'Ship-shape' school focuses on marine education

S student Matt Taillon could have
caught a little more sleep had he
attended a high school closer to his
North Miami home.
Instead, for the past three years Taillon has
opted to make an early morning commute to Key
Biscayne where he attends the Maritime and
Science Technology Academy.
"It's been a challenge," said Taillon, 17. "I'
had to get up early every morning and put up
with traffic, but it's been worth it."
Come June 17 Taillon's driving days will
end when he and 98 other seniors graduate in a
ceremony aboard the Caribbean Cruiseline Nor-
dic Empress cruise ship at the Port of Miami.

It will be a fitting end to their years spent at
MAST, a Dade County public school that offers a
marine-themed education.
The seniors slated to receive their diplomas this
month will be the school's first graduating class,
said Linda Eads, academy principal.
"It's certainly going to be an auspicious occa-
sion," Eads said of the milestone ceremony. "We
feel like we have finally reached our port of call."
Since setting sail in 1991, MAST has proven to
be a popular alternative for students looking for a
different type of learning experience.
Outsiders are noticing the academy as well.
This year MAST received a Redbook Magazine
award for parent-community involvement, one of

four model schools in the country to be accorded
with the honor.
The academy was also one of seven schools
selected nationwide in 1993 for the Fourth An-
nual Business Week's Quality Schools of Choice
competition.
Upon entering the parking lot, visitors can
immediately tell that MAST is no ordinary high
school. The academy is located across the street
from the Miami Seaquarium, housed inside the
former site of Planet Ocean, a museum once
dedicated to sea lore, life and science.

Students reflect on education

STUDENTS
Continued from cover
Biscayne Bay was gutted and renovated
to accommodate the academy. Thd nautical
theme is evident everywhere, from the port-
hole windows that peek into classrooms to the
cabin sign hanging on the principal's office
door.

A 25-by-25 foot on-campus swimming
pool is in the works for the next school year,
when swimming, scuba and snorkeling les-
sons will be offered to students. Also this fall,
the academy plans to hold Saturday classes for
the community, Eads said.
Although MAST is a magnet school open
to all Dade County students, entry isn't easy.

About 500 students in grades nine to 12
are enrolled in the academy. For the upcoming
fall semester, the school has received more
than 600 applications. Only 150 will be se-
lected to join the freshman and sophomore
'classes, Eads said.

To be accepted, prospective students must
have a strong academic record, undergo a
personal interview and pass a testwhich deter-
mines problem solving, decision making and
leadership skills.

Those who successfully meet the criteria
are then entered into.a lottery, where a com-
puter picks names at random, she said.

Once accepted, rarely do students trans-
fer out. About 10 students a year do leave,
usually the result of a family move or because
they grow tired of waking at 5:30 a.m. to catch
a bus, Eads said.

Sometimes it's the course load that drives
them away. Unlike regular high schools,
MAST students must take an extra course

each semester, Eads said.
The school's core and elective classes are
wrapped around three majors: Marine Studies
and Culture; Oceanic and Atmospheric Sci-
ence Technology and Maritime Hospitality
and Industry Operations.

"The marine theme is incorporated into
everything we do," said Margaret Haun, di-
rectorof admissions. "For instance, in English
class students read sea novels like Moby Dick
and in math they learn navigation."
In addition, there are seagoing research
trips, internships and on-the-job training, plus
an extracurricular program that includes wa-
ter-based sports such as water polo, swim-
ming and crew. The academy also has the only
Coast Guard Junior ROTC in the nation, Haun
said.

Although MAST is a
magnet school open to all
Dade County students,
entry isn't easy.

Science teacher Betsy Henry said stu-
dents have made quite an impact on the sur-
rounding community. Among their projects,
findings from research conducted on Biscayne
Bay over the past four years have been used by
the Dade Department of Environmental Re-
sources Management.

"We're real proud of their accomplish-
ments," said Henry, who took several of her
science students on an oceanographic research
and snorkeling trip to the Dry Tortugas in
May.
Bill Price, a senior from South Miami,
said he doesn't regret choosing MAST over a
more conventional school.
"I've always been interested in the ocean
and when I found out about the academy, I

Nancy Moreland, a physical education instructor, gives students a run-down of the

day's class activities.
thought it presented a real interesting opportu-
nity," said Price, 18. "Yes, the courses here
have been more difficult, but it's prepared me
better for college."

Price plans to attend the University of
Florida in Gainesville this fall, where he will
major in zoology with the hopes of one day
becoming an ichthyologist, a branch of zool-
ogy that involves fish.
At least 95 percent of the senior class has
been accepted at colleges and universities, but
not all are pursuing marine careers.

Angie Fuday of Homestead plans on go-
ing to the University of Central Florida in
Orlando in September and major in pre-med.

"I've gotten a good science background
here," said Fuday, 18. "The classes are smaller
and the teachers are excellent."
Shannon Brill of Coral Gables, senior
class president and captain of the girls water
polo team, said there's so much about the

school that she's going to miss.
I've made friends with people from all the
over the county," said Brill, 17, who will be
attending the University of Vermont to major
in environmental engineering.
"I loved the chance to learn outdoors, by
the bay," she said. "Getting an education here
wasn't easy though. It's not as if everything
has been laid out for you. You have to work for
Thingss"
Cheron McKay, a sophomore, has al-
ready made future plans to become a marine
biologist. Being at MAST is giving her a step
up toward that goal, she said.

"The whole atmosphere is different," said
McKay, 15, of Miami Lakes. "Everyone is
more into learning than the latest trends."
Said Celestino Castillo, a 15-year-old
sophomore from Miami, who also has dreams
of being a marine biologist one day. "I feel
very secure here. I don't have to worry about
guns and gangs. Besides, after all this a regular
high school would seem boring."

UNUSUAL

HABITAT

Old army tanks on their way to

becoming artificial reefs will be on

display at this year's Ocean Expo

Story by Kevin Lawther

; call for old Army tanks to be cleaned and stripped before being sunk as artificial

Like an underwater scene from
an old James Bond movie,
South Florida divers will soon
be able to inspect real-life com-
bat Army tanks resting on the ocean floor.
With their gun barrels pointed skyward,
ten surplus Army tanks will be sunk as artifi-
cial reefs 50 feet in the ocean off Miami
Beach. The 48-ton, 30-foot-long, 12-foot-wide
tanks are the state's latest effort to create
artificial marine habitat.
Spectators can view the tanks before
they're sunk at Ocean Expo, an annual dive
and watersports show taking place at Miami's
Radisson Centre June I 1 and 12.
Three of the 10 tanks will be on display,
according to Tom Clark, project coordinator.
"We'll have all ten, but we can't really
display more than three because of their size,"

he said.
The state is supporting efforts by several
counties including Dade, Broward, Mon-
roe, Martin, Sarasota, Flagler and Escambia
- to acquire up to 100 of the 3,000 M-48 and
M-60 surplus tanks, some of which were used
in Korea and Vietnam. The tanks will be
transported by train from the Anniston Army
depot in Alabama before being deposited in
the Atlantic Ocean and the Gulf of Mexico in
Florida.
Dade will be the first Florida county to
receive the surplus tanks, said Clark who
expects worldwide media coverage of the
event.
"When the tanks are sunk, it will look like
they are sitting or going along the bottom of
the ocean," Clark said. "We're not going to
arrange them in a line or a circle they Will

reefs at this year's Ocean Expo.

The tanks are the latest
addition to Florida's un-
usual types of artificial
reefs, which include sunken
ships, a Rolls Royce and an
old jet airliner

kind of look like they arrived in the middle of
the night, with the guns fully raised. It should
make an interesting sight."
But first the aged artillery must be cleaned
and stripped of their engines, instruments,
paint and other fluids in preparation for sink-
ing. Workers will also weld metal bars across
the open hatch of the tanks to prevent divers

from entering and possibly becoming trapped
inside the tanks.
"Once we get one tank finished we'll get
an idea on how long it will take before all the
tanks are ready for sinking, Clark said.
Clark said he is trying to arrange for the
artillery to be stored on Watson Island across
from the Port of Miami so they can be seen by
the public from McArthur Causeway before
they're sunk.
The tanks are the latest addition to
Florida's unusual types of artificial reefs, which
include sunken ships, aRolls Royce and an old
jet airliner.
Clark said the tanks will provide an ideal
marine habitat, because their weight will keep
them them in place during storm surges.

Police officer starts computer
bulletin board for boaters

S someone from Honolulu is mov-
ing to Ocala and has questions
about the area's dive shops.
Meanwhile, a man from
Statesville, North Carolina, asks forthe names
of dive operations to contact while honey-
mooning in the Grand Bahamas.
A third party based in Fort Lauderdale
comes up with the answers to'both these
requests.
Despite being separated by thousands of
miles, computer buffs are able to get in touch
through The Hobby Line, a relatively new
computer network founded by Mike Dippel, a
Fort Lauderdale police officer.
Dippel started the network last August as
a means of offering fellow travelers on the
information highway a less expensive means
of talking with one another.

"My wife and I used to belong to a major,
well-known bulletin board, but after the user
rates increased it became too costly to use," he
said. "So we started one of our own."
Bulletin boards allow people to commu-
nicate with each other via a computer modem,
which is used to gain access into the system.
Anyone can talk or eavesdrop on The
Hobby Line, which is both IBM and Macintosh
compatible, for up to 30 minutes a day at no
charge. Users paying a $40 yearly member-
ship fee receive two hours of air time daily and
can advertise their servicesDippel said.
Those signing on can selectfrom 46.dif-
ferent topics or confereneegsas they are-
sometimes called including chess, avia-
tion, gardening and photography. This being
South Florida, Dippel felt it was only natural
he also offer water-related subjects.

phowo BETH FEINSTEIN-BURTI.
Mike Dippel, a Fort Lauderdale police officer, recently plugged water-related subjects
into his computer bulletin board.

A scuba diving conference was added in
February. A conference for boating enthusi-
asts was opened in April.
The boating conference offers access to
about 4000 users, most residing in Dade and
Broward counties.
Scubadiving, on the other hand, is tapped
into an established network that gives users
the potential of reaching about 500.000 fellow
enthusiasts world-wide, Dippel said.
Dippel's computer show s messages from
Honolulu, Statesville and Fort Lauderdale, as
well as one from Dallas, Texas, inquiring
about dive packages in Cozumel.
Most messages are supplied by Dippel,

who writes on a variety of marine subjects
ranging from upcoming boat shows to water-
front clean-ups.
"The boating conference is still new, but
it is gaining interest," he said.
Jan Dippel, a clerk with the city of Fort
Lauderdale utilities department, said talking
on the Hobby Line has become family project.
"Unfortunately, I can't use the computer
as much as I'd like to," said Jan Dippel, who
enjoys talking on the photography and crafts
conferences. "When my husband isn't logged
on, my two teenage children are."
Computer users with a communications
program can log onto the bulletin board ser-
vice by dialing (305) 966-2677.

;.v-: It's pretty
old and I'm
considering
changing to
something
More mod-
ern. I have a
28-foot boat
and not
much stor-
age space. What would you suggest?
J.N.,
Fort Lauderdale

A.: There are many different types of
heads to choose from, but you don't have the
room to fit most of them.
An electric or manual head could be
purchased in the $500 to $700 range. Another
somewhat less expensive option would be to
convert your current head into electric by
installing a conversion kit, but a holding
compartment would still be required. I rec-
ommend the new cherpical toilets. They take
care of everything, meaning they don't re-
quire a holding tank.
Q: I hear weird noises in my engine
when I'm running. Sometimes it's a
screeching; other times it's a whistling
noise. But it comes and goes. Can you clue
me in on what I should be looking for?
JK,
S Fort Lauderdale
A: When a person ails, he or she usu-
ally feels pain. The analogy also applies to
boats. Any noise means something is wrong.
Just as a doctor would try to locate the
source of the patient's pain, a good mechanic
should listen to the noise to identify the
culprit. A screeching noise could indicate
problem fan belts, orpulley bearings orglazed
belts on pulleys.
Whistling, on the other hand, points to
gasket leaks, bad valves or a problem with
mixture control. Examine the belts. Is the oil
going up to the valves?
So you see, every noise or vibration has
a meaning all its own. Find out the cause
before something happens.

Q: I can't believe how I was taken by
a marine mechanic whom I paid for a sloppy
repair job that had to be redone. When I
went back to the first mechanic to com-
plain, the guy was gone. I blame myself
because I didn't bother to check him out.
RN,
Hollywood
A: When bringing your boat in for re-
pairs, it's important to remember a few guide-
lines. First, ask the facility or shop to provide
credentials such as diplomas or certificates
from accredited schools. Second, request to be
put in touch with customers who have had
similarwork performed by the mechanic. Find
out if the shop has people on staff who special-
ize in your motor or boat type. If nothing else,
the mechanic will realize that you are a savvy
boat owner who won't take well to being
ripped off.
When choosing shops, it helps to belong
to a boating club where members exchange
such information as to which shops are good
and which should be avoided.
Q: The gauges on my dashboard are
erratic. I've checked the wiring and it seems
okay. Could it be the sender unit?
B.B.,
Fort Lauderdale
A: Unless the common ground is loose
or broken, not all the indicator lights would go
out at the same time because they all operate
on separate lines. Check the live leads from
the switches and the ground connections and
you will probably find the culprit.
Q: I came in to Haulover Inlet not
long ago and ran aground. Since then my
stuffing box leaks and the boat vibrates. A
diver found nothing wrong with my propel-
ler and struts, but still there is a problem.
S/ : S.H.,
Pompano
A: Haulover is a beaut. The sand washes
in and has to be dredged out often. When you
ran aground, you probably bent the shaft.
Check the angle and pitch of your propeller,
which could be-the cause of your vibration.
Also, a bent shaft could cause a leak in the
stuffing box.
I would have the boat hauled and then
have everything checked out.

Your Opinion

'She' is fine for boats or women

To the Editor:
I'd like to respond to Mr. Hackmeister's
letter to the editor in the May issue regarding
the use of "she" when speaking of vessels.
Mr. Hackmeister thinks calling a boat
"she" implies "weakness, frailty and fickle-
ness." Why does it not imply to him qualities
such as gracefulness, capability, kindness or
beauty?
Considering the preconceived ideas
women are up against in boating, Mr.

Hackmeister would do better to work on his
thought processes than to worry about tradi-
tional nautical terminology.
Should I, as a women, practice good
"seapersonship." Should I "person" as op-
posed to "man" the helm on the boat I am now
supposed to refer to as "it?"
No thanks. The words we use are fine.
The problem is his thinking.
Cindy Pool
Fort Lauderdale

Gender label describes 'majestic' vessels

To the Editor:
I am confused as to the nature of Dick
Hackmeister's objection to the commonly
adopted pronoun "she" in reference to sailing
vessels.
"She" is nothing more or less than a defi-
nition of gender. It's use in relatibn to ships,
cars, etc., in my opinion stretches that defini-
tion in a colourful and harmless way. What I
found less colourful and harmless was Mr.

Hackmeister's argument suggesting that we
should take offense to the use of"she" because
it implies "weakness, frailty and fickleness."
I am loathe to draw any parallels between
women and yachts, but in keeping with the
spirit of Mr. Hackmeister's argument, may I
counter his depressingly negative definition
with my own and suggest that when in full sail,
SHE has majesty, elegance and power!

'Deep six' term is no mystery to mariners

To the Editor:
Regarding columnist Dave William's
statement in the May issue's Sea Talk column
that the term "deep six" is of unknown origin:
While it may be true that the use of the expres-
sion as a slang term was introduced at some
unknown point in time, the term "deep six"
has been in use by mariners since the introduc-
tion of the use of the lead line to obtain
soundings. It is no more a mystery than the
prigin of Samuel Clemens' nom de plume.

The hand lead line is marked at 2, 3,5, 7,
10, 13, 15, 17 and 20 fathoms. When a depth
corresponds to any mark on the lead line it is
reported as: "By the mark 7," by the mark 10,"
etc. When the depth corresponds to any fathom
between the marks it is reported as "by the
deep 6," "by the deep 8," etc.
Hope this helps.

Additional facts are required on diesel fuel

To the Editor:
In reference to the new diesel fuel tax: I
think we need to look at the facts. For ex-
ample, what were the national standards for
diesel fuel in 1993, before all this mess about
leaking pumps and injectors. What are the
current national standards and who is setting
those standards.
I would like to see a chart created with the
properties and components of the fuel. It seems

to me (hat all this mess is focused on the sulfur
in the fuel, which can be found in certain
amounts in all diesel fuel.
This is a matter that needs to be dealt with
by everyone, from the consumer boater to the
refinery people. Until more facts are known, I
think all we can do is continue putting the fuel
in the fuel tank and the water in the water-tank.

Freed birds directed 18t century sailors to land
Freed birds directed 18th century sailors to land

By DAVID WILLIAMS
Waterfront News Columnist
In the early 18th century Norse vessels carried ravens in
their cages for practical reasons. When in doubt of the proper
direction to land, the ravens would be hoisted aloft and the
birds released. The captain of the vessel would then follow
their lead hopefully to shore. Hence the term crow's nest,
which refers to the lookout station located at the highest
possible point of the ship.
.Bootlegger: An old sea term for smuggler, usually asso-
ciated with the more recent days of prohibition. The term
initially came into use in the early 18th century to describe
sailors smuggling goods ashore in their sea boots.

*Coffee Grinder: A large vertical deck winch on a mod-
ern racing yacht operated by cranking opposing handles to turn
the winch. First in use in the 20th century, these winches are
said to resemble coffee grinders used in old coffee mills.

*Freeboard: The height of a vessel's side above the
waterline. Its origin can be traced to the early 14th century,
taken from the Anglo Saxon word, "frameboard," meaning the
board at the top end of the ship's frames.
Note: the term could also apply to that period of time when
your relatives have outstayed their welcome.

*Larboard: This is the original word used to refer to the
port or left side of a vessel. A product of the 12th century, the
term comes from the word "laddebord" for the loading side of
the vessel. Vessels were always loaded from this side because
the other side was equipped with a steering board or steering
oar which would not allow the vessel to lay up against the dock.

*Starboard: A popular term that describes the right side

Sea Talk

of any vessel when facing forward to the bows. First in use in
the 13th century when prior to the stern hung rudder, most
vessels had their steering oars on the right side of the boat. The
word is recognized in old northern languages and in Anglo
Saxon as "steorbord or "sterbord."

*Port: Now we come to the vessel's left side when facing
forward to the bows. Because of the risk of confusion between
larboardd" and "starboard the term "port" was officially desig-
nated by the British Navy as the left side of the vessel in 1844.
Two years later the U.S. Navy also adopted the term.

*Roaring Forties: Latitudes between 40 and 50 degrees
south, especially used in the eastern hemisphere. It is appropri-

ately named for the constant wind strength at these latitudes,
and can only be outdone by the wind strength below 50 degrees
south in the newly coined name, the "screaming fifties." Just
ask any Whitbread crew member why.
*Yawl: A sailboat rigged with a small mizzen sail aft of the
rudder post. Also, apparently, a southern word used when
addressing a group of people.

HIDDEN MARINA I

Dredging and expansion project P -
planned for Hollywood landmark .
Story by Beth Feinstein-Bartl

For years the Hollywood Ma-
rina has been a hidden jewel,
tucked away in a residential
area overlooking the
Intracoastal Waterway.
But for owners of large vessels, the pic-
ture perfect setting has been marred by navi-
gational problems getting in and out of the
marina, located at 700 Polk St.
Soon that will change. A recent $50,000
grant from the Florida Boating Improvement
Program will allow city officials to dredge and
expand the narrow channel.
City officials plan to begin the project

sometime this year, when the proper state and
federal permits are issued, said Renee Richards,
dockmaster.
For now, large powerboats and sailboats
can only enter and exit the marina's 50-foot
entrance at high tide. The city wants to expand
the entrance another 25 feet and install naviga-
tion lights, she said.
The dredging will also remove up to seven
feet of silt that has caused hazardous condi-
tions for boats getting in and out of slips, she
said.
Costs of the dredging and expansion
project is expected to reach about $750,000.

Completion will probably take several years, also applied for a $135,000 grant from the
depending on the grants the city is able to Florida Inland Navigation District. They

obtain, Richards said.
In addition to the $50,000, the city has

Local filmmaker seeks waterfront home for movie

By BETH FEINSTEIN-BARTL
Waterfront News Writer
Attention homeowners living on Fort Lauderdale's
Intracoastal Waterway: local movie producer Richard Tasse
wants to star your residence in his latest movie.
Tasse is searching for a two-story, modern-looking resi-
dence with a palatial interior, a pool or spa and a boat dock. The
dock is a must, he said.
His movie centers around Fort Lauderdale's wealthy
yachting lifestyle.
"Basically, I wrote the script as an excuse to feature my
own yacht," said Tasse of his 60-foot Pacemaker.
The comedy, to be titled All in the Same Boat, deals with
two young men from New York and two young women from
Chicago who move down to Fort Lauderdale. Each pretends to
be rich in hopes of attracting a well-to-do mate.
The film will be shot in July. Tasse is looking for a house
he can use for about eight hours over a two day period.
Although homeowners won't be paid, they will be able to
show offtheirhomes on the television screen, possibly through-
out the world, Tasse said.
Tasse hopes to snare Troy Donahue to star in the picture
as a real estate agent who lends the two young men his

filmed this summer.
waterfront home and boat so they.can pursue the two girls from
Chicago.
"'I talked to Mr. Donahue and he said it sounded interesting
and to send him a script," Tasse said. "I did and now I'm

waiting for his response."
Tasse expects to wrap up production of the movie in 30
days. When he's finished he intends to sell the finished product
to home video and television markets around the world.
Tasse is no newcomer to the industry. His first feature
film, a 1979 comedy-horror romp about a phantom haunting an
old movie theater, was sold to home video and television
markets in 30 countries.
His second movie, which he describes as the funny side of
car repossession, fared almost as well when it was made in
1991.
Neither of the flicks, which were shot in California, had
big name actors in leading roles. Rather, Tasse takes pride in
using a cast of unknowns and doing the background work -
writing, producing, directing and promoting himself.
Although his films may be done on a low budget, they
bring back a big return, he said.
"The first movie I did bought me my yacht," Tasse said.
Tasse makes no allusions to be another Steven Spielberg.
Forhim, film making is only a sideline. H is real career is selling
used cars.

Local film to be shot on Fort Lauderdale waterfront

FILM
Continued from page 11
"I make movies because that's always what I wanted to
do," said Tasse, who owns the Crown Car Company in Fort
Lauderdale.
His Hollyco Film Productions is also run out of the same
office.
Before coming to South Florida, Tasse owned a car lot and
renovated old buildings in California. He moved east after the
real estate market went flat, first to St. Petersburg in 1983 and
then to Fort Lauderdale in 1985.
"I left St. Petersburg because the pace was a bit too slow
for me," he said. "I came to Fort Lauderdale because I fell in
love with the city and its yachting lifestyle."

The city's waterfront will also be featured prominently in
the movie, said Tasse, who is now negotiating to shoot scenes
at two local waterfront restaurants.
"I want everyone to see how beautiful Fort Lauderdale is,"
he said.
Like his last two pictures, Tasse intends to shootA//lin the
Sante Boat on a low budget. He expects production costs to be
around $60,000. The movie will also use unknowns with the
exception of Donahue, provided the star accepts his offer, he
said.
Elizabeth Wentworth, director of the Broward Film and
Television Office, said although Tassc's movie isn't exactly
big league film making, it's still important to the county's
economy.
-"That's still $60,000 that's going to be spent in Broward,"

she said. "And, based on trickle down economics, the impact
of what he's spending will increase three to five times."
Over the years, Broward has become a popular spot for
filmmakers, mostly due to the waterfront scenery. All totaled,
movie, commercial and television productions have contrib-
uted $51 million to the economy, she said.
Tasse won't have the only cameras rolling in town come
this summer. Local locations are being scouted for a new Scan
Connery flick, Just Cause, slated to be shot sometime in July

Even though Wentworth has never heard of Tasse and

"There's a large market out there for these smallerproduc-

Fort Lauderdale eatery masters pizza to homemade pasta

By JENNIFER HEIT-ZIEGLER
Waterfront News Writer
It's the bread that first hooks you: a whole wheatfoccacia
with an olive oil and garlic bathed crust, the warm aromatic
round loaf straight from a wood burning stove.
All that's needed is a glass or two of Chianti and a green
salad. But II Mulino has much more to offer. Whether it's a
simple pizza you hungry for or the perfect pesto pasta, the east
Fort Lauderdale restaurant successfully pulls off both.
The place is wildly popular, partially because of its prox-
imity to the adjacent Gateway movie theater. The family-
owned business also includes the more upscale La Perla,
located a couple of doors away, and a third location in
Plantation also operating under the II Mulino name.

At the Sunrise Boulevard restaurant, diners will find a
causal atmosphere, better-than-average fare and professional
waiters and waitresses willing to spend a little extra time with
the customer, be -it bringing extra bread to the table or
explaining the way a particularly delicious sauce is created.
Also, expect to be offered fresh cracked black pepper and
grated Parmesan cheese.
II Mulino prides itself on its specials, which are varied
and innovative. Management is also adept at moving with the
times. Forexample, at lunch thefoccacia bread can be ordered
stuffed with grilled vegetables, a new menu item meant to
appeal to the fat conscious diner who needs to get back to
work quick.
As for vegetables, a special antipasto dish offered on a

recent weeknight made the most of the season's best. We
feasted on a platter of sliced grilled tomatoes, zucchini, squash
and hearts of palm a light olive oil dressing basting the
vegetables. It was excellent.
A heartier antipasto dish contains imported cheeses in-
cluding mozzarella, olives, tomato, mozzarella, roasted pep-
pers and anchovies ($5.95).
The lettuce-tomato-and black olive salads were also fresh
and prepared with a simple Italian house dressing.
Dinner specials change nightly. A pesto dish we sampled
centered around tortellini stuffed with portobello mushrooms,

surrounded by additional sliced mushrooms. A rich-dish
with lots and lots of flavor.
On the regular dinner menu, diners will find all the
Italian staples: shrimp scampi ($12.95), lasagna ($8.75),
veal marsala ($11.95); a herb-garnished grilled fish-of-the-
day paired with fettucine primavera ($13.95).
More out-of-the-ordinary entrees include a bacon-
wrapped filet mignon and shrimp dish with mushroom sauce
($15.95); linguini tossed with sauteed shrimp, shallots,
saffron and champagne ($12.95), and grilled chicken and

asparagus in a marinara sauce over pasta ($10.95).
The chicken parmigiana ($10.95) is made just the way
the dish should be chicken breast pounded near paper
thin, then lightly breaded and topped with real mozzarella
cheese.
The only d disappointment was the pasta primavera
($8.95) coated with an oil rather than a cream-based sauce,
which was okay, but somewhat bland.
Although we were too full to sample this ourselves, co-
workers who frequent the place recommend the designer
pizzas, especially the fiorentina version ($6.75), a sauce-less
creation with spinach, garlic, oil, mozzarella, pine nuts and
Gaeta olives, which our friends are now trying to recreate in
their own kitchen.
For dessert try the almond basket, which is filled with
ice cream and other good things. We advise sharing.
