en-US 10 en-USOen-USne of the most intriguing and en-US beautiful houseplant is the African en-US violet. These delicate plants are en-US admired by many but a lot of people shy en-US away from purchasing them because they en-US think they are hard to grow. This is not realen-US -en-US ly the case. It is true that they require some en-US attention but then again, most other plants en-US do also. en-US The first step is to decide what plant you en-US would like to bring home. African Violets en-US come in several colors and some varieties en-US have variegated leaves. As with most en-US flowering plants, is a good idea to buy en-US plants that have some buds that not yet have en-US opened. Make sure the leaves look healthy en-US and green. Once you purchase your new en-US plant, you need to transplant it into a en-US different pot. Be sure to choose a pot that is en-US designed for African violets. A regular en-US flowerpot is too deep. Be sure to purchase a en-US potting soil that is designed for African en-US Violets. You also should purchase some en-US small pebbles or stones. You will also need a en-US saucer to place under the pot.en-US After you have purchased your plants en-US and the supplies you will need, its time to en-US do the fun part. Fill your African violet pot en-US about half full with soil and place the newly en-US purchased plant centered in the pot. Fill the en-US remainder of the space with more soil. Pat en-US the soil down slightly and then add a little en-US more soil to top off the pot. Once your en-US plant is situated, you can add a couple of en-US Jobes plant spikes to the mix. Now, here en-US comes the tricky part. Water your plants by en-US placing tepid water in the plant saucer you en-US purchased. Place the pot in the saucer and en-US allow it to absorb the water for about an en-US hour. Do not water the plant from the top en-US or allow water to touch the leaves.en-US Since African Violets are native to Africa, en-US they require a humid environment in which en-US to thrive. You can use your saucer to help en-US raise the humidity around your plant. You en-US can achieve this by first placing small stones en-US in the bottom of the saucer. Now, place your en-US pot in the saucer and level the rocks so the en-US pot remains en-US steady. Now, en-US put some water en-US in the water but en-US be sure the en-US water does not en-US completely en-US cover the stones en-US or touches the en-US bottom of the en-US pot. This water en-US will enhance en-US the humidity en-US around the en-US plant and en-US ensure that it en-US remains happy. en-US Check the plant en-US every few days en-US and water as en-US needed. I cant stand it! The en-US frustration is usually mixed with confusion en-US because they figure that, since its a new en-US machine with gobs of ram and all sorts of en-US processor power, it should be much faster en-US than their old machine. en-US Now as a rule this is usually true their en-US new machine is actually much faster than en-US their old machine and if you set the two of en-US them up side by side youll see the new one en-US start up much faster, open programs much en-US faster and visibly outperform the old en-US machine with every test you throw at it. en-US That is until you start doing things that en-US depend upon a fast internet connection. en-US You know, things like watching a en-US YouTube video or waiting for a page like the en-US Yahoo portal to load. Then, if the internet en-US connection is not what it should be, things en-US grind to a halt and start working at the en-US same pace as the old machine.en-US When people start off by telling me that en-US watching videos over the internet is en-US frustrating because it pauses and skips, I en-US usually tell them about the old work around en-US of starting the video and then immediately en-US hitting the pause button for a while. (I still en-US use this technique just to make sure, en-US especially if its a long video Ill start the en-US video then pause it and go get a cup of en-US coffee or something. Then when I come en-US back Ill hit play and it usually plays without en-US a hitch). What were doing by starting it and en-US pausing for a while is giving the data stream en-US a good head start before releasing the play en-US head in the hopes that the point of the en-US video that we are watching doesnt catch up en-US with the data stream thats downloading. If en-US the internet connection is slow and we hit en-US play and dont hit the pause button, the en-US video will sometimes play faster than the en-US computer can download the data that en-US makes up the video and the whole thing en-US stops while it downloads a bit more. This en-US process is called buffering and has more en-US to do with the speed of the internet en-US connection than it does with the speed of en-US the computer. Pause the video and give the en-US data stream plenty of time to buffer and en-US when you hit the play button again the play en-US head wont have a chance of catching the en-US data stream and it should play smoothly. en-US With YouTube videos you can even see it en-US in action start a video and hit pause, then en-US watch and youll see a thin red line start to en-US grow from the left to the right even though en-US the video isnt playing. That line is an en-US indication of how much of the data stream en-US is downloaded and the trick is to make sure en-US its far enough ahead. Catch up to the line en-US and the video will pause and try to buffer en-US on its own but usually the automatic en-US buffering doesnt give the data stream en-US enough of a head start and the process en-US repeats itself over and over.en-US OK so we know that even a brand new en-US computer will come to a screeching halt if en-US its trying to do something over a slow en-US internet connection but how does one go en-US about testing that? One way to check is to en-US fire up your web browser and go to en-US www.en-US speedtest.neten-US and click the Go button. en-US (Caution the button you want to click is en-US labeled Go Ignore any ads that may load en-US first with misleading buttons!) en-US This will run a series of tests and give you en-US a good idea of just what your download and en-US upload speeds are measured in Mega Bits en-US Per Second (MBPS). LUCIE Walking into the Villa en-US Pagano is like stepping through the doors of en-US a time machine, taking you back to a simen-US-en-US pler more rustic age when meals were simen-US -en-US mered to savor for hours on end and an en-US extra plate was always handy for anyone en-US who might walk through the door.en-US Although opened just last April, the en-US restaurant and its owner Raffaele Pagano en-US come with a long gastronomic history spanen-US -en-US ning two continents and multiple generaen-US -en-US tions. Mr. Paganos family emigrated from en-US Italy when he was just a child, and by the en-US time he was 15, he was learning culinary en-US techniques that his Italian grandparents had en-US passed down to his parents in his own famien-US -en-US lys restaurants in New York City. After his en-US family moved to Port St. Lucie in the late en-US 1990s, he and his brother opened up Euroen-US -en-US pa, which they ultimately sold in 2006.en-US During the 10 years or so off from the en-US restaurant business, Mr. Pagano met and en-US married his wife Jackie, another New Yorker en-US of Italian/Irish descent who moved to Port en-US St Lucie before he did. After their two chilen-US -en-US dren Francesco and Dianna were born, they en-US began taking them on vacation to New York en-US where they would visit family members en-US working in their own restaurants. It was en-US Francesco and Dianna who, in fact, encouren-US -en-US aged their parents to open Villa Pagano, and en-US the two feel right at home chatting with cusen-US-en-US tomers when theyre not studying or playing en-US in their own playroom in the back of the en-US restaurant. Today Villa Pagano is located, en-US ironically, in the same U.S. 1 strip mall as his en-US old restaurant just south of La Buona Vita en-US Drive and draws some familiar faces.en-US Whats cool is I get to see some of the en-US same customers I used to have in Europa, en-US Mr. Pagano said.en-US During my recent visit I sampled small en-US portions of several things off the menu, paren-US -en-US ticularly because my dining partner Gloria en-US is still out of the country and I couldnt niben-US -en-US ble off her plate as usual. I began with two en-US different appetizers, the caprese and antien-US-en-US pasta salads. The caprese is a beautiful little en-US stack of fresh mozzarella and tomato slices en-US doused with vinaigrette, while the antipasta en-US is Mr. Paganos own take on the traditional en-US dish of Genoa and sopressata salami, provoen-US -en-US lone, mozzarella, tomatoes, olives, artien-US-en-US chokes and banana peppers swimming in an en-US olive oil/balsamic vinegar dressing. Instead en-US of the thinly rolled slices of Italian cold cuts en-US found in most antipasto salads, the Pagano en-US version features chunks of the savory meats en-US and cheeses making for a much hardier en-US appetizer that could really serve as a meal.en-US My visit to Villa Pagano also instilled in en-US me a new passion for Pasta Fagioli, a typical en-US Italian soup made of cannellini beans, red en-US kidney beans and ditalini pasta. I had basien-US-en-US cally stopped ordering the dish after several en-US disappointing renditions. Mr. Paganos en-US secret, he said, was a return to the soups en-US vegetarian roots, which results in a lightly en-US seasoned broth brimming with the standard en-US ingredients plus other vegetables offering a en-US tantalizing crunch of celery in the backen-US -en-US ground.en-US Villa Pagano Is also the first place Ive en-US ever enjoyed rice balls as an entree. The en-US owner tops them with cheese and an exquien-US -en-US site marinara-type sauce that his wife said en-US her northern relatives clamored for at Euroen-US -en-US pa before she ever met her future husband.en-US When our family members up north en-US came down for a visit, they would ask where en-US they could go locally to get a good red en-US sauce, she said. I would tell them either go en-US to Europa or wait till you get back home in en-US New York for your red sauce.en-US In-between bites of my lemony Chicken en-US Francese (yeah, I kept on eating but my pace en-US at this point had slowed considerably) I en-US sampled both the meat and vegetarian pinen-US-en-US wheels (flaky pastries filled with pizza en-US ingredients), as well as en-US slices of both Sicilian en-US and Grandmas pizzas. en-US While the Sicilian is a en-US much thicker and en-US chewier pizza, the en-US Grandmas ended up en-US being my favorite. en-US Always meant to be a en-US simple dish of un-risen en-US pizza dough, fresh en-US tomatoes and mozzarelen-US-en-US la cheese, the Grandma en-US is a delightfully thin and en-US crispy pie baked in a en-US rectangular pan coated en-US in olive oil.en-US For more traditional en-US or adventurous pizza en-US lovers, Villa Pagano en-US offers at least 28 toppings to choose from, en-US and many flavors of pizza -including the en-US Grandma -are available by the slice en-US throughout the day. As I finished up my dessert, en-US the couples daughter Dianna entertained en-US me with her own rendition of Ave Maria in en-US Latin of which she sang the entire song by en-US heart without flinching.en-US She wants to be on The Voice when she en-US grows up and already has plans to live in en-US New York, her mother quipped.en-US The warm and rustic interior of the en-US restaurant was all finished by Mr. Pagano en-US himself, mimicking much of what hes seen en-US on visits to his native Italy, including a beauen-US-en-US tiful stone grotto devoted to the Virgin en-US Mary and a brick wall that appears to have en-US been patched over with stucco.en-US People [there] dont replace the walls, en-US they just patch them, he said.en-US The Party Room is particularly beautiful en-US with its shiplap walls constructed of en-US reclaimed pallet boards that embrace the en-US grotto centerpiece made of hand selected en-US stones. I en-US bet nothing is in the right place. If its like en-US my home, you store food on any empty en-US space you find no matter what it is. I am en-US constantly opening the door and condien-US -en-US ments come flying off the door shelf or en-US small bottles are slipping between the en-US holders in the door and open spaces in the en-US bottom rack and fall to the floor and break. en-US And how about those plastic containers en-US that berries come in? They never close en-US properly, and when they fall on the floor en-US berries roll everywhere.en-US Get the picture? en-US Just for the record, there is a proper en-US procedure for storing food safely. Yes, safely en-US because someone could get sick from en-US cross-contamination. I bet I have your en-US attention now!en-US Unfortunately household refrigerators en-US are not designed like commercial units, en-US which have no door shelves or vegetable en-US crisper or egg storage compartment in the en-US door. Instead, commercial coolers have en-US several open shelves, which are adjustable. en-US Food must be stored in a certain pattern to en-US keep it safe, which is different than what we en-US do at home. en-US On the top shelf, store ready-to-eat food, en-US produce, dairy, cheese and cooked leftovers. en-US The second shelf is for fresh seafood (if you en-US buy it fresh), if not, keep it frozen until time en-US to use. The third shelf is for raw ground en-US meats and the bottom shelf for raw poultry. en-US Eggs should stay in the cartons they came en-US in to ensure freshness and safety.en-US Storing in this manner may be difficult at en-US times. Always wrap food properly and store en-US in plastic bags or containers to avoid the en-US transfer of juices from one food to another. en-US That is the key. en-US Buy a good refrigerator thermometer to en-US check temperatures so food is in the safe en-US zone of 41 degrees or lower. Oh, and for en-US those door shelves, buy some plastic en-US containers at the dollar stores that fit in the en-US shelf, that way nothing will fall through the en-US bottom. en-US Hope this all helps. Cook over medium heat for 2-3 en-US minutes then add the cooked chicken and en-US set aside. en-US In a sauce pan, place 2 tablespoon en-US vegetable oil, 2 tablespoons butter, and 4 en-US tablespoons all-purpose flour. Whisk en-US together to make a roux. Cook over en-US medium heat for 1-2 minutes.en-US Add one cup half and half (optional) and en-US 4 cups milk slowly, whisking continuously en-US to remove all lumps.
