en-USWorld War II veteran gets en-US medals from ERAU NROTCen-USA World War II veteran was recently bestowed en-US with metals, 72 years after his hitch was up in the en-US U.S. Army Air Corp.en-US The Naval Reserve Officers Training Corps Unit en-US at Embry-Riddle Aeronautical University hosted an en-US awards ceremony for Capt. John Richard Dick en-US Charles, 94, of Daytona Beach Tuesday, July 31. en-US Capt. Pat Everly, U.S. Navy commanding officer of en-US the NROTC program and professor of Naval Scien-US -en-US ence at ERAU, presented Capt. Charles the Air en-US Medal, American Campaign Medal, Asiatic-Pacific en-US Campaign Medal and the WWII Victory Medal.en-US Capt. Charles attended the short ceremony en-US with his wife, Joyce, and sons, Rick and Bill en-US Charles, and their wives, Pat and Ellen. He en-US also has two daughters. en-US He has vivid memories of his time in the en-US service and a great sense of humor. en-US Just flying was an experience he said. en-US The Pacific Ocean is a very big ocean. Once you en-US take off, all you see is water. We had an instrument en-US in the airplane called a drift meter. From that I was en-US able to navigate all over the Pacific. My bases that we en-US were stationed at were small. We didnt have navigaen-US -en-US tors, so I was my own navigator. en-US Self-sufficiency was a crucial skill to develop, he en-US said. You learned it or you die. I did it for me and en-US my en-US family and the en-US United States.en-US He recalled being stationed in places where the en-US average daily temperature reached 118 degrees. Charles was en-US trained by Embry-Riddle en-US School of Aviation in South en-US Florida.en-US I wanted to do this today en-US because we want you to know en-US how much we as an age group en-US think about this, Bill Charles en-US said.en-US He stressed how World War en-US II veterans tended to downen-US-en-US play their service, coming en-US home and carrying on life as en-US usual. en-US Rick Charles said, Hes en-US done quite well for himself and en-US so now he is enjoying retireen-US -en-US ment. He was on the tennis en-US courts til he was 83. It is interen-US -en-US esting he is getting this recogen-US -en-US nition now because he really en-US didnt talk too much about his en-US service. He never flew after the en-US war.en-US It was an honor for the en-US Embry-Riddle and the ROTC en-US unit, Capt. Everly said. He en-US was first trained in Piper Cub en-US aircraft by Embry-Riddle en-US during his assignment to the en-US University of Florida in en-US Gainesville and then was sent en-US for additional training in El en-US Reno and Enid, Okla. Capt. en-US Charles was then assigned to en-US fly C-47 transport aircraft in en-US the Pacific theater, including en-US Guadalcanal.en-US As part of a biography writen-US -en-US ten about his father, Bill en-US Charles wrote that during his en-US deployment from June 1944 to en-US March 1946, he was assigned en-US missions within the combat en-US theaters. Despite adverse en-US weather conditions and the en-US hazards of long over-water en-US flights and probable enemy en-US anti-aircraft fire and fighter en-US interception, Capt. Charles en-US exhibited professional skill, en-US courage and steadfast devoen-US -en-US tion to duty, which reflected en-US great credit upon himself and en-US the Army Air Forces. He en-US earned the Air Medal for his en-US service. en-US The Air Medal, authorized en-US by President Franklin D. Rooen-US-en-US sevelt in 1942, is awarded for en-US heroism or meritorious en-US achievement while participaten-US-en-US ing in an aerial flight in or en-US with the U.S. Army, Navy, en-US Marine Corps or Coast Guard.en-US After the surrender of Japan en-US in September 1945, Capt. en-US Charles was one of the first en-US pilots to land on the Japanese en-US mainland, carrying the occuen-US-en-US pational/transition forces. en-US After his discharge, he en-US returned to complete his eduen-US -en-US cation at Penn State. That en-US presents a problem for the en-US State of Florida where the en-US warmer waters are more en-US welcoming to the lionfish. en-US Now the Atlantic Ocean and en-US Gulf of Mexico are under en-US attack by these somewhat en-US small predators. en-US At first glance you might say en-US so what? But they are en-US voracious eaters and devour en-US the fry of our most desired en-US table and gamefish at an en-US alarming rate. Whats more, a en-US female lionfish is able to en-US produce 30,000 to 40,000 eggs en-US every few days. Being such a en-US prolific breeder has caused a en-US population explosion that has en-US marine experts worried.en-US Some time back, a one-day en-US lionfish roundup at Pensacola en-US yielded more than 2,500 of the en-US nasty little critters. This same en-US thing has been happening all en-US over the state, but it seems to en-US be too little too late. en-US To begin with, lionfish have en-US no natural predators in our en-US waters. Their outlandish en-US appearance is a warning sign en-US to other marine creatures to en-US give them a wide berth. en-US Indeed, their long spines are en-US very sharp and, as it turns out, en-US poisonous. They can deliver a en-US painful wound to humans but en-US are deadly to fish. At the en-US roundups, divers are able to en-US kill them by any means they en-US can and most are speared. en-US They can be caught with hook en-US and line as well. Once en-US harvested, the lionfish are en-US opened up to see what they en-US have been dining on and en-US invariably it is found they have en-US been eating the young of en-US snapper, grouper and other en-US desirable fish. en-US Now if there is any good en-USnews in all of this, it is the en-US strangeen-US looking little fish are en-US tasty when properly prepared. en-US When you first see a lionfish, en-US the thought of a fish sandwich en-US is pretty far back in your en-US mind, but these days there are en-US many restaurants featuring en-US them, some of them locally.en-US Ladies and gentlemen, we en-US have little defense against this en-US non-indigenous species. Our en-US best bet is to eat them. I would en-US urge you to seek out establishen-US -en-US ments that have lionfish on en-US the menu and give it a try. I en-US promise you they are tasty. en-US Making them popular at meal en-US time is probably our best way en-US of getting rid of them or at en-US least having some control.en-US Lets face it, we as a people en-US have managed to nearly en-US eradicate some of our best en-US tasting fish like cod and en-US goliath grouper. It would only en-US make sense our best weapon en-US against these spiny little en-US critters is a fork. If your en-US favorite eating establishment en-US does not feature lionfish, ask en-US them to get on board. This is a en-US serious problem that needs to en-US be addressed. en-US Over fishing and pollution en-US has depleted our marine en-US species to the point of an en-US emergency, but we cannot let en-US an invasive species like this en-US finish the job. And please, if en-US you or a friend have them in en-US an aquarium, dont release en-US them into our marine or en-US brackish environment. Dont en-US even throw in the dead ones. en-US Please dig a deep hole and en-US bury them. As en-US such, it sometimes is overen-US -en-US looked and is usually not held en-US in as high a regard as the en-US Masters, or either of the en-US Opens. I first went en-US there as a single guy and then en-US a married one and later a en-US father of two and now a en-US grandfather of a boy and girl. en-US As you can see I have made it en-US a generational thing. en-US For an outdoorsman, it is en-US always a great place to visit. en-US The inlet lies about 15 miles en-US south of Melbourne on State en-US Road A1A and, as time en-US passed, I have watched it go en-US from a mostly unknown spot en-US to one of the states most en-US popular destinations. Back en-US when I first visited, there was en-US no state park and few amenien-US -en-US ties. Now there is a first class en-US campground, complete with en-US stores and nice bathrooms. en-US One thing that has always en-US been there is fish. At Sebastian en-US Inlet if you chose to wet a line, en-US you will catch fish. This year en-US was no exception. While my en-US wife, Lana, daughter, Shayla, en-US son, Landan, and grandkids, en-US Oliver and Delayna played in en-US the clear water, I went after en-US dinner. The inlet is one of en-US Floridas most famous snook en-US fishing holes, but I usually en-US target the red drum when I go en-US there because in the middle of en-US summer snook are out of en-US season. en-US By the way in a recent en-US column I misspoke. The daily en-US limit for snook is one per en-US person and not two. (Slow en-US down Dan!) This time I did en-US tie into a nice one to release en-US and had a great time doing it. en-US Under the small fishing pier en-US in the park lives some of the en-US fattest mangrove snapper you en-US will ever see. Some years back en-US I discovered those fish are en-US single minded in their dining en-US habits. They will only hit en-US mojarra minnows. Once I had en-US some netted, I knew I was in en-US for some fun and good eats en-US and pretty quickly had five en-US good ones, averaging about a en-US pound and a half. en-US With those on ice I took my en-US 17-foot Polar just outside the en-US inlet and turned south. The en-US Atlantic was so smooth I was en-US able to get in pretty close to en-US shore where I found pompano en-US hitting on shrimp. Once I had en-US four, I knew dinner was en-US secured and went back inside en-US to swim with my family.en-US Folks, pompano on a grill is en-US one of the very best things en-US Florida has to offer and this en-US summer more of you should en-US be at the beach catching them. en-US The best part is that at this en-US time of year your bait is right en-US under your feet. The sand en-US fleas at the waters edge are the en-US perfect bait for pompano. Do en-US yourself a favor and give that a en-US try. You might take along the en-US kids for digging sand fleas is a en-US great time for youngsters. en-US The next morning I went en-US wading for reds in the lagoon en-US just east of the boat ramps. en-US That is something I love to do en-US and have been at it for a long en-US time. I usually catch red fish en-US there, but seldom a large one. en-US Just being in that beautiful en-US setting and wading the clear en-US water is really enough for me, en-US but when I made a long cast en-US something sturdy took my jig en-US and set off for Vero Beach to en-US the south. The fish was big, en-US but still an over-achiever nearen-US -en-US ly spooling my reel. After 15 en-US minutes or so, I landed a en-US pretty 30-inch red drum. In en-US that clear water the fish had en-US little color and was mostly en-US silver. I paused to appreciate it en-US before releasing it to fight en-US another day. Good fun! en-US On the ride home, I had to en-US smile. Sebastian Inlet had en-US shown me a great time once en-US more. It seems en-US every few years the preparaen-US -en-US tion of food is affected by en-US societies eating habits.en-US Years ago we were told fat is en-US bad for us, so everyone en-US wanted low fat foods. Unforen-US -en-US tunately sugar was used in low en-US fat foods to give it flavor. Then en-US we were told sugar was en-US horrible, too late, the great en-US majority of processed foods en-US have fructose corn syrup in it. en-US Then we were told dont eat en-US processed foods, eat fresh en-US organic foods. Someone forgot en-US to tell the farmers who tried to en-US convert to organic and the en-US fresh movement. Farmers en-US could not keep up. The price en-US of organic food products en-US doubled, making those items en-US un-affordable for many en-US families. en-US The demand for different en-US foods continuen-USed to grow with en-US the increase of individuals on en-US vegetarian and vegan diets. en-US Weve been told to cut down en-US on beef and eat more fish. The en-US trouble again is seafood is en-US expensive and not all of it is en-US sustainable so we have fish en-US farms expanding. en-US Oh, by the way, we are told en-US grass-fed beef is OK. Guess en-US what? All beef is grass fed, we en-US just decided to grain feed it to en-US get fat cows again. Chickens en-US should be free range, antibioten-US -en-US ic and GMO free. They also en-US should be treated more en-US humanely to help produce en-US healthier chicken products. en-US In the world of food, a great en-US many things are happening. It en-US seems to me the problem is en-US people. We left our past en-US traditions and changed things en-US too much. en-US Now we are going en-US back to our past. We are en-US finding out fresh eggs off a en-US farm taste better, chickens en-US were always free range and en-US beef was always grass fed. We en-US were not supposed to catch all en-US the seafood possible, but to en-US always look to the future.en-US Now what is the best en-US cooking method for nutrition? en-US First, remember cooking food en-US improves digestion and en-US increases abortion of nutrien-US -en-US ents. We seem to be going en-US back to the simple methods of en-US cooking. Boiling can cause a en-US 50 percent loss of nutrients, so en-US steaming is a much better en-US method by using small en-US amounts of liquid.en-US Baking and roasting are en-US good also with little loss of en-US nutrients. Microwave cooking en-US is a nutritious way to cook as en-US well. Take your favorite en-US vegetables, cut up and place in en-US a plastic food-safe bag; season en-US and microwave several en-US minutes. This method works en-US well every time. en-US Stir fry also is considered en-US good. You are cooking at high en-US heat for a short period of time. en-US In general, cooking for shorter en-US periods of times at lower en-US temperatures with minimal en-US water is best, and dont forget en-US the liquid from cooking is en-US where the nutrients go, so en-US dont waste it. en-US Now I think its time for me en-US to hit the books again and get en-US ready for the next food trend en-US or maybe I should just get en-US some really old cookbooks en-US and study how we cooked en-US before we changed everything. en-US Here is a recipe and cooking en-US procedure that has not en-US changed in 75 years.
