en-USIt may not happen as quickly as many people en-US would like, but local leaders are excited about recen-US-en-US ommendations and plans to revitalize Volusia en-US Countys beachside area. en-US The Daytona Regional Chamber of Commerce en-US heard Thursday, July 12, about the Beachside Redeen-US -en-US velopment Committees recommendations at the en-US monthly Eggs & Issues breakfast program at LPGA en-US International. The committee has been meeting the en-US last year and is starting to present findings to local en-US governments. en-US Guest speaker Frank Molnar, managing partner of en-US The M Group and a committee member, reviewed en-US the groups findings for attendees. en-US Every recommendation we came up with en-US was unanimous, Mr. Molnar said. Really it en-US is getting everyone together and working on en-US the same page. At the end of the day we have en-US to create something in that area that is going en-US to give people a reason to go down there.en-US Mr. Molnar cited Wynwood Walls Art en-US District in Miami as the model to emulate. en-US If we can have something like that as a draw, then en-US we can have year-round restaurants and year-round en-US wine bars and art galleries and create a hub so it en-US would be a huge draw moving things in the right en-US directions.en-US There are great things happening on beachside. en-US The key is everyone working together. The chamber, en-US the city government, the county government, worken-US -en-US ing with developers. We are all moving in the right en-US direcen-US-en-US tion, Mr. Molnar en-US said. Anybody that witen-US -en-US nessed what that board did en-US would say that Daytona Beach en-US is the core of that, it is the cenen-US -en-US ter and its actually got the en-US worst problems on the en-US beachside. The City of Daytoen-US-en-US na needs to say lets move on en-US it and then it can be successen-US-en-US ful.en-USNen-USo doubt I do love my en-US adopted home, but en-US there are elements that en-US tend to bother me from time to en-US time. en-USRight about now I can tell en-US you I dont care for the en-US summer humidity. Back in en-US 1992 when I became a en-US permanent resident, I was lied en-US to. Friends and family told me en-US I would get used to it. I did not en-US and, as far as I can tell, my en-US blood didnt get any thinner en-US either. en-US I hate the beggars lice that en-US stick to my skin and clothes as en-US soon as I venture off a marked en-US path. Not good, but I hate the en-USsand spurs more. Those are en-US the sticky little nuggets that en-US have the ability to hide in your en-US carpet for months only to en-US strike as you stumble along en-US half asleep on a midnight en-US bathroom run. en-US I really dont like our giant en-US cockroaches. (I dont care for en-US the little German variety en-US either.) Oh, by the way, if you en-US are a transplant to the state en-US and refuse to believe you have en-US cockroaches, forget it. Those en-US big shiny things living under en-US your sink are not palmetto en-US bugs. Luckily they wont en-US actually hurt you. There are, en-US however, plenty other things en-US here that will. en-US It is easy to spot the new en-US arrivals to the Sunshine State. en-US They are always complaining en-US about the mosquitoes. More en-US than likely those poor en-US misguided souls have yet to en-US encounter the no-see-ums. en-US Florida mosquitoes are large en-US and stupid and easy to swat. en-US The no-see-ums will set your en-US skin ablaze and make you en-US wish for mosquitoes. Pilgrims en-US to our sub-tropical paradise en-US may call them sand gnats or en-US flying fleas, but no name is en-US sufficient to describe those en-US tiny bloodsuckers. Napalm en-US comes to mind. You may not en-US get that reference until you are en-US engulfed by a cloud of those en-US tiny flamethrowers. en-US In other states, if you pick en-US up a stick that has an ant on it, en-US you may suffer a sting. Here if en-US you get anywhere near a nest en-US of fire ants, you will be en-US partially consumed. There is en-US no such thing as coming in en-US contact with a fire ant and not en-US being bitten. Look for fire ants en-US under a pile of sand that en-US seems to have been refined en-US into some sort of gray powder. en-US Never try to stomp them or en-US spray them. RUN! Preferably en-US into the water. en-US Of course, our waters have en-US alligators. I dont dislike the en-US gators, but I do have a healthy en-US respect for them. Job loss. Whether you en-US were laid off, fired or downen-US -en-US sized, a job loss at age 62 or en-US older can be a significant en-US blow. I bet nothing is en-US in the right place. If its like my en-US home, you store food on any en-US empty space you find no en-US matter what it is. I am en-US constantly opening the door en-US and condiments come flying en-US off the door shelf or small en-US bottles are slipping between en-US the holders in the door and en-US open spaces in the bottom en-US rack and fall to the floor and en-US break. en-US And how about those en-US plastic containers that berries en-US come in? They never close en-US properly, and when they fall en-US on the floor berries roll en-US everywhere.en-US Get the picture? en-US Just for the record, there is a en-US proper procedure for storing en-US food safely. Yes, safely because en-US someone could get sick from en-US cross-contamination. I bet I en-US have your attention now!en-US Unfortunately household en-US refrigerators are not designed en-US like commercial units, which en-US have no door shelves or en-US vegetable crisper or egg en-US storage compartment in the en-US door. Instead, commercial en-US coolers have several open en-US shelves, which are adjustable. en-US Food must be stored in a en-US certain pattern to keep it safe, en-US which is different than what en-US we do at home. en-US On the top shelf, store en-US ready-to-eat food, produce, en-US dairy, cheese and cooked left en-US overs. The second shelf is for en-US fresh seafood (if you buy it en-US fresh), if not, keep it frozen en-US until time to use. The third en-US shelf is for raw ground meats en-US and the bottom shelf for raw en-US poultry. Eggs should stay in en-US the cartons they came in to en-US ensure freshness and safety.en-US Storing in this manner may en-US be difficult at times. Always en-US wrap food properly and store en-US in plastic bags or containers to en-US avoid the transfer of juices en-US from one food to another. en-US That is the key. Buy a good en-US refrigerator thermometer to en-US check temperatures so food is en-US in the safe zone of 41degrees en-US or lower. Oh, and those door en-US shelves buy some plastic en-US containers at the dollar stores en-US that fit in the shelf, that way en-US nothing will fall through the en-US bottom. Hope this all helps. en-US Now lets eat.en-USChicken Pasta en-US Primaveraen-USIngredientsen-US 1 package frozen vegetables en-US mix (broccoli, cauliflower, and en-US carrots). Thaw and cut into en-US half-inch pieces and set asideen-US 1 medium size red onion en-US peel and dice into inch en-US pieces and set asideen-US 2 cups mushroom cut in en-US half and set asideen-US 2 cloves garlic peeled and en-US cut small and set asideen-US 2 chicken breasts sliced into en-US strips. Keep in the refrigerator en-US until ready to cooken-US Directionsen-US Cook the chicken breasts in en-US the oven at 350 for several en-US minutes until they reach 165 en-US degrees or have no pink en-US inside.en-US In a saut pan, add 1 cup en-US of chicken stock, the vegetaen-US -en-US bles, mushrooms, onions, and en-US garlic. Cook over medium en-US heat for 2-3 minutes then add en-US the cooked chicken and set en-US aside. en-US In a sauce pan, place 2 en-US tablespoon vegetable oil, 2 en-US tablespoons butter, and 4 en-US tablespoons all-purpose flour. en-US Whisk together to make a en-US roux. Cook over medium heat en-US for 1-2 minutes.en-US Add one cup half and half en-US (optional) and 4 cups milk en-USslowly, whisking continuously en-US to remove all lumps. If roux is en-US too thick, a little more milk en-US may be added. Simmer for 3 en-US minutes and add cooked en-US vegetables, chicken and 1 en-US pound of your favorite cooked en-US pasta (I prefer bowtie) or en-US angel-hair pasta. Add cup en-US Parmesan cheese to mixture en-US or just top each dish. These days most en-US of us have a phone that will en-US pull up Florida fishing regs in en-US an instant. Thats great, but a en-US little personalen-US knowledge en-US would also be a big help to en-US keep us out of trouble with the en-US law. en-US Aside from our usual en-US catches, the Sunshine State has en-US plenty other species to liven en-US up our seafoen-US od take. Bay en-US scallop season is happening en-US right now and continues until en-US Sept. 24. Those are taken by en-US snorkeling in the warm, en-US shallow waters of the Gulf of en-US Mexico. My two preferred en-US spots are at Steinhatchee and en-US Crystal River. The daily limit en-US is 2 gallons per person. (If you en-US have not eaten scallops that en-US were caught that same day you en-US have not lived.) en-US The spiny lobster two-day en-US mini season is like a diving en-US holiday down in the Keys. en-US This year on July 25 and 26, en-US more than 30,000 divers or en-US snorkelers will descend on en-US south Florida to take part. The en-US limit is six per day per person. en-US A legal lobster must have a en-US carapace (back) of more than en-US 3 inches and you must have a en-US measuring device with you in en-US the water at all times. en-US Back when I was a regular en-US at the mini season I would en-US enjoy lobster and eggs for en-US breakfast, and steak and en-US lobster for dinner, and still en-US bring home 40 or so dependen-US -en-US ing on the size of my crew. en-US Locally deep water SCUBA en-US divers bring in fewer, but en-US always much larger ones than en-US are taken in the Keys. en-US I dont recommend you en-US taking oysters here, but we do en-US have more stone crabs than en-US most realize. That season runs en-US from Oct. 15 to May 15. Blue en-US crabs may be taken all year en-US and the limit is 10 gallons per en-US person per day. (Good luck en-US with that.) Shrimp also may en-US be caught all year and that en-US limit is five gallons per vessel en-US a day. (The shrimp are en-US running right now in Port en-US Orange.)en-US In Volusia, most of us seek en-US the more finny targets with en-US red drum at the top of our list. en-US We are allowed one red en-US between 18 and 27 inches to en-US be legal. My Louisiana en-US buddies always laugh when I en-US tell them that and ask: What en-US can a Cajun do with one en-US fish? I have no answer. en-US (They can keep five.) en-US State regulations for spotted en-US sea trout are four per day en-US locally with a length between en-US 15 and 20 inches. We do get to en-US keep one over 20, but my en-US Cajun friends are allowed 25 en-US per day, beginning at 12 en-US inches. That does not seem en-US fair does it? en-US Black drum must be en-US between 10 and 24 inches and en-US you may keep five. Snook en-US season will reopen Sept. 1 and en-US run to Dec. 16. There is a en-US small slot for snook and it is en-US between 28 and 32 inches. You en-US can take home two.
