That en-US presents a problem for the en-US State of Florida where the en-US warmer waters are more en-US welcoming to the lionfish. en-US Now the Atlantic Ocean and en-US Gulf of Mexico are under en-US attack by these somewhat en-US small predators. en-US At first glance you might say en-US so what? But they are en-US voracious eaters and devour en-US the fry of our most desired en-US table and gamefish at an en-US alarming rate. Whats more, a en-US female lionfish is able to en-US produce 30,000 to 40,000 eggs en-US every few days. Being such a en-US prolific breeder has caused a en-US population explosion that has en-US marine experts worried.en-US Some time back, a one-day en-US lionfish roundup at Pensacola en-US yielded more than 2,500 of the en-US nasty little critters. This same en-US thing has been happening all en-US over the state, but it seems to en-US be too little too late. en-US To begin with, lionfish have en-US no natural predators in our en-US waters. Their outlandish en-US appearance is a warning sign en-US to other marine creatures to en-US give them a wide berth. en-US Indeed, their long spines are en-US very sharp and, as it turns out, en-US poisonous. They can deliver a en-US painful wound to humans but en-US are deadly to fish. At the en-US roundups, divers are able to en-US kill them by any means they en-US can and most are speared. en-US They can be caught with hook en-US and line as well. Once en-US harvested, the lionfish are en-US opened up to see what they en-US have been dining on and en-US invariably it is found they have en-US been eating the young of en-US snapper, grouper and other en-US desirable fish. en-US Now if there is any good en-US news in all of this, it is the en-US strangeen-US looking little fish are en-US tasty when properly prepared. en-US When you first see a lionfish, en-US the thought of a fish sandwich en-US is pretty far back in your en-US mind, but these days there are en-US many restaurants featuring en-US them, some of them locally.en-US Ladies and gentlemen, we en-US have little defense against this en-US non-indigenous species. Our en-US best bet is to eat them. I would en-US urge you to seek out establishen-US -en-US ments that have lionfish on en-US the menu and give it a try. I en-US promise you they are tasty. en-US Making them popular at meal en-US time is probably our best way en-US of getting rid of them or at en-US least having some control.en-US Lets face it, we as a people en-US have managed to nearly en-US eradicate some of our best en-US tasting fish like cod and en-US goliath grouper. It would only en-US make sense our best weapon en-US against these spiny little en-US critters is a fork. If your en-US favorite eating establishment en-US does not feature lionfish, ask en-US them to get on board. This is a en-US serious problem that needs to en-US be addressed. en-US Over fishing and pollution en-US has depleted our marine en-US species to the point of an en-US emergency, but we cannot let en-US an invasive species like this en-US finish the job. And please, if en-US you or a friend have them in en-US an aquarium, dont release en-US them into our marine or en-US brackish environment. Dont en-US even throw in the dead ones. en-US Please dig a deep hole and en-US bury them. Our reefs are en-US under attack by lionfish!en-US Thanks to Marylu Leen-US veroni en-US for her help with this column.en-US Dan Smith is on the board of en-US directors for the Ormond Beach en-US Historical Society and The en-US Motor Racing Heritage en-US Association and is the author en-US of two books, The Worlds en-US Greatest Beach and I Swear en-US the Snook Drowned. He also has two en-US daughters. en-US He has vivid memories of en-US his time in the service and a en-US great sense of humor. en-US Just flying was an experien-US -en-US ence he said. The Pacific en-US Ocean is a very big ocean. en-US Once you take off, all you see en-US is water. We had an instrument en-US in the airplane called a drift en-US meter. From that I was able to en-US navigate all over the Pacific. en-US My bases that we were staen-US -en-US tioned at were small. We didnt en-US have navigators, so I was my en-US own navigator. en-US Self-sufficiency was a cruen-US -en-US cial skill to develop, he said. en-US You learned it or you die. I en-US did it for me and my family en-US and the United States.en-US He recalled being stationed en-US in places where the average en-US daily temperature reached 118 en-US degrees. We couldnt work on en-US the planes. We had to wait en-US until it became dark, Capt. en-US Charles said.en-US As for getting the medals, he en-US said, I thought I was long en-US gone and forgotten. en-US He was astounded that this en-US happened and something that en-US wasnt expected. People cared en-US enough to go to all this trouble en-US just to honor me. en-US Mr. Charles son, Bill, en-US reached out to a retired navy en-US friend who helped the family en-US connect with ERAUs Naval en-US ROTC unit to plan the cereen-US -en-US mony. It made for the perfect en-US venue as Capt. Charles was en-US trained by Embry-Riddle en-US School of Aviation in South en-US Florida.en-US I wanted to do this today en-US because we want you to know en-US how much we as an age group en-US think about this, Bill Charles en-US said.en-US He stressed how World War en-US II veterans tended to downen-US-en-US play their service, coming en-US home and carrying on life as en-US usual. en-US Rick Charles said, Hes en-US done quite well for himself and en-US so now he is enjoying retireen-US -en-US ment. He never flew after the en-US war.en-US It was an honor for the en-US Embry-Riddle and the ROTC en-US unit, Capt. Everly said. I want en-US to thank all the effort from en-US your family to help make this en-US event happen. It is truly an en-US honor as an active duty naval en-US officer to be able to talk with en-US you and to be able to present en-US some hard-earned decorations en-US that came through years of en-US sacrifice, and probably some en-US points of sheer terror as you en-US were flying around the westen-US-en-US ern Pacific.en-US It drives home to me and en-US some of the folks that work en-US here with me the importance en-US of remembering that Greatest en-US Generation, he said. My hat en-US is off to you. Another stellar en-US example of somebody who en-US puts service before self.en-US Capt. Charles was born in en-US Lancaster, Pa., in 1923. The en-US son of a World War I veteran, en-US he enlisted in the Army Air en-US Corps at 21 after his brother en-US died in an Army Air Corps en-US training accident in 1942. He en-US was first trained in Piper Cub en-US aircraft by Embry-Riddle en-US during his assignment to the en-US University of Florida in en-US Gainesville and then was sent en-US for additional training in El en-US Reno and Enid, Okla. Capt. en-US Charles was then assigned to en-US fly C-47 transport aircraft in en-US the Pacific theater, including en-US Guadalcanal.en-US As part of a biography writen-US -en-US ten about his father, Bill en-US Charles wrote that during his en-US deployment from June 1944 to en-US March 1946, he was assigned en-US missions within the combat en-US theaters. Despite adverse en-US weather conditions and the en-US hazards of long over-water en-US flights and probable enemy en-US anti-aircraft fire and fighter en-US interception, Capt. Charles en-USexhibited professional skill, en-US courage and steadfast devoen-US -en-US tion to duty, which reflected en-US great credit upon himself and en-US the Army Air Forces. These parents and students en-US have zero regard for our streets or the homeowners. Parents park en-US at the entry of the streets, blocking all traffic. They line up on en-US both sides of street, blocking driveways. en-US The students stand at the edge and middle of the street, not en-US moving so the residents of the street can get out. We ask them to en-US move, beep the horn, we get nasty hand gestures and screamed en-US at. The students litter while waiting on the parents. Lawn care en-US businesses, garbage trucks, delivery trucks, etc., cannot get in or en-US out of our streets as well. This is a danger. Someone is going to en-US get hit.en-US After years of complaining, the city put signs up for no parken-US -en-US ing, stopping or standing last year. Apparently these parents and en-US students cannot read. This will never stop unless the law is en-US enforced. Start ticketing these parents and students. If you dont, en-US it will continue. en-USThird world countryen-USOn a drive down Commonwealth Boulevard in Port Orange, en-US you would think you were in a third world country. en-US Mobile homes with siding ripped off; broken windows, trash en-US and broken cars in the yards. What is the job of Port Orange en-US code enforcement?en-US The owners of these properties should be held accountable for en-US their appearance. Definitely not nice like it used to be. I think en-US Ill move out of Port Orange.en-USIncomplete constructionen-USI have a question about the building near Publix on State Road en-US 44. Construction has come to a complete stop and it is not finen-US -en-US ished. It is under construction by Clancys Construction.en-US Did they run out of money? It is a very big eyesore. Please, en-US give me some information on this. en-USReligious confrontationen-USHas anybody been to the Boardwalk recently? en-US My wife and I enjoy visiting on Saturday night. We moved en-US here three years ago and its great. The nice walk, the Bandshell, en-US the shops, the many people, the ocean. We love it.en-US But whats with these religious fanatics with large signs hangen-US -en-US ing on the Boardwalk, preaching their interpretation, using loud en-US megaphones to everyone that passes. Its ridiculous, rude and en-US down right annoying.en-US Im all for religion and freedom of speech, just not when its en-US pushed on me, especially loud and confrontational.en-USThere ought to be a lawen-USIf there isnt a law already, there should be one. en-US It is very offensive and annoying to be stuck at a traffic light or en-US at a gas station and some inconsiderate fool pulls up with those en-US pounding bass speakers that literally shake the trunk of their car. en-US This can usually be felt as well as heard from way too far away, en-US even if you are driving along.en-US If the law is in place, I wish the police would enforce it. If there en-US is no law, how does one bring it to ballot?en-USTicket the textersen-USIn this day and age of enlightenment, one would think texting en-US and driving would be obsolete.en-US Unbelievably not.en-US I see young and old at every stoplight fiddling with a phone. I en-US see young and old driving with a phone up on the steering wheel en-US stealing glances at the road instead of stealing glances at the en-US phone because that is where their focus is on the phone.en-US Because some people are so inconsiderate, I think the police en-US should have more than a few unmarked cars with dash cams en-US mounted on all four sides of the vehicle. These unmarked cars en-US should be dedicated to do a normal day driving around the city's en-US roadways to see all sorts of idiots texting, speeding, driving en-US aggressively, not using blinkers, etc. en-US Tickets can and should be issued with indisputable video evien-US-en-US dence. This will make driving safer for everyone. This is also a en-US good way to raise public funds without raising taxes.en-USMore consideration neededen-USHow come is it that ordinarily considerate folk will go out of en-US their way to throw a wrapper or napkin or any manner of trash en-US into a garbage pail, yet these same people dont think twice about en-US throwing cigarette butts out a car window or on the beach.en-US How unthinking or inconsiderate does one have to be to think en-US its OK to use the beautiful beaches and roadways as an ashtray? en-US Doesnt it bother people to see youngsters playing in the sand en-US with cancer-causing cigarette butts around them? Ive seen innoen-US -en-US cent children using cigarette butts as ornamentation on their en-US sand castles. How disturbing is that?en-US Hopefully the right eyes will read this. It is easy to knock the en-US cherry off of the butt and put it in a garbage or your pocket or en-US your purse or wherever until you find a garbage pail.en-US Police should enforce the law and fine people for littering. en-US This could be a source of public funds without raising taxes.en-USAppreciate prompt serviceen-USI want to highly recommend Air Link Mechanical for anyone en-US needing air conditioning help. en-US They were here right away a few weeks ago when my air conen-US -en-US ditioner went out in sweltering weather. I see no reason why they dont install metal detectors en-US at all outside doors to the schools to let officials know if a person en-US has a gun or knife on his person. Then an alarm will go off with en-US all doors locked and have a small camera outside of each door, en-US too. All children with backpacks should be well checked before en-US school begins, too. en-US If we have a police officer outside of the schools, they can easen-US -en-US ily be shot. The same for inside if a teacher has a gun, they would en-US have no time to get it. Something has got to be done to protect en-US our precious childrens lives now.en-US I am a grandmother of children in school and am concerned en-US for all the children. These signs should remind people to clean up their trash en-US and to not use the beach as their ashtray. The signs should also en-US post the minimum fines for littering and most importantly, the en-US law should be enforced by police and beach patrol. en-US The fines collected would help offset the cost of enforcing the en-US no littering law, but more importantly help clean up the beaches. en-US How disgusting is it to see children playing in cigarette butts at en-US the beach or to see all the cigarette butts piled up in the high-tide en-US line.en-USNo pride in pieren-USI was down at the Main Street pier recently to see a surf conen-US-en-US test. en-US Once you get past the view of all the homeless sleeping under en-US the pier and head around the side to get to the fishing pier, I en-US passed the food service windows. Plus, youd cut out a en-US lot of expense of cooling en-US classrooms when its still en-US blazing hot. But then I find en-US out most schools air condien-US -en-US tioning systems run for most en-US of the summer, anyway, en-US because of other activities.en-US While I like my shorter en-US school year idea, many en-US academics would prefer en-US students were in school even en-US longer, leaving just July for en-US summer break. They note to en-US really prepare students you en-US need the extra time, especially en-US before those spring assessen-US -en-US ment tests. As we try to en-US compete in a global economy, en-US I have to admit they have a en-US good argument.en-US To make sure students are en-US getting the education they en-US need to become a productive en-US part of society, Im all for en-US doing whatever it takes.en-US So, what does all this have en-US to do with business in Volusia en-US County? A lot when you en-US consider the en-US students will en-US eventually become the en-US workers or business owners or en-US leaders of our future. We want en-US them to be able to make good en-US decisions based on sound en-US reasoning and knowledge.en-US One last thought on en-US education. Ive written in this en-US column about the need for en-US skilled labor and you often en-US hear the phrase, not everyone en-US needs to go to college. But en-US lets not go too far. A lot of it is en-US backlash en-US over the cost of en-US college these days. A lot of it is en-US from the mindset of folks who en-US just dont like those uppity en-US smart people. But the bottom en-US line is we must strive to make en-US sure every person has access en-US to the education they need to en-US become the best they can be, en-US which helps all of us.en-US ***en-US The Shoppes at One en-US Daytona got its anchor tenant en-US with Golds Gym planning to en-US open a second location at the en-US Shoppes at One Daytona at en-US 1808 W. en-USA-8 Ormond Beach/Daytona Beach/Holly Hill en-USIen-USts summer! And, for many, en-US that means vacation time! I en-US wanted to put together a few en-US tips and money-saving suggesen-US -en-US tions for my readers, so, if you en-US are planning a summer getaway, en-US read on!en-USCheck Early and Often. en-US When booking a flight to your en-US vacation destination, you en-US might want to start checking en-US the airlines early. Generally, en-US eight-weeks-out seems to be a en-US good starting point.en-US Unfortunately, you never en-US know if you are getting the en-US best deal now, or if fares will en-US go lower. Dont forget to check en-US multiple airlines and compare en-US airports, as well. You might be en-US surprised to find that fares are en-US considerably cheaper departen-US -en-US ing from one location versus en-US another. You can also use en-US discount travel websites to en-US book your flights, but my prefen-US-en-US erence is to book directly en-US through my airline of choice.en-US Your Cars Vacay. Parking at en-US an airport can be expensive! I en-US like the alternative of booking en-US an airport hotel that offers a en-US stay and park service. This en-US wont save you money over en-US parking without a hotel stay, en-US but you might find the peace en-US of mind, and convenience en-US (especially for early morning en-US flights), to be worth the cost.en-US Heres how it works. Book en-US an overnight accommodation en-US and let the reservation agent en-US know you want to park at the en-US facility while youre away en-US (theres usually a set number en-US of days your vehicle can en-US remain onsite). On the day of en-US your flight, the hotel shuttle en-US will drop you at the airline en-US terminal. When you return, en-US you can call the hotel for a en-US shuttle back to its parking lot. en-US Easy!en-US Home Away from Home. en-US Like my flight arrangements, I en-US prefer to directly book my en-US lodging as well. Often hotels en-US booked through their own en-US websites will guarantee the en-US lowest prices available. When en-US you make a reservation, dont en-US forget, members of organizaen-US -en-US tions like AAA or AARP are en-US sometimes eligible for lower en-US rates, and a category for en-US seniors has also been added en-US to some standard discount en-US lists. A property that doesnt en-US offer rate reductions may have en-US its own policy for rewarding en-US repeat guests. Ask! en-US Keep in mind, too, some en-US homeowners are now offering en-US private rooms, condos, en-US townhomes or residences as en-US vacation rentals. A popular en-US online site allows you to en-US search all available properties en-US and view photos, pricing and en-US reviews. The cost can be en-US substantially lower than a en-US traditional hotel. If you decide en-US to give this a try, read all the en-US reviews left by previous en-US vacationers. The more, the en-US better! Also, make sure you en-US are aware of special requireen-US -en-US ments and/or conditions en-US specified in the rental agreeen-US -en-US ment. en-US Coupon Clipping. Once en-US youve reached your destinaen-US -en-US tion, spend a few minutes en-US going through the magazines en-US and brochures at the registraen-US -en-US tion desk or pamphlets placed en-US in your roen-US om. Youll often find en-US a myriad of discount coupons en-US for outdoor adventures, en-US dining and entertainment. en-US Sometimes, all this effort to en-US save money seems like a lot of en-US work! However, if youre on a en-US budget, you could find you are en-US able to squeeze a little more en-US fun into your vacation by en-US saving few dollars along the en-US way!en-US David D. I first went en-US there as a single guy and then en-US a married one and later a en-US father of two and now a en-US grandfather of a boy and girl. en-US As you can see I have made it en-US a generational thing. en-US For an outdoorsman, it is en-US always a great place to visit. en-US The inlet lies about 15 miles en-US south of Melbourne on State en-US Road A1A and, as time en-US passed, I have watched it go en-US from a mostly unknown spot en-US to one of the states most en-US popular destinations. Back en-US when I first visited, there was en-US no state park and few amenien-US -en-US ties. Now there is a first class en-US campground, complete with en-US stores and nice bathrooms. en-US One thing that has always en-US been there is fish. At Sebastian en-US Inlet if you chose to wet a line, en-US you will catch fish. This year en-US was no exception. While my en-US wife, Lana, daughter, Shayla, en-US son, Landan, and grandkids, en-US Oliver and Delayna played in en-US the clear water, I went after en-US dinner. The inlet is one of en-US Floridas most famous snook en-US fishing holes, but I usually en-US target the red drum when I go en-US there because in the middle of en-US summer snook are out of en-US season. en-US By the way in a recent en-US column I misspoke. The daily en-US limit for snook is one per en-US person and not two. (Slow en-US down Dan!) This time I did en-US tie into a nice one to release en-US and had a great time doing it. en-US Under the small fishing pier en-US in the park lives some of the en-US fattest mangrove snapper you en-US will ever see. Some years back en-US I discovered those fish are en-US single minded in their dining en-US habits. They will only hit en-US mojarra minnows. Once I had en-US some netted, I knew I was in en-US for some fun and good eats en-US and pretty quickly had five en-US good ones, averaging about a en-US pound and a half. en-US With those on ice I took my en-US 17-foot Polar just outside the en-US inlet and turned south. The en-US Atlantic was so smooth I was en-US able to get in pretty close to en-US shore where I found pompano en-US hitting on shrimp. Once I had en-US four, I knew dinner was en-US secured and went back inside en-US to swim with my family.en-US Folks, pompano on a grill is en-US one of the very best things en-US Florida has to offer and this en-US summer more of you should en-US be at the beach catching them. en-US The best part is that at this en-US time of year your bait is right en-US under your feet. The sand en-US fleas at the waters edge are the en-US perfect bait for pompano. Do en-US yourself a favor and give that a en-US try. You might take along the en-US kids for digging sand fleas is a en-US great time for youngsters. en-US The next morning I went en-US wading for reds in the lagoon en-US just east of the boat ramps. en-US That is something I love to do en-US and have been at it for a long en-US time. I usually catch red fish en-US there, but seldom a large one. en-US Just being in that beautiful en-US setting and wading the clear en-US water is really enough for me, en-US but when I made a long cast en-US something sturdy took my jig en-US and set off for Vero Beach to en-US the south. The fish was big, en-US but still an over-achiever nearen-US -en-US ly spooling my reel. After 15 en-US minutes or so, I landed a en-US pretty 30-inch red drum. In en-US that clear water the fish had en-US little color and was mostly en-US silver. I paused to appreciate it en-US before releasing it to fight en-US another day. Good fun! en-US On the ride home, I had to en-US smile. Sebastian Inlet had en-US shown me a great time once en-US more. God willing, I will en-US surely return next year. en-US Dan Smith has fished the en-US waters of Volusia County for en-US more than 40 years. I cook en-US food the way I think it should en-US be cooked based on my en-US culinary training. Whats en-US nutrition got to do with it?en-US Then I realized here we go en-US again, another cooking trend I en-US need to know about. It seems en-US every few years the preparaen-US -en-US tion of food is affected by en-US societies eating habits.en-US Years ago we were told fat is en-US bad for us, so even-US eryone en-US wanted low fat foods. Unforen-US -en-US tunately sugar was used in low en-US fat foods to give it flavor. Then en-US we were told sugar was en-US horrible, too late, the great en-US majority of processed foods en-US have fructose corn syrup in it. en-US Then we were told dont eat en-US processed foods, eat fresh en-US organic foods. Someone forgot en-US to tell the farmers who tried to en-US convert to organic and the en-US fresh movement. Farmers en-US could not keep up. The price en-US of organic food products en-US doubled, making those items en-US un-affordable for many en-US families. en-US The demand for different en-US foods continued to grow with en-US the increase of individuals on en-US vegetarian and vegan diets. en-US Weve beenen-US told to cut down en-US on beef and eat more fish. The en-US trouble again is seafood is en-US expensive and not all of it is en-US sustainable so we have fish en-US farms expanding. en-US Oh, by the way, we are told en-US grass-fed beef is OK. Guess en-US what? All beef is grass fed, we en-US just decided to grain feed it to en-US get fat cows again. Chickens en-US should be free range, antibioten-US -en-US ic and GMO free. They also en-US should be treated more en-US humanely to help produce en-US healthier chicken products. en-US In the world of food, a great en-US many things are happening. It en-US seems to me the problem is en-US people. We left our past en-US traditions and changed things en-US too much. Now we are going en-US back to our past. We are en-US finding out fresh eggs off a en-US farm taste better, chickens en-US were always free range and en-US beef was always grass fed. We en-US were not supposed to catch all en-US the seafood possible, but to en-US always look to the future.en-US Now what is the best en-US cooking method for nutrition? en-US First, remember cooking food en-US improves digestion and en-US increases abortion of nutrien-US -en-US ents. We seem to be going en-US back to the simple methods of en-US cooking. Boiling can cause a en-US 50 percent loss of nutrients, so en-US steaming is a much better en-US method by using small en-US amounts of liquid.en-US Baking and roasting are en-US good also with little loss of en-US nutrients. Microwave cooking en-US is a nutritious way to cook as en-US well. Take your favorite en-US vegetables, cut up and place in en-US a plastic food-safe bag; season en-US and microwave several en-US minutes. This method works en-US well every time. en-US Stir fry also is considered en-US good. You are cooking at high en-US heat for a short period of time. en-US In general, cooking for shorter en-US periods of times at lower en-US temperatures with minimal en-US water is best, and dont forget en-US the liquid from cooking is en-US where the nutrients go, so en-US dont waste it. en-US Now I think its time for me en-US to hit the books again and get en-US ready for the next food trend en-US or maybe I should just get en-US some really old cookbooks en-US and study how we cooked en-US before we changed everything. en-US Here is a recipe and cooking en-US procedure that has not en-US changed in 75 years. Thank en-US you Ms. Ruth Wakefield.en-USToll House chocolate en-US chip cookiesen-USInen-US gredientsen-US 2 1/4 cups all-purpose flouren-US 1 teaspoon baking sodaen-US 1 teaspoon salt en-US1 cup (2 sticks) butter, en-US softeneden-US 3/4 cup granulated sugaren-US 3/4 cup packed brown sugaren-US 1 teaspoon vanilla extracten-US 2 large eggsen-US 2 cups (12-ounce pkg.) en-US NESTL TOLL HOUSE en-US Semi-Sweet Chocolate en-US Morselsen-US 1 cup chopped nutsen-US Directionsen-US Preheat oven to 375 F.en-US en-US Combine flour, baking soda en-US and salt in small bowl. Gradually beat in en-US flour mixture. Stir in morsels en-US and nuts. Drop by rounded en-US tablespoon onto ungreased en-US baking sheets. Bake for 9 to 11 en-US minutes or until golden en-US brown.
