There are times when any columnist has a time
trying to get enough interesting material to fill a
column much less a page but today your homemaking -
editor has so many things to tell you about that
the page will be quickly filled and running over.

For instance, we have heard of some very tasty
looking patty shells, new on the market, that will
make entertaining easy and well. These patty shells
are made by one of our famous bread companiesand
may be purchased at your market's frozen food
case. In approximately SO minutes after they come
from the freezer the hostess can fill these delight. I :
ful flaky shells with an appetizing seafood spe- j' y ya
cialty or other creamed food and serve.

Then too we have In the past few weeks given _
recipes and ideas for using all kinds of fish from
the length and breadth of the land-fresh, frozen
and canned but we have never discussed smoked
fish, a favorite in Florida homes throughout the
state.

Creamed, smoked fish on baked on boiled pota-
toes was a Sunday morning favorite at our house
when we were kids. Mother always prepared a
hearty Sunday breakfast for the family since it was
the only morning meal we ate with father. Sometimes
the fare included crisp, fried salt pork and
cream gravy on potatoes or creamed codfish gravyon
toast. Our favorite however was smoked fish In
cream sauce. We had it only occasionally since it
was considered a luxury item and very costly.

Today, smoked fish is not considered a luxury,
nor Is it too expensive since a little goes a long way.
In fact, we might say it goes three times as far as
some of our canned fish.

At Thanksgiving time we had occasion to become
acquainted with Mrs. Blanche Hays Fagen of
Causeway Dr. ,who knows pretty nearly all there is
to know about smoked fish and how to use it. This '
past week we contacted her for some ideas to pass W .
along to our readers. These recipes will be pleasant
changes from the regulation Lenten dishes. The
first of these is d )

CREAMED FISH

2 Tblsp.butter or cooking oil
