The wind that en-US had been kicked up by en-US Hurricane Michael was still en-US swirling and I knew I was en-US pushing it.en-USActually my main goal was en-US to see if the storm had moved en-US any of the polluted water that en-US had been trapped there for en-US the past nine months out to en-US sea. As daylight came I could en-US tell that, indeed, the water en-US quality had improved some. en-US The tide was high and just en-US beginning to run out, and at en-US the old engine block I began en-US to cast.en-US On about my fourth throw, en-US a fat, 18-inch spotted sea en-US trout took my chartreuse jig. en-US Not a bad start, but the wind en-US and current were making en-US things tough. After another en-US half hour I did manage en-US another 16-inch trout, but en-US water was coming into the en-US boat. en-US I paddled across the wide en-US bay to enter Garys Inlet. The en-US canal on the eastern edge of en-US Tomoka State Park had never en-US been a great fishing spot but en-US on occasion would yield a red en-US or black drum. Right then a en-US wind break was more importen-US -en-US ant. en-US After paddling against the en-US current for about a quarter en-US mile I had a hit from someen-US -en-US thing very strong. Wen I en-US pulled back hard a 25-inch en-US snook broke water and the en-US fight was on. It was a good en-US battle until the line sider took en-US me into the brush and broke en-US my 10-pound mono on the en-US barnacles. Good fun and a en-US welcome surprise. en-US Another 100 feet north and en-US I was on with a larger snook. en-US This time I was determined en-US to land it and immediately en-US moved the boat into the en-US center of the creek. Okay en-US now I had room to work. en-US The big fish and I went at it en-US for at least 10 minutes and en-US then it was gone. When I en-US reeled my line up so was my en-US jig, but my palomar knot was en-US still intact. en-US Evidently the eye of the jig en-US had not been properly en-US crimped down at the factory en-US and I had lost a great fish en-US through no fault of my own. en-US I had that happen only once en-US before. Quite a few years en-US back Capt. Leo Hiles and I en-US were fishing for gator trout en-US on the flats of Mosquito en-US Lagoon when I lost a good en-US one in that same manor. en-US After that I began to en-US inspect my jigs very carefully en-US but after years of not finding en-US any problems I had become en-US complacent. Now it had en-US happened once more, dang en-US it! en-US Luckily as soon as I got my en-US bait back into the water I had en-US another big snook. I tell you en-US they were eating my jigs the en-US way that Asian guy goes at en-US the Coney Island hotdogs. en-US This time I successfully en-US landed a nice 29-inch fish. en-US Drifting south, I soon had en-US a 20-inch sea trout and then en-US another 18 incher. My oh en-US my--what fun! On a day that en-US I figured was to be a fat zero I en-US had hooked three big snook en-US and landed five trout. en-US You may have guessed I en-US had to return the very next en-US morning. NowI know that en-US fishing is all about the timing en-US but I just couldnt resist. I en-US headed back to the snook en-US hole filled with anticipation. en-US Nothing there. Well, at least en-US nothing feeding. The wind en-US had calmed so I was able to en-US put in some time and did get en-US three trout and one manen-US -en-US grove snapper. Nothing en-US spectacular but all good pan en-US fish. en-US Ladies and gents right now en-US is prime snook time. Fish en-US them in the creeks where you en-US find swift water and in the en-US Tomoka River. Is Dooms Day en-US near? Well take a deep breath, en-US and listen very carefully to en-US what I m about to say. NO, en-US NO, NO and NO. en-US I would like to share a trip I en-US made recently to prove my en-US point. My wife and I were on en-US a trout fishing trip in en-US Clarksville, Ga., staying with en-US some friends. While I was en-US there, I cooked for the family en-US and some friends one night. en-US During the evening, one of en-US the guests came to me and en-US asked if I would consider en-US taking a tour of his food en-US plant, which was nearby and en-US possibly give him some en-US culinary ideas. I told him I en-US would be happy to. I later en-US found out they had done a en-US security and background en-US check on me before I was en-US asked to tour the plant. en-US The facility is closed to the en-US public due to strict security. en-US My friend had set this all up en-US to surprise me beforehand, en-US knowing I would like to tour en-US the plant. The company was en-US the Fieldale Farms Corp., the en-US largest producer of cut en-US chicken in the world. The en-US packs of cut up chicken that en-US you see in Publix and en-US Winn-Dixie are just a few of en-US their products. en-US The tour began with a brief en-US introduction by the CEO. I en-US was then given a personal en-US security detail to take me en-US through the plant. We en-US entered the clean room and en-US given a smock, rubber en-US bootees up to the knee and a en-US hospital hair covering. She en-US used a remote control device en-US to open a door to the wash en-US room as we walked in a disinen-US-en-US fectant form sprayed across en-US the floor. We walked through en-US this suds to the sinks, which en-US were foot activated. She en-US watched as I washed my en-US hands for one minute with en-US antiseptic soap and then I en-US rinsed my hands with an en-US antiseptic solution. I was en-US given sleeve covers, which en-US went from my wrist to elbow en-US and then gloves to overlap en-US the wrist. en-US She activated the exit door, en-US and we entered a long en-US corridor first walking en-US through another antiseptic en-US foam spray. This process en-US would be repeated several en-US times as we entered each en-US department. Nowhere could en-US you smell poultry. It is the en-US cleanest facility I have ever en-US seen. en-US They process chicken en-US from eggs to fried chicken en-US tenders. All chicks are en-US sprayed with an antibacterial en-US growth agent. The feeding en-US sheds are large to prevent en-US overcrowding and stress on en-US the chickens, resulting in a en-US bigger and tender product. en-US The Human Society of en-US America has awarded them a en-US Best Practice Award the last en-US three years. All employees en-US are required to go through en-US the same procedures I had en-US followed. All poultry is en-US X-rayed and run through a en-US metal detector before en-US packaging. en-US The cutting tool is a high en-US speed water jet, which slices en-US like a knife and can be en-US programmed for any size or en-US shape. Human hands never en-US touch the product and it en-US moved from one area to en-US another by pneumatic plastic en-US tubes and conveyor belts to en-US box. At every stage the en-US product is tested for temperaen-US -en-US ture and bacteria count. en-US This company is an en-US example of what is happening en-US in Americas beef, poultry, en-US and pork companies. Across en-US the country, food manufacen-US -en-US tures are initiating these en-US procedures. Is our food safe?en-US For those naysayers who en-US state food was safer when I en-US was young or back in the en-US good old days, well the good en-US old days werent so good. In en-US the early 1900s, people lived en-US to the average ripe old age of en-US 50. Hot dogs we full of en-US mystery meat. Today we have en-US truth in labeling and sanitaen-US en-UStion policies that are the envy en-US of the world. Is it perfect? No, en-US but it is better than in any en-US time of our history. Pour chicken en-US stock over vegetables. In a en-US bowl, coat all chicken parts en-US and potatoes with the olive en-US oil and butter mixture, place en-US chicken parts and potatoes en-US in shallow roasting pan with en-US vegetables. Season with en-US lemon juice, salt and pepper. en-US Sprinkle garlic and oregano en-US over all chicken.
