CHOOSING A MECHANIC


Few laws govern boat repair shops

Year after year, Verne Kelley brought
his 1978, 32-foot Pacemaker Sport Fisher-
man to the one mechanic he had come to
count on for repairs and maintenance.
"I really liked the guy," said Kelley, a
Fort Lauderdale Power Squadron member
who sold his boat last month. "We even
became good friends. But I don't know to this
day whether I was being taken or whether he
was making an honest effort."
And that'spartof the problem, saidEmrie
Braatz,editorof Seaworthy, a quarterly news-
letter published by the Boat Owners Associa-
tion of the United States (BOAT/U.S.).
In Florida, and most other states, there
are few consumer protection laws covering
boat repair shops and independent mechan-
ics, he said.
"It's become an unregulated, uncon-
trolled area nationwide," he said. "Almost
anyone can gather up some tools and go to
work."
Braatz himself became quite familiar
with the subject from researching an article
for his publication's October issue on how to
choose a repairer.
"We got the idea to do the story after
hearing from a lot of Hurricane Andrew vic-
tims, who were trying to find reliable me-
chanics," he said.-
His best advice to boat owners is to ask
plenty of questions before any work is done.
"Basically, it's buyer beware, so people
need to be educated," Braatz said.

tigator with the Palm Beach County Division
of Consumer Affairs.
For example, automobile repair shops
are required by Florida law to be registered
with both the state and county, and must
provide customers with written repair esti-
mates before any work can take place.
But the same state regulations do not
apply to boat repair shops, Hitt said.
Nor do any county ordinances exist to
protect consumers in Broward and Palm
Beach counties.

Dade County, however, requires marine
repair shops to issue written estimates. But
the ordinance only applies if the boat is less
than 16 feet long and if the cost of repairs
exceeds $50, said Leonard Elias, a consumer
advocate for the Dade County Consumer
Protection and Advocate Division.
The Dade ordinance is an old one, writ-
ten in 1971. Why it does not cover larger
boats is unknown, county officials say.
Even though there's few consumer laws
on the books, boaters can still demand fair


"If there's no rule saying they have to
give you a written estimate, it doesn't mean
you can't ask for one on your own," he said.
Hitt and other consumer advocates don't
know why boat repairs aren't regulated, espe-
cially in South Florida where the marine in-
dustry is a multi-billion business.
One reason might be that few boat own-
ers complain.
A three-month survey conducted by the
Broward County Affairs Division showed
problems with automobile mechanics were
the number one consumer complaint, said
Lelia Roberts, supervisor of the consumer
protection section.
The division logged 774 automobile re-
pair complaints in December, 1993. By com-
parison, marine mechanics ranked on the low
end of the survey, with only two complaints
logged for the months of October through
December, she said.
Spokespeople with consumer affairs di-
visions in Dade and Palm Beach counties also
report low numbers of complaints from boat
owners.
"But that doesn't mean there isn't a prob-
lem," said Hitt, who is working on mediating
a case where a boater was given a repair
estimate for several hundred dollars, then
handed a bill for several thousand.
"It could mean either the boaters are
handling things themselves or accepting the
situation," he said.

Planning a winning strategy


Boat owners should be very selective in choosing a repair
shop. Part of that process is knowing the proper questions to
ask, according to BOAT/U.S.

Experts at the national boat owners association offer the
following suggestions:

*Ask if the company specializes on a particular make
boat. A facility thatperforms mostly routine maintenance isn't
always equipped to do structural repairs, while a yard that
caters to million-dollar yachts may not be the best facility to
service a 26-foot family cruiser.

*Find out what factory schools or training seminars the
staff has attended. How recently was staff trained? How long
have they worked for the company?

*Look for the presence of certificates as evidence of
courses completed. Are key people licensed, insured or bonded?
What major jobs have they completed in the last year?

*A local facility should be your first choice. But if you're
forced to use a distant shop, be sure to ask if the out-of-town
facility will absorb the transportation charges and if they will
come to your boat to give an estimate first.

*Mobile repairers who come to you can be a good choice,
especially since they eliminate the inconvenience of waiting
for space in a busy yard, plus you avoid moving or towing the


boat and paying for hauling and storage charges. But check
out prospects carefully with dock masters, marine insurance
agents and marine surveyors. Ask for references from recent
clients and whether they are bonded or insured.

Regulations:
If you're searching for state regulations regarding boat
repairs, don't bother. Florida doesn't have any.

Marine repair shops are not covered by the same rules
applying to automobile mechanics, who are required by.state
law to be registered and give customers a written estimate
before work is done, said Leila Roberts, supervisor of the
consumer protection section at the Broward County Con-
sumer Affairs Division.

If, however, you feel you've been treated unfairly, boat
owners can contact the nearest consumer affairs division,
which will try to mediate a solution with the repairer, Roberts
said.

Consumers are advised to take the matter to small claims
court if the repairer does not cooperate, she said.

lack of complaints speaks very highly for boat repair shops in
South Florida.

"Obviously, the mechanics are doing what they should
be doing," he said. "Why regulate something when there's
not a need."
Many boat repair shop owners said they try hard to play
by the rules. But even they agree that boaters must use care
when selecting a repairer to avoid unscrupulous shops.

Bill Abell, owner of Hurricane Harbor Yacht Service in
Dania, said boat owners should seek out established busi-
nesses.
"You want to look for a place that has made an invest-


ment in itself," said Abell, whose shop has been operating for
nearly 14 years.

Beware of bargains and make sure the mechanics carry
certificates from training programs sponsored by various boat
manufacturers, advises Cleve Jones, whose family-run busi-
ness,Jones Boat Yard, has operated on the Miami River for 72
years.
Not everyone has an office. There are plenty of indepen-
dent mechanics with excellent reputations working at South
Florida marinas. But new clients unfamiliar with their work
should get references first, Herhold said.
Dick Kempthorne, commander of the U.S. Coast Guard
Auxiliary Flotilla 32 in Fort Lauderdale, said he's heard many
complaints from those who have had bad experiences with
boat repairs.
His advice: Learn to do the repairs yourself.

SEARCHING FOR SHELLS

Florida's exotic species draw collectors to age-old hobby

Visit almost.any beach in Florida and most likely you'll '
find people searching for shells, a popular past time for nearly .
everyone who has ever set foot on the state's shoreline.
So many different types of shells exist here -both on and :
off-shore that no one can give an exact count.
"There are literally thousands of species and new ones are ,.
being discovered by scientists all the time," said Charles
Aronson of Fort Lauderdale, president of the Broward Shell .. "
Club.
The 32-year-old, 200-member group is one of several
clubs in South Florida that promote the hobby through monthly
meetings, frequent shelling trips and by hosting annual shows, ;. ..
bazaars and auctions open to the public. '
In January, members from the Broward Shell Club dis- :
played their prized collections at the club's 29th annual shell
show

For those who missed the exhibition, the club will be
holding one of its twice-yearly bazaars, 10 a.m. to 3 p.m. March
12 at the Pompano Beach Recreation Center, 1801 NE Sixth St.
Visitors will be able to purchase shells and shell-related
items exhibited by about 60 vendors. Admission is free,
Aronson said.
Carolyn Harrison, a retiree from Pompano Beach, plans
on hawking her wares at the event Among the shell-encrusted
crafts she makes at home are floral arrangements, pictures,
wreaths, Christmas ornaments, mirrors and animals.
Harrison has been a member of the Broward Shell Club for
more than 20 years. Her interest in the hobby was piqued after
watching her sister, also a shell collector, comb the beach one
weekend in the Florida Keys.
"I became hooked after that," Harrison said. "Later, I met
a woman in Marathon who was into shell craft and I started

According to Phyllis Diegel, vice president of the
Palm Beach Shell Club, beach combers can follow this
simple cleaning procedure at home to help preserve
and bring out the exterior colors in their collections:
First rinse the shells in tap water, then place in a
weak bleach solution for around 10 minutes. Next,
remove shells and let them soak in clear water for 10
more minutes.
Leave the shells out to dry. Once dried, rub a
mixture of one part mineral oil and three parts lighter
fluid on the shells. Let dry again and display.

Faulty bilge pump can run down battery

,.JW. Q.: This is re-
ally bugging me.

less than a year old,
keeps running
down. I brought it
back to the store
S and they found
._ nothing wrong
with it.

A.: I would in-
stall another battery (I always advise two
batteries in every boat with a switch over). If
that goes down, there's obviously a drain
coming from some where. If your gage didn't
show it, it's probably the bilge pump that's
causing the problem.


Q.: I am getting green corrosion from
my engine. It seems to leak only when it's
hot. I think the antifreeze from my fresh
water system could be causing the corro-
sion. How do I repair the leak before it gets
worse?

A.: To repair the leak, the cylinder head
must be removed and a new gasket installed.
Check the head for warping and examine the
block to be sure it is level and not scored. To
find out if other leaks exist, you should per-
form a pressure test on the fresh water system.

Q.: My outboard engine is constantly
fouling my plugs. I've tried additives in the
oil, but that didn't help. My compression
checks out and the engine runs fine until the
plugs foul up. The engine smokes until it


gets hot and then it stops. Any suggestions?

A: Adding additives to your gas mixture
only compounds the problem. Too much oil in
your fuel mixture will cause fouling of plugs.
Check your manual and add oil to your tank at
intervals recommended by the manufacturer.
You can also try installing hot spark plugs
to try to burn off some of the oil residue. Not
knowing how old you motor is, I can't predict
how worn the motor rings and internal parts
might be.

Q.: Lately, the engine on my boat stalls
out Pumping the throttle helps start it
again. A mechanic recommends a new car-
buretor, but I hate to spend all that money.

West Indian sailors named evil spirit of the sea

Ever wonder how some everyday words
originated? Here's a list of common nautical
terms and an explanation on how they were
derived. -
Bollard: A strong vertical post to which
ropes are secured, both aboard ship and on
shore. The term was first noted in the 13th
century and in all likelihood came from an old
Norse word "bols," meaning tree trunk.
Catamaran: This is any two-hulledcraft.
The exact origin of the concept is not known,


but probably dates back at least a few centu-
ries. The word is believed to derive from
Tamil (east Indian) "Kattamaram."
Davy Jones Locker: This term refers to
the bottom of the sea, Davy being the legend-
ary evil spirit, named for Devil Jonah, or
possibly Duffy Jonah, since duffy is the Brit-
ish west Indian word for devil. He is believed
to have been conjured up by west Indian
sailors in the 17th or 18th century.
Regatta: Coming into use in the late 17th
or early 18th century, regatta is thought to be
corruption of the Italian termrigattare, which


means to wrangle, and also from the Spanish
regatear, meaning to hassle. No comment.
Spinnaker: A large racing sail for mod-
em yachts. First in use in the 19th century, the
word is probably a corruption of"sphinx," the
name of a mid 19th century British schooner
yacht that carried such a sail.
Tiller: A bar which serves as a lever to
turn the rudder. The term is from the 15th
century and is sometimes spelled"tillar," simi-
lar to the English word "telian," Anglo-Norse
for the arm or lever on a steering oar.

Waterfront property owner's rights overlooked by state


To the Editor:
There is a long, ongoing controversy
among boat owners, the boating industry,
manatee protection groups, business people
and homeowners over the boater'sbasic rights
to use Florida's waterways
In January, a House sub-committee ap-
proved a measure (HB 109) called the "boat-
ers bill of rights," which seems to neglect the
rights of the most involved group of people -
the waterfront property owners and the busi-


nesses that have the largest investments and
pay the highest taxes. We also have a right to
live and enjoy our waterfront homes and prop-
erty and should be entitled to a"bill of rights."
Boaters should be able to use the state's
navigable waters, but their rights end when the
impinge on the rights of the majority.
As much as we hate regulation, we ask on
behalf of the health, welfare and safety of
hundreds of thousands ofwaterfrontresidents,
as wells the manatee, that an enforceable and


workable speed, noise and wake law be passed
to protect the heavily populated areas of
Florida's waterways.

A.: It may be possible to repair or adjust
your carburetor without replacing the whole
unit. Your carburetor has an built in accelera-
tion pump that delivers a jet of gas when you
advance the throttle. The rod that does this
could have disconnected.
If the cup inside the carburetor cylinder is
torn or bad, a new plunger can be installed by
your mechanic. You can also buy a carburetor
kit in most marine and auto stores. If you're
handy, it's not too difficult a job.

There's the Challenger space shuttle, the Florida pan-
ther, manatees and other assorted logos for state colleges
and veterans groups.
Now, a group of environmentalists in the Florida Keys
are working to add one more to the state's growing ranks of
specialty license plate a plate with a coral reef design.
Monies derived from the plate's sale will help fund a
water quality protection plan for the Florida Keys National
Marine Sanctuary.
A petition drive was started in January by the Coral
Reef Coalition, with help from Reef Relief and the Wilder-
ness Society. At least 8,500 signatures of licensed Florida
drivers are needed toconvinceFloridalegislators thatenough
people are interested in purchasing the coral reef plate, said

Florida drivers now have 33 specialty license plates to
choose from.
Group organizers will be collecting signatures through
the end of March to meet the deadline for their cause to be
considered during the current legislative session. So far, the
coalition has collected 3,000 signatures, Quirolo said.
"We have petitions circulating throughout the state, but
the most interest seems to be coming from people in the
Keys," she said.

New mooring buoys to be added to the county's coastline

System helps protect Florida's endangered coral reefs

Those blue and white striped balls will be floating in more
spots off Broward 's coastline come this spring.
Otherwise known as mooring buoys, they allow boaters to
tie up without dropping anchor on fragile coral reefs located on
the ocean floor, said DJ. Meeks, program director at the Fort
Lauderdale-based Ocean Watch Foundation.
The non-profit group, whose main goal is to preserve
Broward's reef system, have been placing buoys at sites around
the county since 1989.
Anchoring is believed to harm the reefs by disturbing coral
and other sealife, marine officials say. The buoys offer an option
to anchoring.
To date, the organization has installed 50 buoys at Barra-
cuda Reef off John U. Lloyd State Park in Hollywood and the
Copenhagen wreck site off Pompano Beach.
Now, thegroupintends to place morebuoys at both sites and
to expand to other areas, Meeks said.
A $28,000 state grant from the Florida Boating Improve-
ment Program will help pay for the project.
Over 80 eye bolts, steel anchoring devices that hold the
buoys in place, were secured this fall in several underway
locations, including the Barracuda and Copenhagen wreck sites,
near Anglin's Pier in Lauderdale-By-The Sea and at Oakland
Ridges off Northeast 18th Avenue in Fort Lauderdale.
Other sites included the Caves, situated one mile north of
PortEverglades and Twin Ledges, located 1,000 feet westof the
Caves.
A diving firm was contracted in December to tag and
number the bolts, the final step before installing the buoys,
Meeks said.
But rough ocean conditions due to the cold winter weather
could delay the project, Meeks said.
"We're hoping to have everything done this spring, when
we'll begin to have the first 30 buoys in place," she said.
Four buoys will be installed at Barracuda Reef and another
nine at the Copenhagen wreck site. The remaining floating balls

David Stout, a coastal engineer with the Broward County
Department of Natural Resource Protection's, Marine Resource
Section, said his office is very pleased with Ocean Watch's
environmental efforts.
Buoy systems have proven valuable in protecting the reefs
from anchor damage, a study performed by Nova University's
Oceanographic Center in Fort Lauderdale says.
Coral reefs extend the entire length of Broward's 24-mile
coastline. Without them, there would be no sealife, Stout said.
"The reefs provide food, habitat and breeding grounds.
When anchors are lifted, they pull up coral and other living

marine organisms."
By tying up to the buoy's pick up lines, boaters spare coral
reefs from damage due to anchors.
Currently, Ocean Watch is trying to educate boaters on the
importance of the buoy systems by leaving brochures at dive
shops and marinas county-wide, Meeks said.
"We've had some problems in the past, mostly with
chewed up pick up lines," Meeks said. "Basically, it's boaters
who untie their vessels and then don't drift far enough away
from the pick up lines before starting their engines."
Meeks advises people wilh boats longer than 14 feet to use
longer mooring lines to decre; se the pull on the buoy system,
she said.
This spring, volunteers fn m the group will step up their
education campaign efforts to help alleviate potential prob-
lems.
Group members plan to be out on the water at the buoy
sites, personally handing out information pamphlets, she said.


Davie Bridge closes for repair project


The Davie Boulevard Bridge will be closed to motorists
and pedestrians while repairs are made to the 34-year old
structure.

Work will take place from March 1 to April 26. Boaters
will have no trouble gaining access because the bridge will be
left in the up position while repairs are made.

The $1.7 million project includes replacing the bridge's
metal decks and interior machinery. It is the first major
rehabilitation to be performed on the structure, which was

Eastbound traffic: North on Riverland Road to Broward

Artificial reef balls donated
to Nature Center
BOCA RATON A company that wants to restore the
underwater environment has donated three artificial reef mod-
ules to the Gumbo Limbo Nature Center.

Reef Ball Development Group has patented a system that
company officials say could supplement reef-depleted waters
across the world.

"We donated the reef balls to the nature center so that kids
could be educated and see the importance of artificial reefs," said
Todd Barber, company president and co-inventor of the "reef
ball" modules.

The six by four artificial reefs will serve as habitat to a
variety of creatures in three saltwater tanks recently added to the
nature center.
"Theopenings in thereef balls will be superfor the different
organisms that we put in there," said Gordon Gilbert, director of
the Gumbo Limbo Nature Center.

Construction ofthereefballs involves pouring 3,000pounds
of concrete into a pyramid-shaped fiberglass mold with an
inflatable center bladder.

Different sized beach balls are placed around the center to
allow for a porous structure after the mold has hardened. The
hardened balls are then towed by a small boat to the drop site.

The difference between reef balls and artificial reefs is that
the balls are deployed without the expense of a barge, Barber
said, and are built to last at least 500 years.
The reef balls were first tested in August in the Intracoastal
Waterway just north of Peanut Island.
Now, 15 species of fish inhabit the reef balls, Barber said.

Concerned Boaters to air views
at annual seminar
STUART Boaters concerned about burgeoning state
and federal regulations can attend a "boaters summit" in
Sebastian on March 5.
The annual conference is hosted by Concerned Boaters, a
group that aims to inform the public about their rights and
responsibilities on navigable waters in the United States.
Attorneys and local and state officials will speak at the
conference, including admiralty lawyers David Paul Horan of
Key West, Howard Sutter of Miami, and Ted Guy of Stuart.
Sutter will discuss the recent appeals ruling which threw
out the trespass conviction of a man who anchored his sailboat
overnight in Largo Sound in the Florida Keys.
Other topics to be discussed: the arrest of a Madeira Beach
man for refusing rescue from his capsized Hobiecat; the arrest
of a Keys man for operating his jet ski in a channel in the Keys,
and the progress of the new Keys National Marine Sanctuary
rules.
Registration for the day-long seminar, which includes

TURTLES IN TROUBLE

Sick, injured reptiles recuperate at care center

By 10 a.m., the beeper strapped to Larry
Wood's side had sounded twice.
His first job of the day: Rescuing a
loggerhead turtle stranded on the beach, a
propeller gash tearing its shell.
In another call, a panicked fisherman in
Boca Raton had reeled in a young green
turtle with a hook lodged deep in its throat.
Woods, 26, is director of Marinelife
Center of Juno Beach, a non profit facility
where sick and injured sea turtles are
brought for care. It is the only one of its
kind serving Palm Beach County.

Adoption: Those interested in
"adopting" a turtle can receive an
application form from the center. Costs,
which range from $15 for a single turtle
up to $100 for an entire nest, help pay
for supplies and care of the turtles.
Contributors receive a certificate of
adoption and the center's annual newslet-
ter.


Some label Woods a turtle paramedic,
although he has no formal medical training.
His small truck doubles as an "ambulance"
which he uses to make rescue calls.
The facility is located within Logger-
head Park in a small building near the
beach. Children's drawings decorate the
walls. Exhibits include turtle shells, photos
and posters. Large tanks hold fish, crabs,
starfish and conch. Tours of the center are
conducted daily.
"It's nice to have a guide to show you
around and to teach you something about
what is going on with turtles," said Janet
Good, a visitor from Boston. "We need to
do something to help these magnificent
creatures."
In 1983, "Turtle Lady" Eleanor
Fletcher, known for her efforts to protect the
endangered reptiles, opened the facility as
an exhibit center for children. Through the
years, it has grown into a more sophisticated
operation, attracting locals and tourists.
"Eleanor Fletcher had a great idea,"
says Woods. "We want to carry on with her
educational work and teach people about
these animals. It is up to us to do something
to insure the turtle's future."
With the help of volunteers and private
donations, the Marinelife Center fights to
save turtles now pushing toward extinction.
Visitors to the facility will find educa-
tional exhibits, displays, brochures and
books, and slide presentations on the turtle's
plight.


Sick and injured turtles like this one are cared for at the center,
which is also home to fish, crabs, starfish and conch.


Today, the reptiles face life stressors
that include beachfront development,
poaching, pollution and other factors,
Woods says.
"Education is the key to get people to
support the fight to save turtles. It is not
enough to patch 'em up and let 'em go."
Wood's workaday world is a watery
place, filled with the creatures he nurtures.
All the animals are recovering from
accidents and disease. Local veterinarian
Nancy DeMarco, who volunteers her
services, is often called upon to provide
medical care.
One problem affecting green turtles is a
mysterious and often fatal ailment called
fibropapilloma. The disfiguring disease
prompts the growth of both internal and


external tumors.
In other cases, injury, usually due to
collisions with boat propellers, brings turtles
to the center. Fishing line, often mistaken
for food, can be responsible for gashes and
intestinal problems.
At the center, an outdoor rehabilitation
area serves as a temporary hospital where
the turtles are nursed back to health. Later,
they are released into the wild.
"Our facility is homespun," says staff
member Wendy Maus. "Most of what we
have is donated by the community."
For example, volunteers have served as
plumbers, landscapers and carpenters and
tour guides for the facility. Turtle food,
which amounts to pieces of fish, is donated
by Captain Charlie's, a local restaurant.

Harrison is one example of the many options open to shell
collectors, Aronson said.
"A lot of people think these clubs are only for serious
collectors, but in reality those people make up a small minority
of the membership," he said. "We have a lot of beach comb-
ers."
A serious collector, Aronson has an entire room in his
home filled with shells from places like the Galapogos Islands,
India, Alaska and the Philippines.
Aronson, who works as a security chief at a beachfront
condominium in Fort Lauderdale, stores his shells in large
drawers to protect them from exposure to sunlight, which
could cause their vibrant exterior colors to fade.
Bob Pace of West Kendall is another serious collector,
who with his wife, Alice, discovered 12 new shell species.
Pace, vice president of the Greater Miami Shell Club,
began collecting in 1973 while honeymooning on Sanibel
Island.
"People have always been entranced by shells since the
beginning of time," he said. "They have always been a part of

Shell collecting can be an expensive hobby. While most
prefer to comb for dead shells near the ocean's edge, avid
collectors sometimes pay up to thousands of dollars to shell
dealers, he said.
"If you want to be a serious collector and win prizes at the
shows you either have to buy the shells or dive for them
yourself," Pace said.
For those who dive, it's getting harder to harvest live shells
from one of the state's most favorite and well known collecting
spots Sanibel Island.
The island community enacted a ban last year prohibiting
divers from taking more than two live shells of the same
species. There are no restrictions from taking dead shells off
the beach, said Phyllis Diegel, vice president of the Palm
Beach Shell Club.
The 40-member club, formed in 1958, sponsors trips to
Sanibel and other popular shelling sites such as Marco Island,
St. Lucie, Naples and the Florida Keys.
"I think what attracts people most to the hobby is the idea
that they can go out and bring home something beautiful," said
Diegel, a file clerk from West Palm Beach. "It's almost like
hunting for buried treasure."

Tropical Grille at Martha's worth a visit

Martha's upbeat Tropical Grille is a reminder that the
art of presentation is all too often ignored in many south
Florida restaurants. The basic truth is that looks count. A
lot. Even if it's only the food on your plate that you're
looking at.
Now, the waterfront landmark has refreshed its conser-
vative image. And so comes a tropical motif in the form of
pastel colors, patio-style furnishings, and a progressive
menu that does creative things with the predictable.

To give the place its own identity, the Grille is located
on the restaurant's newly built upper deck, separated from
the formal dining room downstairs, which is also expected
to have its menu revamped sometime this year. The classic
theme that earned Martha's its top reputation, we are told,
will be updated, but not pushed aside.

Nor is fine dining abandoned in the Grille, where a
casual setting should not imply that high quality standards
have been lowered.

Instead, shorts-clad boaters right off this vessels have an
appropriate place to supper. And if your visit can only be a
short one, it's helpful to note that those hungry for just
appetizers and drinks (there's a full bar) should feel wel-
come, says management.
Expect to enjoy an Intracoastal view unobstructed by


glass sliding doors which are rolled back for a more natural
affect. If you're lucky, you may spot a heron or two nesting.
in a mangrove in adjacent West Lake Park.
If that's not tropical enough, count on lively dishes
derived from Caribbean, Floridian, Cuban and Asian
influences. This is New World Cuisine, says noted chef
Norman Van Aken, whose team of chefs and servers
developed the strategy.

In the kitchen, Van Aken and star chefs Tim Anderson
and Scott Howard turn food into an artistic delight. Leafy
herbs frame main entrees, while the pairing of bright color
combinations make for eye catching appeal.
The menu's imagery works wonders with the appetite,
evident in the entrees described below.
Such as: "Annatto Tinted and Grilled Swordfish with
Singer Butter, Papaya Salsa and a caramelized Plantain Mash
en-Relleno ($17.95).
Or how about "Sugarcane Roasted Chicken with
Roasted Pineapple, Red Pepper Puree and Mixed Veg-
etables from the Wood Burning Grill" ($15.75).
And "Roast Pork Havana on a Tropical Tuber Hash
with Sherried Black Beans, Pickled Red Onions and Crispy
Plantain Chips" ($16.50).

Now for a word about service. It's impeccable. A team
of knowledgeable servers makes for a class A performance.
A culinary parade starts off with three types of muffins
- pumpkin, corn and multi-grain bread. They come served
with olive oil spiked with red pepper flakes, a marriage that
does much more for the palate than ordinary butter or
margarine. By the way, this is no simple basket of rolls. It's
far too easy to over indulge.

Instead, leave room for some colorful appetizers.
Curry coconut shrimp, the shell fish breaded, sweetened
with coconut milk and sprinkled with long, ribbon-like
twirls of shredded beets and carrots, is a fun food coupled
with a spirited horseradish-based dipping sauce.'
"Grilled Everglades Alligator with Costa Rican Hearts
of Palm Slaw" will probably evoke tourist appeal ($6.95), as
will "Home-smoked, Cumin-Cured Swordfish with Asian


Pear and Pistachio Mayo ($7.50).
Salads are equally sophisticated and read like a light
meal. For example, there's Maine lobster and blue crab
slaw, cracked conch on "greens," and an old favorite,
anchovy-infused Caesar salad.

Moving on to heartier fare, tuna steak, described by
our waiter, David, as "sushi quality" is cooked rare unless
requested otherwise. It arrived perfectly moist and flavor-
ful, sitting on a gourmet version of mashed potatoes, a
conservative sprinkling of chopped scallions stir fried in
sesame seed oil and caramelized onions topping off this
creamy side dish.
Fettucine with grilled eggplant ($11.75) and two
cheeses riccotta and Spanish tetilla is a soft-sell,
meaning basics like grilled fresh vegetables, cheese and
pasta are allowed to stand on their own merit without
being overdressed in the kitchen. Eggplant slices proved
tender and tasty and worked well in this designer dish.

Dessert strives to be an emotional experience.
"Passionfruit & White Chocolate Flutes" ($5.75) must be
shared. There's also Flourless Chocolate Cake ($4.50), a
"Tropical Fruit Stack ($6.75) and a "Five Spice Chocolate
Wrap Party" ($5.75). These are just some of the more
descriptive selections.
This is dining at its most romantic, folks. Certainly
worthy of any special occasion or a simple evening out.

Italian omelet helps make for a satisfying brunch

Some of my fondest memories date
back to when I were lived aboard a 42-foot
ketch in the Caribbean, cooking brunch on
lazy weekend mornings for dear friends.
Eggs, juice, tasty ham, some fruit-filled,
fresh-baked goods all comfort foods
offering a great way to ease into a lazy day.
Taking the basic ingredients mentioned
above, we have here a sophisticated frittata
- an Italian-style omelet coupled with a
fruited yogurt compote and what I consider
the moistest bran muffins in the world.
Invite some good friends over, mix the
Bloody Mary's or mimosas (use fresh-
squeezed juice), turn on your tunes and
enjoy!

Bloody Mary's
1 quart Beef o Mato juice
1 quart Picante tomato juice
3/4 cup vodka
3 tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
1 tablespoon fresh grated horseradish
1/8 teaspoon hot sauce
Salt and fresh ground black pepper to
taste
celery stalks
lemon wedges

In a two-quart pitcher combine the first
seven ingredients. Season with salt and
pepper to taste. Serve in glasses over ice.
Garnish with celery stalks and lemon
wedges.

Fruited Yogurt Compote
2 oranges, skin removed, sliced into
whole rounds
2 bananas, sliced
4 tablespoons coconut
1 cup plain yogurt
1 1/2 tablespoons honey
1/2 teaspoon vanilla or almond extract
1/4 teaspoon freshly grated orange peel

Layer orange and banana slices in four
individual serving bowls or wine goblets, if
a more elegant presentation is desired.
In a small bowl, stir together yogurt,
honey, extract and orange peel. Top each
serving of fruit with one fourth of the yogurt
mixture and then sprinkle one tablespoon of
the coconut over each.
Serves four.
Ham, Potato, Tomato and


Onion Frittata
6 ounces ham steak, cut into half-inch
cubes
1 large potato, peeled, parboiled and
sliced
1 medium tomato, thinly sliced
1 small onion, peeled and thinly sliced
2 tablespoons olive oil
7 eggs, beaten
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley or 1
tablespoon dried
1/4 teaspoon salt
1/2 teaspoon fresh cracked pepper

Preheat oven to 400 degrees. Swirl
olive oil to coat a ten-inch pie pan or cast
iron, oven-proof pan. Scatter onion slices in
pan. Bake for eight to ten minutes, until
onions are soft.
Meanwhile, beat eggs together with salt
and pepper. Remove onions from oven.
Layer potatoes, ham and tomatoes over
onion slices. Pour in egg mixture. Top with
grated Parmesan cheese and parsley.
Bake frittata for 20 to 25 minutes or
until puffy and lightly browned. Cut into
wedges. Serve warm or cold.
Yields six servings.


*To make buttermilk, add 1/2 teaspoon
white vinegar to one cup milk. Let sit for
five minutes. Stir buttermilk before using.

Preheat oven to 400 degrees. Grease
muffin tin.
In a large mixing bowl, pour boiling
water over bran and set aside for five
minutes. Meanwhile, in a small bowl, sift
flour, baking soda, salt and cinnamon.
Add margarine, sugar, eggs and


buttermilk to the bran. Beat with an electric
mixer for one minute. Add sifted flour mixture
until combined. Stir in raisins.
For moister muffins, prepare the muffin
batter the day before. Refrigerate in covered
container until ready to bake. Fill muffin tins
three fourths full. Bake 20 to 25 minutes.
Makes 12 muffins.

Long-time fishing club serves anglers of all ages

Potential angles eager to combine wormowith pin
and line may want to check out the 60-year old West
Palm Beach Fishing Club.
"We do more fishing than most clubs," says
executive director Tom Twyford. "We emphasize
families and kids, and there are generations of fishermen
in the club."
The group even recruits some of its members
straight from the cradle. For example, it's not unusual
for diehard fishermen to sign up their children and
grandchildren right after they're born, Twyford says.
The 1,200-member group includes well known
anglers Kurt Gowdy, George Poveromo and Mark Sosin.
Members hail mainly from Palm Beach, Dade, Broward
and Martin counties with some based in Alaska, New
York and South Africa.
Fishing contests are constant, with two lasting six
months, Twyford said. All junior anglers who enter get a
prize and also qualify for class and age recognition

All contests are catch-weight release and the club certifies
spring scales so that anglers need not bring a fish to the dock.
There are hundreds of qualifying scales, Twyford says. The
public is also invited to participate in tournaments.
Anglers without boats use piers, bridges, the surf and
charter boats to practice their hobby.
"If I had to guess, I'd say most of our members are small
boat owners with 16 to 25-foot family craft," Twyford said.
In October, the group, which is now running a membership
drive, will celebrate its 60th anniversary.
Now, club instruction has been expanded to include fresh
water along with salt water angling. As a result, fly fishing is
enjoying a new popularity among members.
Group meetings, which take place the second Wednesday
of the month, start off with a fish-tying session.
On March 2, interested members will meet to discuss fly
fishing on Biscayne Bay and in the Everglades. Species in these
areas include snook, tarpon, redfish and bonefish.
A snook seminar will be offered April 23 where 22 guides
and fishermen will perform demonstrations.


Other upcoming outings include a May trip to Flamingo
at Everglades National Park in Dade County, a week at
Walker's Cay in the Bahamas in June and a surf fishing
expedition scheduled in Sebastian in the fall.
The group has also created the Palm Beach Fishing
Foundation, originally endowed by John Rybovich, boat-
building legend, conservationist and angler.
Community events sponsored by the group include a
fishing day for 500 needy children and a college scholarship
fund in marine biology at Palm Beach Atlantic College.
