu from 11 a.m. to 3 p.m. For those who want more than lunch but not a big dinner, the early bird specials are from 3 p.m. until 6 p.m. Fr om that time, the dinners are available until closing. The restaurant doesn't limit itself on what it serves, either. At any time, a hungry diner can find pizza, hot and cold subs, pasta dishes such as stuffed shells or ravioli, and a variety of salads. U mberto's has been feeding residents here in Po rt S t. Lucie for the past six years, although the first location opened in New Yo rk in 1965. NEAR INTERMEDIATE DISTANCE S hop Smart at N utrition S'Mart35 years ago I was a young engineer possibly on his death bed with a mystery disease. I survived with an interest in treating health issues beyond the medical model. I studied and took courses in almost all areas of alternative medicine started a small part-time healthcare business in New York. F inally, I received a Masters degree in N utrition and became a Registered D ietitian. R etiring early from Engineering, I moved to Florida, and bought the Center for N atural Healthcare in Deerfield Beach. There we were medically supervised by a staff MD and had a Chiropractor available on site. We also had three massage therapists and three hypno-therapists on staff. N ot knowledgeable in management of such a complex practice, the business failed and I purchased Healthy Heart Health Center (HHHC) in the Jupiter/Juno Beach area. At HHHC, which started as a health food store, we gradually built a clinical practice on the premises. This business stayed open for eight years until it no longer was profitable and I lost interest in r etail merchandising. In semi-retirement I maintain a private practice specializing in complementary medicine, basing my nutritional protocols on the routine blood tests done by most physicians. Physicians use these tests for diagnosis and treatment of medical problems. My system uses these tests to recommend nutritional programs to optimize blood parameters using natural remedies. I have many friends at many health food stores but a couple of years ago I became acquainted with the owners of N utrition S'Mart and we have made arrangements for my becoming a consultant to their firm. Their successful business model has allowed them to open new stores at an unprecedented rate for a privately held corporation. They now operate seven stores in Florida. This success is based on a simple business model where less money is spent on advertising and more is spent on attracting and retaining the individual customer through community outreach and education Let's explore what is in store for y ou at N utrition S'Mart. F irst, they have a reasonable amount of fresh, organic fruits and vegetables with only a few occasional exotics. They can, therefore, deliver high quality produce at attractive prices. S econd, they have a wellmaintained bulk food department where nuts, grains, seeds and snack foods may be purchased at a fraction of the price of prepackaged products. Third, they have a large selection of r efrigerated products, breads, frozen foods, gluten-free foods, prepackaged convenience foods, snacks and cereals, and health and beauty aids. F ourth, they have a well-stocked supplement and sports nutrient department all sold at reduced prices. This department is staffed with a knowledgeable employee at all times to help guide your product purchase decisions. a F ifth, they have a full-time employee who is involved in community outreach and consumer education. There are frequent seminars held in the store and at other community gatherings. Lastly, they have arranged for me to provide scheduled appointments, free of charge to you. These appointments, valued at up to $75, guarantee you at least 30 minutes to discuss your health issues. One of the most ignored health problems in the countryDry Eye Syndrome also known as K eratoconjunctivitis Sicca is a progressive eye disease in which dryness is caused by decreased tear production, increased tear evaporation, or more commonly a combination of both. This condition affects 1 in 3 people over the age of 40 and has been on the upswing in younger generations as well. It is easily one of the most common eye problems patients suffer from, yet do nothing about. What are the symptoms of dry eyes? Common symptoms include transiently blurry vision, excess tearing (watering), dryness, burning, sandy feeling, and tired sensation all of which can worsens as the day goes on or with increased reading or computer use. Other symptoms include itching, stingy, redness, or pressure sensation in the eyes. Why do these things occur? A normal tear film requires a balance of not only aqueous tears, but an oil film, and mucin layer as well. Lets look at the common mechanisms for dryness, first, is aqueous tear deficiency (ATD). The lacrimal gland is unable to produce sufficient aqueous tears to keep the whole eye moisturized. The leading reasons for this include rheumatologic disease, decreased corneal nerve sensation, multiple drugs (oral contraceptives, antidepressants, antihypertensives, antihistamines, betablockers, etc). The second type of dryness is a lack of tears do to evaporation. This is caused when you have a decreased production of oil on the eye. Without the oil the aqueous layer evaporates off the eye in seconds. Age is one of the main reasons for the eye to decrease production of the oil layer of the eye. Lastly decreased mucin production can cause serious dry eye disease by not allowing tears to form on the eye properly. Fortunately this is fairly uncommon and is usually caused by poor nutrition. How can my eye care professional check me for these problems? The most important thing is to not ignore these symptoms. Visit your eye doctor for a comprehensive evaluation and complain about your dryness! Dont suffer in silence with this problem. Your eye care professional will review your medical history for risk factors. Performing a biomicroscope slit lamp examination of your tear glands and tear film will give your doctor a better idea of your specific case. Additional testing including Schirmers test, tear break up time dye testing, and tear assay analysis can help your doctor understand how your dryness is occurring. How can I treat my eyes now that I know whats going on? There are many treatments for dry eye syndrome! There are many over the counter lubricating tear drops you could use. I caution my patients that not all tear drops are the same. Many have harsh preservatives harmful for the eyes. Others are exceptionally viscous and blur the vision. Holistic hot compress and lid hygiene treatments are extremely helpful as well. If these basic treatments are not sufficient medical treatment with cyclosporine agents, non-steroidal or steroidal anti inflammatory medicines may be needed. Minor surgical procedures used to decrease tear drainage can be utilized as well. If you are suffering with any of these problems I strongly recommend you visit your eye care professional for a comprehensive dry eye evaluation. You dont have to continue to ignore this health concern! Christopher Frey O.D. How long have eggs been marked by a use-by date? I can't remember throwing away eggs. He re 's how to tell if an egg is fresh. Gently place them in a bowl of cold water. Really fresh eggs will drop to the bottom and lie on their sides. S omewhat fresh eggs will stand on ends and bob about. Old eggs will float; they should be discarded. T oday's recipe will give you a delicious way to prepare chicken cutlets using grated I talian cheese in the breading. Just about every recipe I r ead has you using Parmesan cheese. Not only is it very expensive, but also it is almost tasteless, and if you use that imitation Italian cheese sold on the shelves, yo u' ve ruined your meal. There are three basic cheeses used for grating: pecorino Romano, locatelli R omano and Parmegiana R eggiano. My preference is the pecorino. Its flavor is strong and enhances most dishes, especially tomato based, and is the least expensive, about $7 a pound. The Locatelli is much spicier, too strong for my taste and more expensive. Pa r mesan's flavor is delicate, and it's very pricey. I use it in salads and cream-based dishes, such as Alfredo. Don't buy these imported cheeses in supermarkets. They just about double the price. A butcher shop or I talian deli are the places to go. The prices are cheaper, and they even grate it for free. Do you use bread crumbs? I'm sure you do, and if you're like me, you choose plain, which allows you to add the spices. A recent report has me shocked. Read the label; everything from corn syrup to high-fructose corn syrup, salt and a dozen other ingredients are in there. What kind of bread were the crumbs made from? No w I know why it's smart to buy breadcrumbs in a health foods store or check with a deli or Italian bakery in y our town. If you have leftover Italian bread from a quality bakery, break it into chunks, save until you have enough and pulse it in a food processor. B oneless chicken breast can be on the expensive side, but it is often on sale. When y ou find a great price, stock up. Don't buy the breast that is already cut for cutlets; the price is much higher, and it's not hard to do it yourself. When I watch a TV show or r ead a recipe that has you taking a fairly thick piece of chicken breast and pounding it until thin, I almost laugh out loud; that is impossible to do. I told you before and I'll say it again, let's learn how to prepare cutlets.P P R R E E P P AR AR I I N N G C G C UTLE UTLE TS TSPr epare veal by scoring the meat with a sharp knife, placing it between two pieces of waxed paper, and pounding with a mallet or any heavy utensil. Performances are Friday, June 24, at 7 p.m. and Saturday, June 25, at 2 and 7 p.m.sets Umberto's apart from the others is its attention of quality. "W e make our own sauce, our own pizza dough, eventhe soup and the meatballs," Mr. Coppola said. "W e use quality ingredients from local vendors." S ome of the other specialties I found on the menu include gnocchi and penne a la vodka. I could certainly taste the quality in every bite as I had lunch. I ordered the chicken M arsala, with a side of pasta fagioli and spaghetti. The soup came first, and it was thick with lots of beans. They swam in a flavorful broth along with pieces of tomato and celery. When the chicken arrived, I couldn't believe this was a lunch portion. A large plate carried pieces of chicken pounded thin and breaded. The gravy was rich and delicious. The breading held up well under the gravy, and mushrooms covered the entire dish. My side of spaghetti could have easily fed two or three people, and arrived topped with the same sauce and mushrooms that graced my chicken. It was cooked perfectly, with a nice bite to the pasta. The restaurant also offered a variety of desserts, from Italian cheesecake to tiramisu, but I was too full from lunch to try any. But it definitely gives me a reason to go back. Pa r ticipation is limited to children under the age of 16, because higher licensing fees are required to put on productions with older students, Ms. Whitaker said. S tudents from the academy audition for each part. The effort is to make the experience as similar as possible to if they were acting in a professional production, she said. Ms. Whitaker said some of the students attended her music classes when they we re y ounger at Allapattah F lats K-8 School, she said. O thers have attended the academy and returned to volunteer, such as Martin F itzpatrick. He said it's a good program to get kids more familiar with theater. It helped cement the idea he had already had about wanting to be an actor, he said. No w, a student in the theater program at IRSC, Mr. F itzpatrick plans to seek professional acting jobs after graduation, he said. Aidan McDonnell, 10, a student from Port St. Lucie at Westgate K-8 School, said participation in "Cinderella," has made him want to become an actor. He said he was nervous at first, but was made to feel like he was part of a family. Du r ing a rehearsal, Ms. Whitaker worked to keep the students on task at times. "I want you focused on what you are doing," she told them. B ut, nevertheless, she said, she was impressed by their progress. They first contributed to fund the first year we did this," he said. "After that, we broke even, then started making a little money." All monies raised goes toward the next year's performance. One of the things setting this year's performance separate from the rest is the addition of some special effects.
