Summertime boating
classes teach kids
the basics.

On a recent Saturday, the lake at
Quiet Waters Park in Deerfield
Beach was filled with small
dinghies piloted by kids.
Jenny Antweiler, 14. of Pompano Beach,
learned how to sail here six years ago. Now,
she returns every spring to help teach her
younger peers.
"Sometimes I invite my friends," she said.
"We have a really good time."
Antweiler and about 25 other young sail-
ors-in-training are enrolled in a spring boating
class for kids, conducted by the Hillsboro Inlet
Sailing Club.
The north Broward-based club is among
a handful of groups in South Florida offering
instruction to youngsters. Other private sail-
ing clubs have similar programs, but are only
open to members.
A few city parks also hold public pro-
grams.
"It's a shame more places don't hold
classes." said Dan Fitzgerald of Pompano
Beach, past commander of the Hillsboro Inlet
Sailing Club. "Unfortunately, a lot can't be-
cause they don't have insurance or enough
sailboats."
The club, which owns 12 dinghies and
has liability coverage, holds classes twice a
year. Their four-week spring course began in
mid April at Quiet Waters Park.
Another four-week class will be held in
September at the park. Registration starts in
August The costs free to members with a $25
fee required for non-members. Available slots
usually go quickly, Fitzgerald said.
The weekly lessons are limited to 25
children, ages 8 to 16. Younger children will
be admitted based on their maturity and swim-
ming skills. All participants, regardless of age,
must pass a water test, he said.
The club has been offering children's
sailing classes on and off for the past 15 years.
The program is run by members, who volun-
teer their expertise.
"We're not here to teach them how to be
Olympic class sailors," Fitzgerald said. "We
think it's important that the children learn
safety first. If they learn to sail, that's fine
too."
Said John Antweiler, Jenny's father and
one of the club's volunteer sailing teachers:
"Basically, we kick them out there and let
them teach themselves and coach them if they
need it. Our instruction is very informal."

son, Trevor, 7, in the spring class to learn
water safety because the family lives on a
Chinese junk. The course marked Trevor's

first time sailing on his own, Gibbs said.
"I think this is great," said Gibbs, who said he plans on
joining the club. "There are so few things for kids to do where
they can develop a sense of responsibility."
SaidclubmemberNicholas VonStaden ofPompanoBeach:
"The whole point of this is so that the kids can have their own
boat and make their own decisions."
VonStaden's daughter, Alexa, 6, deemed her first lesson
on the water "pretty easy."
"I like to go fast," she said.
Alice Rose, another student, is in her third year of sailing
classes with the club.
"You get to experiment with the boat," said Alice, 8, of
Fort Lauderdale. "If a kid is a beginner they go out with a kid
who has more experience. You get the hang of it after a while."
VonStaden said he hopes publicity from the Whitbread
Round the World Race, which is now on a stopover in Fort
Lauderdale, will encourage more parks and clubs to offer
sailing classes.
"There's going to be a lot of school children touring the
race village and there is going to be a lot of questions and
interest, but no place for them to go and learn," he said.

Up close
The Hillsboro Inlet Sailing Club offers children's sailing
classes twice a year. It's too late to sign up for the spring
classes, now in progress on Saturday afternoons through May
7 at Quiet Waters Park in Deerfield Beach.
Registration for September classes will start in August,
also to be held at the park, 6601 N. Powerline Road. Call Dan
Fitzgerald at 943-3151 for more information.
For parents who don't want to wait until fall, a sampling
of other sailing programs for kids in South Florida includes:

Bioward'
*Sailing lessons are offered as part of a summer camp program
run by the City of Lighthouse PointParks andRecreationDepartment.
The camp is open to kids ages to 15. The summer session will-
be held 8:30 a.m. to 3:30 p.m. weekdays, June 27 to July 29, at Dan
Witt Park, 4521 NE 22nd Ave. Registration will be held June 23 and
24. Fees are $50 for residents and $125 for non-residents.

Those signing up for sailing classes must pay an extra $25 in
addition to the registration fee. In order to take sailing lessons,
children must be enrolled in the summer camp program. Lessons will
be held in the afternoons at AlFletcherPark, at 31stAvenue and Cap's
Island.
Classes will be divided into age groups nine to 11, and 12 and
older. Basic instruction will be given, with a Mayor's Cup race at the
end of the summer.
The city has been offering sailing lessons to children since 1959.
Of 250 kids enrolled in the camping program, about 50 will sign up
for the boating classes, said John Trudel, Lighthouse Point city
recreation director.
The city also gives sailing instruction during the winter school
recess. Call 784-3439 for more information.
Dade County
*Shake-A-Leg, a non-profit organization offering boating pro-
grams to children and adults with physical and developmental dis-
abilities, will hold a Youth Water Sports Camp this summer, 2600 S.
Bayshore Drive in Coconut Grove.
Camp will meet 9:30 a.m. to 3:30 p.m. weekdays. Early drop-off


and late pick-up are available. Sessions will be held June 20 to June
24; June 27 to July 1; July 5 to July 8; July 11 to July 15.
Fees are $200 for one week; $380 for two weeks; $570 for three
weeks and $760 for four weeks.
Camp is integrated, meaning it is open to children ages 4 to 16
with and without disabilities. Activities will include sailing, arts and
crafts and games.
For parents unable to pay, scholarships are available for children
with disabilities. Call (305) 858-5550 for more information.
Palm Beach County
*Children's sailing classes will be held by the West Palm Beach
Parks and Recreation Department this summer at Lake Mangonia.
Sessions are open to youngsters in third to 12th grade, and will
be held June 20 to July 1; July 5 to July 15; and July 18 to July 29. All
participants must pass a swim test before being accepted to the
program. The cost is $40 per session for residents and $65 for non-
residents. Registration opens on May 31 at the Gaines Park and
Recreation Center, 1501 N. Australian Ave.

Local Whitbread event wraps up May 21

Racers embark on final leg to England


The grueling Whitbread Round the World Race resumes
May 21 at 12:15 p.m. when racers set off on the final 3,818-
mile leg journey from Fort Lauderdale to Southhampton,
England.
On-land vantage points to watch the start of the competi-
tion include John U. Lloyd Park in Hollywood and Fort
Lauderdale beach from Port Everglades to Gait Ocean Mile.
The 32,000 nautical mile trip has taken competing yachts
to Punta Del Este, Uruguay; Freemantle, Australia; and
Auckland, New Zealand.
As of this writing, the fleet was scheduled to begin arriving
April 24 at Port Everglades, where an old turning basin had
been renovated into an entertainment complex during the Fort
Lauderdale/Hollywood race stopover.
Crews from the yachts, who will be making repairs to their
vessels, will be on hand to discuss their sailing experiences
with the public.
Educational exhibits and lectures will be offered through-
out May. Admission to the Heineken Trophy Village is free.
Parking costs $1.

Fort Lauderdale dusts off its past.
A historic village is planned for the
city's Riverwalk area.

believe Fort
Lauderdale has its
own interesting past are working to re-
create a part of it near the city's down-
town Riverwalk district.
Members of the Fort Lauderdale
Historical Society are planning to open
a historic village complex along the


Florida East Coast Railroad tracks.
Plans call for closing off the 200 block
of Southwest Second Avenue, where the
society now leases from the city three
historic buildings built between 1905
and 1907.
The complex will feature a pedes-
trian mall where outdoor concerts will
be held, traditional craft demonstrations
and docents dressed in tur-of-the-
century costumes will greet visitors.
The three buildings, including


Broward County's oldest hotel, will
also be restored and opened to the
public.
Dan Hobby, executive director of
the historical society, said the project is
being performed in stages. He expects
to have all the leased buildings open by
1995.
"To have the street closed off and
create a pedestrian mall will take a bit
longer," he said.
The society is collecting private


donations and government grants to
help get the village underway. To date,
around $350,000 worth of cash and in-
kind services has been collected during
the $3.5 million fund-raising campaign,
Hobby said.
Plans for the village began after the
historical society was awarded a 20-year
lease to the three buildings in June of

A: This is no rip-off- it's just a matter
of safety, and economics. Would you really
want to risk losing a $25,000 boat for a $75
savings on a carburetor?
An automotive carburetor installed in
your boat could result in fuel leaks in the
bilge. Also, marine alternators are sealed
against external sparking while auto alterna-
tors are not. This same, philosophy applies to
distributors, fuel pumps, starters and sole-
noids. Marine parts have a built-in safety
factor that prevent fires from sparking, leak-
ing, and excessive vapors.
Q: I have a 12-horsepower Yanmar
diesel in my sailboat My fuel tank holds 20
gallons and I use diesel from my local marina.
My beef is the 20 cent per gallon tax I
will have to pay for this fuel. Can I use
automobile fuel in my Yanmar.

A: During the so called fuel shortage
we had a while back ago, I took diesel from
my motorsailer and used it for my diesel car.
No problems at all.
I'vereadreports giving the low down on
the diesel tax, such as the hazards of low
sulphur fuel and the additives that may be
required. I have received many calls and
questions on this controversial subject.
Q: My fuel tank is sealed in my boat and
it leaks. What can I do? J.O.,

A: Your best bet is to seek out a profes-
sional. If you must do the work yourself, be
very careful, as gas vapors are always present.
First off, the tank must be replaced at
once. Drain it completely and fill it with water
after sealing all lines to the tank. Most of these
tanks are sealed. See if the line can be re-
moved. If not, measure replacement before
cutting. Keep an extinguisher handy. Get a
good tank for replacement.

Q: When accelerating, I have a bad vi-
bration in my boat that lasts only a few min-
utes. It does the same thing when cutting
down. There's nothing tangled in the propel-
ler. What should I look for?

A: Check the motor while revving it
up or down. I would also look at the cutlass
bearing in the strut for looseness and wear
and tear. Finally, I would also take a closer
look at the propeller. Is the shaft loose?
There's lots of intangibles to consider.
Q.3 Contrary to your answer in last
month's Waterfront News to the person who
wondered about using motors on a cagoe, to
my knowledge both electric and very small
gasoline motors are used on canoes in the
northeast, where my home is located.
-Some are used on double-ended'canoes,
-but many are also used on square-backed
canoes.
Those square back canoes, I know, can be
purchased at L.L. Bean in Freeport, Maine.

A: My correction in last month's, issue
pertained to heavy motors, which should not
be used on canoes. A large motor will cause
an unbalanced shifting of weight that could
prove dangerous.
However, engines under 7.5 horsepower
should not cause a problem. Also, buying a
canoe with sponsons will help balance the
canoe and allow for a heavier engine. Even
so, a large motor is not a good idea.

Days before the arrival of the Whitbread
Round-the-World fleet, race organizers re-
ported having trouble maintaining the floating
docks that were installed at Port Everglades
for the occasion. The temporary docks started
to come apart due to boats speeding up and
down the Intracoastal Waterway in the area
adjacent to the old Tracer basin where the 14
sailing yachts are expected to stay.
SIt's a repeatperformance of the 1982 Fort
Lauderdale International Boat Show, when
boat wake destablized the floating docks. The
in-water show has not returned to the port
since.
SNew York City, Annapolis and Savan-
nah, among other envious U.S. ports, already


have indicated interest in serving as the next
North American stopover when the race re-
turns in 1998.
Little courtesy could go along way. It is
in every boater's best interest to respect speed
limits. Many other waterfront problems could
be solved by simply slowing down.
Now, mariners should make every effort
to avoid the ICW between the port and Dania
Cut-Off Canal until after May 21 when the
Whitbread fleet is scheduled to start on the
race's finalleg. As an extra measure,Whitbread
officials have hired off duty marine patrol
officers to police the area.
Boaters should come to the race village
by car and inspect the sailboats firsthand


'She' applies to women, not vessels


To the Editor:
SIt was interesting to read the recent story
in April's Waterfront News on how ships
have always been called "she." It was dis-
heartening, however, to see how timid the
writer is in his political incorrectness. For
example, he mentioned that he wasgjust kid-
ding)! (twice)!
"She," used as a personal pronoun for
boats, is ridiculous. Just as other sexist terms
such as "manhole," "chairman," "murderess
and "aviatrix" have been dropped from our
lexicon, "she" deserves the same fate.
Referring to vessels as "she" implies
weakness, frailty andfickleness. Boats surely
have all those attributes, but the parallel to
women, especially the capable women in


today's milieu, is totally inappropriate.
The invention of a neutral gender is one of
the marvels of our language, and contrasts
with, say, French or Spanish, inherently sexist
languages.
There are those'who would argue to retain
the female pronoun on the grounds of tradi-
tion. Colorful manners of speech from the
daysofyore,borrowed from Samuel Clemens,
Herman Melville orRichardHenrXDanamight
add readability to an otherwise dry article, but
consistently referring to vessels as "she"
doesn't hack it.

17th Street bridge idea proposed


To the Editor:
As a 12-year resident and yachtsman, I
would like to offer suggestions for the build-
ing of the new bridge proposed for the i7th
Street Causeway in Fort Lauderdale.
I feel that a 55-foot bridge is a great idea.
But if it's constructed solely of concrete, it is
certain to be extremely unattractive. As it is
now, the port is not very appealing when it's
not filled with cruise ships and commercial
vessels.
In Florence, Italy there is a bridge which
has shops and small bistros on its lower levels


and steps separating the east and west sec-
tions. Why couldn't such a plan be imple-
mented here?
If the city builds and owns the bridge, the
project could help pay for itself. The city has
spent plenty of our money on the beach and
Riverwalk projects, neither of which offer this
economic opportunity.
I think this is a suggestion that should be

If President Bill Clinton's "three strikes and you're out"
proposal seems harsh, consider the fate of erring sailors in the
17th century.
Known as keel-hauling, this cruel and usually lethal
sentence consisted of dragging a sailor from one side of a
vessel to the other, past the keel. The punished sailor would
usually drown from prolonged immersion, or get attacked by
sharks attracted to the area, or knocked out from the blows to
the head he received by striking the ship's bottom.
The custom is said to have originated in the Dutch Navy
and is derived from the Dutch term, kielhalem.
This form of punishment lasted almost 100 years in the
British and Dutch Navies. It was phased out early in the 18th
century and replaced by a somewhat less cruel punishment: a
whipping performed with cat-o'-nine-tails.
*Horse Latitudes: Refers to latitudes of about 30 to 35
degrees north and south of the equator in which winds are
sometimes light and variable. When vessels sailing in the
1800s had to lighten their load, horses on board were forced off
the ship. Their cries, it is said, could be heard for miles.
*Breeze: A light wind. This word demonstrates how
meanings can change over time. The word and its present
meaning were in use as early as the 17th century. However, the
earlier English word can be traced to mean "heavy wind," as
does the French word, brize, from which it's derived.
*Dead reckoning: Aprocedure of navigation, using course,
speed and time to estimate position. It was first noted in English
in the early 17th century and is a corruption of "deduced
reckoning."
*Deep six: This slang term, of unknown origin, refers to
throwing something overboard. First in use sometime in the
17th century.

*Son of a gun: In the 18th century, women were allowed
aboard some war ships, sometimes even while the vessel was
at sea. The mix of women and sailors was predictable and thus
the saying, "begat in the galley and born under a gun." For
boys, the name became "son of a gun."
*Posh: Swanky or luxurious. The term dates back to the
early 19th century. In the days of the liners which sailed from
England to India and the Orient, the most desirable and
expensive cabins were located on the portside outbound and
the starboard homebound, the shaded and cooler side of the
ship during the usually hot voyage. Hence, P.O.S.H., Port Out,
Starboard Home.
*S.O.S.: The old radio distress signal in common 20th
century usage when Morse code was the preferred method of
radio communication on board ships.
Some say it meant "save our ship," but it is more likely to
have been chosen because of the simplicity of the code... three
dots, three dashes, three dots.

Moore envisions Delevoe Park as an place where people can
spend lazy afternoons canoeing or listening to concerts broad-
cast from a new amphitheater.
But whether the county-run park at 2520 NW Sixth St. in
unincorporated Broward will offer such amenities is up to area
residents, said Jennifer Fields, a resource education manager
with the Broward County Department of Natural Resource
Protection.
The agency began taking comments last month from folks
who live and work along the New River's north fork in an
attempt to mobilize interest in bettering the waterways and the
surrounding northwest FortLauderdale neighborhoods.
Moore's suggestion about improving Delevoe Park was
made during an April 6 meeting between DNRP staff and area
residents. The gathering is the first of many get-togethers the
department plans to hold, Fields said.
Only six people attended the brainstorming session, even
though 125 invitations were sent out. But the department says
it's undeterred by the weak showing.
At Moore's urging, county employees will personally call
on homeowner associations and church groups to garner sup-
port, Fields said.
The agency initially began focusing attention on the area
in 1991, when samples taken from the north fork showed the
highest fecal bacteria count levels in Broward County, Fields

"We've been planning on working to find the sources of
the pollution with the help of the community, but we didn't get
the chance to work directly with the residents until the South
Florida Waterway Cleanup," Fields said.
During February's cleanup, about a dozen volunteers
pulled everything from tires to shopping carts from the north
fork's waters. Enough junk was gathered to fill a40 cubic-yard
Dumpster, Fields said.
DNRP staffers are willing to hold another cleanup, plant
trees or anything else residents feel would be useful in revital-
izing the area and ridding the river of pollution, Fields said.
The north fork neighborhood encompasses around three
square miles, bounded by Broward Boulevard to the south,
U.S. 441 on the west and Sunrise Boulevard on the north. The
Fort Lauderdale Swap Shop is the area's largest employer.
Water samples taken in October found that in certain
sections of the north fork, fecal bacteria count levels registered
almost 19 times higher than normal levels.


Steve Dennison, assistant environmental health director
with the Broward County Public Health Unit, said such high
bacteria levels can lead to diseases such as hepatitis and
Salmonella.
To avoid outbreaks, no swimming signs are posted in the
area and the health unit advises against eating seafood fished
from the area.
Since the October, study, the DNRP has pinpointed
several pollution sources and cited six companies for illegally
emptying toilets and dumping oil and grease into storm drains,
Frazel said.
"To have an environmental entity come into a predomi-
nately African-American community is very positive," Moore
said. "Most of the time our communities never get that kind of
attention."
Clarence Wright, president of the St. George Civic Asso-
ciation, said he also thinks its great the agency is willing to
work with residents on improving the area.
"Since the Waterway Cleanup, we haven't seen as much
trash," said Wright, who attended the meeting at DNRP head-
quarters. "If we keep it clean, then people won't be as inclined
to dump debris."

As we overfish our waters, removing sealife faster than
nature can replenish, many species are vanishing from the
ocean and the dinner table.
You won't find turtle steak on today's menu. Catfish are
now farm-raised and snook is replaced regularly from hatch-
ings produced in fisheries. And redfish, in demand as the
popular Cajun blackened fish, now needs human help to
survive, says Albert Jones, fishery biologist with the National
Marine Fisheries Service in Miami.
"The stock soon became depleted, and reds now are
restocked from hatcheries," Jones said.
Other dwindling species include Atlantic tuna, bluefin
tuna, swordfish, blue marlin, white marlin, skipjack, king
mackerel, Spanish mackerel, red snapper and many others.
As more residents visit the sun belt coupled with the
growing trend to eat seafood over red meat, local waters are
becoming depleted, causing concern for commercial fisher-
men, sports anglers and consumers.

Scientists are now studying the habits of dwindling fish,
their reproduction rate and their demand on land.
"Is the stock being depleted, maintaining itself, or grow-

ing for the benefit of future generations?" Jones said.
Supply is impacted by consumers who want the best catch
possible at the lowest price, commercial fishermen who have
an interest in keeping stocks plentiful for the future and sport
anglers who are finding less species.
In an effort to preserve the sport and the industry, in 1976
Congress enacted the Magnuson Fisheries and Marine Conser-
vation Act.

As more residents visit the sun
belt, fish stocks are becoming de-
pleted, causing concern for commer-
cial fishermen, sports anglers and
consumers.

Endangered species including marine mammals and fish-
eries in certain areas of the country are protected by the act.
The act also takes measures to prevent overfishing.
But nature doesn't answer to government regulations.
Some fish replenish themselves quickly while others are slow
to recycle, fishery officials say.
Currently, marine sanctuaries allow fish to reproduce
without impact from commercial or sports anglers.
"Already Ecuador and China produce some 50 million
pounds of farm-raised shrimp a year," Jones said. "Salmon are
ocean-farmed in Norway, Chile and Puget Sound."

The society is paying the city $1 a year to rent all four
structures and is responsible for restoration and upkeep,
Hobby said.
The school house and the 87-year-old King-Cromartie
House, at 229 SW Second-Ave., have been open for public
tours since June, 1993. Both have been decorated with
period furnishings.
The New River Inn, 231 SW Second Ave., a three-
story, 40-room hotel built in 1905, is slated to open in early
1995 and will house the society's museum exhibits. In
1972, it was the first property in the county to be placed on
the National Register of Historic Places. Before being
leased to the society, the Inn was the site of the original
Discovery Center, now the Museum of Discovery and
Science at 401 SW Second St.
The society's current location at 219 SW Second Ave.,
will be used for office and storage space.
No date has been set to open a fourth property, the
Philemon Bryan House at 227 SW Second Ave., to the
public. The residence, constructed in 1906, is currently
occupied by the Broward chapter of the American Institute
of Architects.
In return for using the house, the group is helping with

retail operation when the village is finished, Hobby said.

A replica of the original 1899 Fort Lauderdale
schoolhouse is now used for lectures and youth camps.
and running it will add to Riverwalk's growing list of
attractions.
"I think what they're doing in wonderful," he said. "It
will be one more reason for people to visit the area."
Riverwalk, in the heart of the city's arts and science
district, is already home to the Museum of Discovery and
Science and the Broward Theater for the Performing Arts.
The mile-long pedestrian pathway stretching along the
New River will also be the site of a retail and entertainment
complex slated for completion in November, 1995.
e Celeste Walther, director of marketing for the historical
society; said it's important the village be part of Riverwalk.
"Not only will Riverwalk help utlraw crowds, but
having the complex near the New River is of great historical
significance," she said.


Before the railroad was built in 1896, all visitors to Fort
Lauderdale arrived by boat, she said.
"Without the New River, there probably wouldn't be a
city," she said. "It was the main mode of transportation.
Even today, the river still plays an important role in the
recreation and marine industries."
Sue Gillis, historical society museum curator, said
Riverwalk and the surrounding streets were originally
known as Himmarshee Village, the site of the city's earliest
residential area. The city dubbed it a historic district in
1970.
The name got lost, however, after the city posted signs
proclaiming the area as the arts and science district. There
are no signs denoting it as an historic district, she said.
"Some of the city's oldest buildings are here," Gillis
said. "I hope the village complex lets people know that this
city does have a past. It wasn't all glass and steel skyscrap-
ers."

The Fort Lauderdale Historical Society Museum, at
219 SW Second Ave. in downtown Fort Lauderdale, is
open 10 a.m. to 4 p.m. Tuesday through Friday. On
exhibit through fall, 1994, is "Panorama of the Past," a
150-year chronological look at the development of
Broward County.
Admission is $2 for adults and $1 for children ages
15 and younger. Museum members are admitted free. A
yearly membership is $20 for individuals and $30 for
families.
Tours of the 1899 replica school house and the King-
Cromartie House are available by appointment only.

Vegetable couscous highlights summer meal

With the departure of winter tourists, May is a time
when Floridians breathe a welcome sigh of relief. The
beach is relatively empty, and to the delight of most
boaters, the Gulf Stream has flattened to a shimmering
calm.
This simple dinner with its light, fresh flavors is
perfect for the hot days and nights that remain ahead.
The meal begins with garlic-scented steamed
artichokes coupled with a spunky lemon butter sauce.
Grilled chicken, a colorful vegetable couscous and
steamed broccoli florets make for a light, simple meal.
For variety, add whatever vegetables you have on hand
to the couscous.
Close the dinner on a cool note with a refreshing
peach melba.
Steamed Artichokes
4 fresh artichokes
3 cups vegetable or chicken broth
2 whole cloves of garlic, peeled
The juice of one fresh lemon
4 tablespoons sweet butter, melted
4 to 8 drops of hot sauce
With a sharp knife, cut off the top third of the
artichoke, evening off the bottom stem so that the
artichoke sits straight Trim off any old or discolored
leaves and wash in cool water.
Add broth and garlic cloves to a large pot and bring
to a gentle boil over high heat. Place artichokes in a
steamer inside the pot. Cover, reduce heat to a simmer
and cook for about 50 minutes or until tender.
In a small bowl combine melted butter, lemon juice
and hot sauce to taste. Place the vegetable in individual
shallow bowls and spoon sauce on top of artichokes.
Serve immediately.
Makes four servings.

Sweet Soy-Grilled Chicken


2 whole, skinned and boneless chicken breasts
1/2 cup soy sauce
1/4 cup brown sugar
In a small bowl, stir brown sugar and soy sauce together
until the sugar is completely dissolved. Cut each chicken
breast in half and place in shallow dish. Pour marinade over
chicken and refrigerate for at least two hours.
Grill chicken over medium high heat, occasionally basting
with freshly prepared marinade (for food safety, do not use
marinade that contained raw chicken). Be sure to turn chicken
frequently since the sugar in the sauce browns quickly.
Grill until golden brown and cooked through, usually
about 15 minutes depending on the thickness of the meat.
Keep warm.

Makes four servings.
Vegetable Couscous
2 cups chicken broth
1 cup couscous
1 tablespoon olive oil
1/3 cup of coarsely chopped zucchini, summer squash and
mushrooms
1/4 cup of thickly chopped yellow pepper
2 plum tomatoes, seeded and chopped
2 tablespoons fresh parsley
In a medium skillet, heat oil over medium heat. Add
zucchini, summer squash, mushrooms and yellow pepper.
Saute for five minutes. Add tomatoes and parsley and saute
for three more minutes. Set mixture aside.
Meanwhile, heat the chicken broth in a small saucepan
until it comes to a boil. Remove the pan from the heat and
stir in couscous. Cover and let rest for five minutes. Fluff
couscous with a fork. Combine vegetables and couscous.
Makes four large servings.
No Fuss Peach Melba
1 pint vanilla ice cream or frozen yogurt
2 ripe peaches, peeled and cut into slices or one small can
of peaches in light syrup
1 pint fresh raspberries
*4 tablespoons raspberry syrup
Place two scoops of ice cream or yogurt into glass
goblets or decorative bowls. Top with fruit. Drizzle with
syrup or liquor. Garnish with elegant cookies.
*Raspberry syrup is located next to maple syrup in
grocery stores.

Waterfront News Diving Writer
A strange-looking vessel docked in a
marina on 17th Street has received mixed
reviews, with passersby likening it to every-
thing from an offshore oil platform to a
floating high-rise condo.
Few call it what it actually is a small
waterplane area twin hull, or SWATH for
short.
Christened Nekton Pilot, the vessel is
only one of about two dozen of its type in the
world. And now it's the first SWATH to be
used for recreational diving.
Three stories high, the boat sits on top of
two large torpedo-shaped pontoons, a design
similar to offshore oil platforms.


In May, the 78-foot vessel will begin
transporting divers for week-long trips from
Fort Lauderdale to the Bahamas.
Among the featured destinations are: San
Salvador, Andros, Cay Sal Bank, the Exumas
and Gingerbread Grounds.
The boat is not designed for speed, cruis-
ing only at seven to 10 knots. Most of the
traveling is done at night.
But passengers prone to sea sickness will
enjoy the vessel's rock-smooth ride.
At sea, the pontoons fill with water, sub-
merged about 10 feet below the surface. The
pontoons act as stabilizers.

'Turtle Lady weeks to continue work with eptil

Eleanor Fletcher has championed the welfare of endan-
gered turtles for over 25 years.
But in January, Fletcher, affectionately nicknamed the
"Turtle Lady," was forced to cease her work with sea turtles
when the state refused.to renew a license that allows her to
handle the endangered species.
Officials from the Florida Department of Environmental
Protection said Fletcher violated environmental regulations
that include failing to follow state guidelines for releasing
hatchlings, unauthorized excavation of hatchlings, releasing
young turtles in daylight, and failing to submit reports on
strandings.
"Mrs. Fletcher was involved in a number of incidents
where what she was doing with the turtles was not authorized
on her permit," said David Arnold, biological administrator
with the DEP.
Fletcher scoffs at the charges.
"They want me off the beach because my experience
shows them up," she said. "I've educated thousands of people,
children and professionals from all over the world with my
turtle watches."
Fletcher describes herself as a "self-taught sea turtle
expert," who also received training by the state's first expert,
biologist Ross Witham.
In 1983 she founded the Children's Museum of Juno
Beach in Loggerhead Park, which is now known as .the
Marinelife Center, where turtle care and public education
continues today.
Despite letters and appeals from supporters, the DEP has
upheld their decision not to renew her permit.
A California environmental group known as the Crusad-
ers has recently begun a petition drive to have Fletcher rein-
stated.
Arnold says he would like to see Fletcher continue her

For 25 years, Eleanor Fletcher has tried to help endan-
gered sea turtles by educating the public to their plight.

"I have recommended that if Mrs. Fletcher is interested in
marine turtle conservation, then we should find a way to work
out an arrangement with her," Arnold said.
Fletcherhas been conducting "turtle watches" since 1972.
In her Juno Beach home, she has shown students videos and
slides of the endangered reptiles and has brought groups out to
the beach to watch the female sea turtles lay eggs,.
Despite the loss of her permit, Fletcher says she will


continue to help educate others to the plight of endangered
turtles.
"I shall always be child-like and always ask why some-
thing happens. I learned that lesson from my children."



Sea turtle festival

planned in Juno Beach
As turtles begin making theirannual pilgrimage toPalm
Beach County's shores, the Marinelife Center of Juno Beach
will celebrate the start of nesting season with a Sea Turtle
Awareness Day Festival on May 7.
The festival will be held at the Marinelife Center in
Loggerhead Park, off U.S. 1, north of Donald Ross Road in
Juno Beach.
"This is going to be a family affair with a special focus
on the kids," said Larry Wood, director of the center.
There will demonstrations by natureand wildlife groups
in addition to slide shows presented by professional under-
sea photographers, guided tours of the center, environmental
exhibits, storytelling, musical entertainment food and craft
displays.
Each year the Marinelife Center surveys a stretch of
beach from McCarthur Beach State Park to the Jupiter Reef
Club for turtle nests.
Nesting season takes place from May to October.
"We've already seen tremendous nesting and if the
green turtles follow the same nesting pattern that has oc-
