The El Presidente can't help but draw
stares from passers-by.
Docked at the Sands Harbor Marina in
Pompano Beach since November, the yacht
stands out amongst the sleeker, newer vessels
in neighboring slips.
Even theboat's captain, DennyFerguson,
admits they don't make 'em like the El
President anymore. And he's not bragging.
With its sweeping hull and teak exterior,
the yacht symbolizes an era when gentlemen
always tipped their hats to ladies and every-
one dressed up for dinner.
But it's not just another pretty vessel
decorating South Florida's waterways. You
could call it a carefully preserved, floating
piece of Americana. "We're killed the boat is
here," said Charles Seitz, president of the
Sands Harbor Hotel and Marina. "It's such an
unusualattraction. It's not every day that you
see vessels with this particular history come
along."
The El Presidente is said to have been a
favorite meeting place for U.S. Presidents
Harry Truman and Dwight Eisenhower.
Other U.S. presidents have also walked
its decks, including Franklin Roosevelt, John
F. Kennedy, Richard Nixon and Gerald Ford.
Ronald Reagan and Bill Clinton were
also aboard when they were governors of
their respective states, California and Arkan-
sas.
Average folks with a lot of cash can
charter the boat too. The base fee is $2,000 for
crew and fuel for four hours. A week's stay
costs $21,000.
"We've done about everything on this
boat," Ferguson said. "From wedding recep-
tions to corporate parties."
For those who would like to own a piece
of history, the boat is for sale. Asking price:
$800,000.
Interested parties have a few months to
decide. TheElPresidente will remain docked


at the marina's hotel until May, when it
returns toMaryland for the summer, Ferguson
said. Before coming to the Sands, the boat
spent two years docked at Pier 66 after a five-
year stay at Old Port Cove in Palm Beach.
Ferguson likes the new location, prima-
rily because it cuts and hour and 15 minutes
off the vessel's running time to Palm Beach,
where most of its charter business emanates.
The only problem is that the Sands doesn't
have the same foot traffic as Pier 66, he said.
Visitors are few.
Seitz is trying to alert the public to the
yacht's new winter home. The public will
have a chance to tour the vessel from 5:30
p.m. to 7 p.m. on Feb. 2, when the Pompano
Beach Chamber of Commerce hosts a busi-
ness card exchange.

For those who would
like to own a piece of his-
tory, the boat is for sale.
Asking price: $800,000.

The 96-foot yacht, which can carry up to
70 passengers, was launched in 1939 and is
the last Mathis-Trumpy to have been built in
Camden, NJ. Originally named Innisfail, the
vessel was given to John Trumpy, Sr. as a
retirement gift. Because he already owned a
yacht, Trumpy sold the boat to the J.M.
Cudahy family of Chicago.
In 1942, the vessel was drafted by the
U.S. Navy as a coastal gun ship and patrol
boat during World War II. Five years later, it
was decommissioned and sold to Colonel
W.T. Baughn, who refit the boat back to her
former elegance. He also changed her name
to El Presidente because of the connection to
the Truman and Eisenhower administrations.
The boat remained in government ser-
vice from World War II until 1965 through a

lend lease arrangement with the federal
government, and was used for a number of
state functions including hosting heads of
state and foreign dignitaries. Among the
yacht's artifacts are a table, sofa and wooden
dog sculpture in the salon, all gifts from
assassinated Egyptian president Anwar
Sadat, Ferguson said.
Ferguson has skippered the yacht since
1986, working for the vessel's current
owner Roger Kolansinski of Fairfax, Va.,
president of Ko-Bio Medical Instruments.
Although the boat looked fine to the
naked eye, Kolansinski had to put in years of
hard work to re-create the El Presidente's
glory days, Ferguson said.
"When Mr. Kolansinski initially pur-
chased the boat, it was insured atport risk and
50 percent of the yatch's bottom had rotted
away," he said.
Embarking on a five year project to re-
furbish the vessel, Kolansinski painstakingly
restored the yacht back to its Gatsby era
period of elegance and refinement The inte-
rior- including three state rooms for guests
and two for crew, a salon and an after deck -
has retained much of its art deco look,
Ferguson said.

Over the years and through several owners, the
vessel has attracted the attentions of fashion pho-
tographers and has appeared in 13 movies, including
Rough Cut starring Burt Reynolds, and Harry and
Son with Paul Newman.
Reynolds, his then-wife Loni Anderson, Newman
and his wife, Joanne Woodward are among the fa-
mous folk who have chartered the boat for private
gatherings.

Entertainers Jackie Gleason and
Sammy Davis, Jr. have also set foot
on board.

"I have to get separate photos of those two," said
Ferguson, referring to a publicity shot of Burt and Loni that
was sitting on a shelf in the salon, next to color snaps of
Steve Majors and Clinton.

charters the boat when it is docked in Annapolis, Md.,
during the summer, Ferguson' said.
Playing host to a star-studded guest list hasn't affected
Ferguson, nor will he divulge any gossip.
To me, they're just people like anyone else, he said.

WAITING FOR WHITBREAD

Entries to dock in Port Everglades during Broward stopover

To some, taking four years to plan an event might
seem a bit tedious. Then again, the Whitbread Round
the World Race is no ordinary affair.
Local organizers for the Fort Lauderdale leg of the
internationally known sailing competition started
preparing for April's stopover almost immediately after
the yachts from the 1989-90 race left Broward County.
Tom Gleason, Whitbread-Fort Lauderdale race
committee chairman, said the wide time frame is needed
because of the project's enormity.
"It really is a massive undertaking," he said of
pulling together the needed sponsors and more than a
thousand volunteers, along with overseeing a $1.5
million budget of cash and in-kind services
This spring, boat buffs will have a chance to see for
themselves what all the fuss has been about. That's
when more than 100,000 visitors and media types are
expected to converge upon an old container yard at Port
Everglades that will be spruced up and turned into a
host center for the race yachts.

The 1993-94 Whitbread race, which is held every four
years, set sail from Southampton, England, on Sept 25.
Fort Lauderdale will again be the only North American
stop on the grueling 32,000 mile journey. Fifteen yachts and
their crews are expected to arrive at Port Everglades April 25
and stay through May 21
Organizers want to make sure that Broward puts its best
foot forward, especially with the hordes of international
reporters that will be on hand to cover the stopover.
The stopover's crowning jewel will be the port's Tracer
Basin container yard, to be transformed into the Heineken
Trophy Village.
In the past, the visiting Whitbread yachts were docked at
several sites around the county. With the village, they will be in
one place along with a swirl of activities that includes a fully-
equipped media tent, ocean and sailing-related display exhibit
area, a European-style beer garden with food and beverages
and entertainment stages.
Richard Mooney, chairman of the race village committee, said
the estimated economic impact on Browaid County from the race
and its adjoining activities are projected to be around $60 million.

Historic neighborhood throws its doors open


Sailboat Bend holds annual house and garden tour

FORT LAUDERDALE Talk about hordes of
house guests.
About 1,000 visitors are expected to take part in
the Seventh Annual Sailboat Bend Home and Garden
Tour, to be held Feb. 20, noon to 5 p.m. The event will
feature guided walk-throughs of six houses, plus an
antique show at Major William Lauderdale Park.
Charles Jordan doesn't mind the crowds coming
to his newly-renovated residence at 405 Seminole
Ave.
"It's very rewarding," said Jordan, a general con-
tractor who lives one block from the property. "This
is my first time participating in the tour and I think
it's an honor. There's a certain sense of pride in
knowing that people are interested in seeing your
house."
Sailboat Bend, a picturesque enclave located in
downtown Fort Lauderdale, features some of Broward
County's oldest homes, many of which were built
before World War II. It is bounded on the north by
Broward Boulevard, the Florida East Coast Railroad
tracks on the east and the New River to the south and
west.
The annual tour is sponsored by the Sailboat
Bend Civic Association. The group was initially es-
tablished in 1980 as a means to revive the ailing
neighborhood, which was plagued by crime and dete-
riorating properties.

Eight years after forming, the association was able to
get a $100,000 neighborhood improvement grant, which
helped pay for a consultant to map out the area's points of
interest and cut through the red tape needed to create a
historic district, Jordan said.
This year's event will mark the first time that the tour
will be held in February.
In previous years, the tour took place in January, but the
date always seemed to coincide with Super Bowl time and
organizers didn't want the competition, said Jordan, a past
civic association president whose home was built in 1938.
Monies raised each year from ticket sales go toward
neighborhood improvements, such as landscaping and wel-
come signs, Jordan said.
The oldest home on this year's tour, located at 816
Bryan Place, dates back to 1917 and is the only waterfront
property visitors will see. The newest residence, at 705
Bryan Place across the street from Cooley's Landing, was
built in 1941.
Hans and Rita Hinrichsen own the Nininger House,
another stop on the tour. The home, at 233 Lauderdale Trail,
was built in 1924 and is the former residence of Alexander
Nininger, Jr., the first Congressional Medal of Honor win-
ner during World War II.
A statue of Nininger is in the process of being sculp-
tured. Once completed, it will sit on a patch of public land
near the Broward Performing Arts Center as a monument to
Broward's veterans, Rita Hinrichsen said.

Bottom growth can cause sluggish boat engine

Q: I've
noticed a steady
loss of power on
my single engine
boat. The boat is
very sluggish,
hesitating on
pick-up. My last
0 0 tune-up was
about 10 months
ago. Do I need
another one so
soon?
A: A tune-up, which consists of new
plugs, points, condenser and a carburetor
check, can last longer than 10 months depend-
ing on the amount of hours on your engine.
Here's a check list to review. Have you
done the bottom of your boat lately? Bottom
growth could be slowing it down. Is the pro-
peller in good condition? Have you added any
weight to the boat? Another possibility is that
the accelerate pump could be disconnected.


As you can see, there's many things that
could be at fault. Check your bottom first and
go from there

Q: I bought a canoe and would like to
install a motor on the stern. What's your
advice?

A: Cutting the end off your canoe is a
job for an expert. It must be made leak-proof.
Also, I would buy a very heavy motor to deal
with stress.
There are side rigs available to hang a
motor, which would save you the labor of
building a new end on your canoe.
Remember, turning your canoe into a
motor boats means you must obtain a license
Q: My boat doesn't have a genera-
tor. At the dock I use my 110 volt to run a
refrigerator and television. But what can I
do when I anchor out?


A: I have a refrigerator and T.V. that
works on both 110 and 12 volts off my batter-
ies, and I can switch these units to either
voltage. My stove is propane at anchor and
electric at the docks.
You can buy an inverter that changes 12
volts to 110 for other appliances. This inverter
runs off your battery, so you can only draw
juice for a certain length of time before the
battery runs down.
Since you must have enough power to
start your engine, I would suggest buying two
batteries one for starting, and one for the
inverter. I would also suggest choosing an
extra strong battery for the inverter (use it
sparingly). The cost is a lot less than a genera-
tor.

Captain remembers good friend, fine dockmaster

"Hey Jerry!" Well, I guess I won't be
yelling that anymore when I sail into Bimini
HarborinfrontofWeech'sdock. JerryFrances,
dock master and a friend of skippers all over
the world, died in mid January.
What a help he had been over the last 25
years!
He'd bring his guitar on board and we'd
play and sing until all hours of the night. He
knew how to handle people better than the best
ad executive on Madison Avenue.
On charters through the Bahamas, any-
one on board who knew Jerry would say,
"Let's go back through Bimini so we can see
Jerry again. Everybody liked to bring him
presents.
I never heard him curse or utter a bad
wordaboutanyone. He knew the wind and the
weather, and in his laid back Bahamian way,
he couldmakeyou heed his advice. And if you


had a problem, he'd say, "When
you skullin' after dat turtle, don't
let him get between you and de
sun!"
When that old moon comes up
over Gully Island he'll be out there


with Uncle Lou, Harry James
Sailor, and Bone fish Willie.

Boca resident elected to command Power Squadron


Herbert N. Waze of Boca Raton, a re-
tired business executive who learned about
boating on the Great Lakes, has been elected
to command the 400-member Palm Beach
Power Squadron.
The squadron, a non-profit civilian or-
ganization with 460 nation-wide chapters,
sponsors boating classes and educational
campaigns to promote safety on the water.
Officers elected to serve with Waze in-
clude Lt. Col. Stewart E. Savage, Jr. of Juno
Beach, executive officer; Lt. Col. E.

What if there was a boat show and
nobody came?
It's Geri Haber's job to make sure that
never happens at the Miami International
Boat Show.
As one of the show organizers, entic-
ing potential customers to the annual event
- actually three shows in one is her
year round job. She is vice president of
Bruce Rubin and Associates in Coral
Gables, the public relations firm that pre-
sides over the marketing end of the event.
"Even before the New York show
opened, we were already thinking about
the 1995 shows," says Haber, referring to
January's New York boat show. "Today,
if we don't include marketing, we're not
doing our job."
The result is an increased number of
attendees, according to the National Ma-
rine Manufacturers Association, a recre-

national boating trade group that helps spon-
sors the Miami and other shows.
Exhibits range from kayaks, canoes and
personal watercraft to world class yachts,
brawny tournament fishing boats,
Hovercraft, hydrofoils and enough gear for
a ... well, for a boat show.
In the past, the event was landlocked at
the Miami Beach Convention Center. Then,
dealers transported potential buyers to the
water for sea trials.
With a growing number of visitors came
the addition of two in-water locations, the
Marriott Hotel and Marina on Biscayne Bay,
and later, the Miami Beach Marina. Now, a

City's Riverwalk project slowly takes shape

Growing number of passersby drawn to local businesses

FORT LAUDERDALE Bob Margait recalls when
the prospect of a stroll along the New River was nothing
tempting.
"It was, to put it nicely, not the type of place you'd want
to go walking around," said Margait, manager of the Chart
House, a local restaurant.
But that was before Riverwalk, the mile-long pedestrian
pathway in the city's Arts and Science District, running from
the Fort Lauderdale Historical Society at 219 SW Second
Ave. to the Broward Center for the Performing Arts at 201
SW Fifth Ave.
"Riverwalk creates such a nice environment," Margait
said. "It's certainly brought us more business. We hear all the
time from people who were out walking and didn't know
about the restaurant before."
Fort Lauderdale officials began the project in 1990. A
formal dedication for the completed, publicly funded portion
of the landscaped walk was held Dec. 30.
Ken Cicora, marketing manager for Riverwalk, said the
city hopes to expand the project with private funding and
state grants.
Future plans call for the area to be extended to Bubier
and Smoker parks on the east, and from Southeast First
Avenue to the Broward County Jail at Southeast Third


Avenue on the south.
On the north side of the river, Riverwalk will reach from
Fifth Avenue to where Las Olas meets the Henry Kinney
Tunnel on the north, Cicora said.
The waterfront walkway was originally installed as a
catalyst to draw back crowds to the downtown area, he said.
William Farkas, president of the Broward Center for the
Performing Arts, said he's pleased with the results so far.
"The city has given us a marvelous front door," Farkas
said. "People who come to the center by boat think it's
wonderful."
Dan Hobby, executive director at the Fort Lauderdale
Historical Society, said since the birth of Riverwalk he's
noticed a dramatic increase in pedestrian traffic.
"It's definitely affected ourpublic events," he said. "We're
pulling in a lot more walk-ins off the street, something we
didn't really have much in the past."
The city itself is also touting the Riverwalk project by
hosting special events, the most popularof which is the Sunday
jazz brunches at Esplanade Park.
The concerts, held 11 a.m. to 2 p.m. on the first Sunday of
each month, draw about 4,000 people, Cicora said.
"It's become a signature Riverwalk event," he said.
Mike Rocco, co-owner of Tavern 213 at 213 SW Second


St., said he frequently gets spill-over traffic from the jazz
concerts and other city events.
"Riverwalk has improved our business," he said. "The
area is beautiful. We're seeing a lot of new faces that haven't
been downtown before."
Now, with the completion of the publicly-funded phase
of the project, the success of the jazz concerts and the opening
of the Arts and Science District, the city feels the time is right
to begin promoting its downtown waterfront, Cicora said.
A tourist brochure touting the area's attractions, includ-
ing the performing arts center, Esplanade Park and local
restaurants, should be ready for distribution within the next
three months, Cicora said.
But Riverwalk's potential as a bona fide tourist stop
won't be apparent until the opening of the Brickell Avenue
Station, business owners say.
The entertainment and shopping complex is on a 3.6 acre
waterfront tract that runs along Riverwalk from the railroad
tracks to Andrews Avenue. It is expected to open in Novem-
ber, 1995, said Harold Adelman, project manager for the
complex.
The complex is slated to include a 24-screen movie
theater, the largest of its kind in the United States, he said.

Sailfish Club fights to retain dockage rights


New anti-discrimination policies under review

PALM BEACH The Sailfish Club is
trying to retain its rights to state-owned
land in the Intracoastal Waterway, now used
for the club's boat dockage.
The private boating club located on
Palm Beach's north end is now revising its
bylaws to prove that it doesn't discrimi-
nate against women and minorities in its
membership policies.
In August the club was told by the state
that its lease would not be renewed be-
cause of its discriminatory membership
policies.
Sailfish Club president George Slaton
refused to comment on the issue. "We want
to resolve this thing, but we don't want to
resolve it through the press."
The club has been working with the state
attorney general's office to have its lease
privileges reinstated. It now has a Jewish
member, and has invited other Jews to join.
The club is also trying to encourage blacks
to apply for membership.

WEST PALM BEACH After 30 years of ne-
glect, the Kennedy bunker on Peanut Island has been
restored by the Palm Beach Maritime Museum.
The bunker, along with a U.S. Coast Guard station
also located on the island, make up the first part of a
master plan outlined for the long awaited museum, still
in the conceptual stage. The museum is expected to be
located in Currie Park.
Plans call for an exhibit hall to be built on a two-
acre site in the park, said John Grant, Maritime mu-
seum director. As part of an agreement with the city,
the museum must break ground on the project within
three years.
"Peanut Island is a lovely island that has been used
by boaters for many years, and now it will soon be
accessible to the general public," Grant said.
The museum has also acquired the rights to use the
waterfront between two jetties located off the south
end of the park. Grant plans to build a dock which will
serve as a ferry terminus for trips to Peanut Island. A
small amphitheater and picnic area for weekend con-
certs and other outdoor activities is also planned.
Tours of the renovated site will begin by late summer,
Grant said.
Control of the Coast Guard station is tentatively expected
to be turned over to the museum before the end of 1994. But
no official agreement on the issue has been signed.
The Coast Guard currently expects to vacate the station
on Peanut island sometime this summer, after new quarters on

Antonacci recently met with representatives
of the Sailfish Club and its lawyers.
"We think the information that the club
has given us is fairly positive, and shows good
faith movements in the right direction."
The attorney general's office is expected
to rule shortly on whether it will renew the
Sailfish Club's lease on the docks it now uses.
But a former member says the changes are
only cosmetic.
"I wouldn't renew their lease until I
thought they were acting in good faith, and
presently I don't think they have any inten-


tion of changing their practices," said Robert Mont-
gomery, an attorney and former club member who
resigned because he didn't care for the club's
admittance policy. Last year he testified against
the club before the state Cabinet.
The Anti-Defamation League of Florida sent
out questionnaires to 41 yacht clubs that hold
submerged land leased from the state, requesting
information on their membership practices and
policies.
Of the 14 clubs that responded to the survey,
some said they had no problem admitting minorities,
while others responded vaguely, officials said.

"With the Whitbread's worldwide audience, they'll be seeing
Broward County as a desirable tourist spot and a good place to do
business," said Mooney, aFort Lauderdale developer. "Despite
what the media has relayed about tourist crimes in Miami, they'll
see that things aren't so bad here."
Gordon Oliver, president of the Whittread Fort Lauderdale's
non-profit organization, said he has no doubts that this year's
stopover will surpass the last time the race yachts visited.
It was Brward's hospitality and eagerness to host the race
that impressed Whitbread officials to bring it back here a second

ing the final planning stages of the stopover.
"Things are really heating up right now," he said. "Every day
there seems to be a new task."
The local Whitbread office, located in the Port Everglades
administration building, was opened in early 1991. Itis operated
by a full-time paid staff of Jennings and three assistants, who
coordinate all aspects the race's Fort Lauderdale leg.

former chef for the King of Denmark and now food and
beverage director at the Coral Ridge Yacht Club, pur-
chased the six-bedroom, three-bath house last Novem-
ber. They have plans of turning it into a bed and break-
fast inn.

We really enjoy this area," she said. "It's very quaint."
But even though the neighborhood has its charms,
Hinrichsen admits a total revamping will take some time.
"We still have a crime problem here, mostly car and
home burglaries committed by juveniles," she said.
Yet urban pioneers, many of them young profes-
sional couples, continue to move into the area, Jordan
said.
"Since the civic association formed there's been a
real cohesiveness amongst the homeowners that didn't
exist before," he said. "Sailboat Bend has gotten to the
point where it's feasible for people to renovate their
property and expect the value of their homes to go up."
John Ford, civic association vice president, said the
neighborhood's unique charm and history have drawn its
residents closer together.
"There's a sense of community spirit that you don't
seem to find in the newer developments," he said.
Aside from promoting neighborhood pride, the event
also draws potential homeowners interested in preserva-
tion.
The addition of an antique show to the 1994 tour is an
attempt by the association to bring in more visitors.
Admission to the show is free. About 40 dealers are
expected to set up open-air booths at the park. There will
also be a bake sale, storytelling, live music and food and
beverage stands, Ford said.
"Eventually, we hoping to expand the tour into a
weekend-long festival," Ford said.

noon to 5 p.m. Feb. 20. Tickets are $5 for
adults if purchased before Feb. 3. After
Feb. 3, tickets are $7. Admission for
children is $3.
Tickets can be bought at Tavern 213,
located at 213 SW Second St., or during
the day of the tour at Esplanade Park.
There will be trolly service from the
park to the district.

An antique show, with free admis-
sion, will be held during the same time at
Major William Lauderdale Park, at the
corner of Southwest llth Avenue and
Southwest Fourth Street. The stop will
also be included in the tour of homes for
ticket-holders.

arts. Cost is $40 for a 10-fbot-by-12-
foot uncovered space.

New watering hole anchors on Intracoastal

The Roadhouse Grill has gone waterfront.
With the Stan's of old gone, in its place comes a music-
blaring, peanut-popping party crowd anxious to gaze upon
an Intracoastal view.
When you dip into the peanut bucket, just remember,
where the shells go. On the floor. It's the restaurant chain's
claim to fame.
A location on Commercial Boulevard and the
Intracoastal in Fort Lauderdale is good news for boaters,
who will find newly renovated dockage facilities.
Unlike the chain's local establishments in Pembroke
Pines and Davie a country theme is less emphasized here on
the water.
The menu is steak house simple, meaning it's all good
American fare, reasonably priced and meant to leave you
without appetite for more than several hours.
A basket of warm yeast rolls, hot and chewy, start off
the parade of food.
Select appetizers sparingly, for there's much food to


come. Potato skins packed with cheese and bacon bits may be
too much if a steak dinner is to follow, but Roadhouse tortilla
chips and spicy cheese dip ($4.75) would probably go well
with a beer. Also, the cheese wraps ($5.25) are listed as a
house specialty.
Salads are a varied affair, mixed with the usual veggies,
but also containing real crumbled bacon, hard boiled egg, red
onion and jack and Cheddar cheese. We got no argument
when requesting that an ingredient be omitted, a sign of a
we're-here-to-please-you attitude.
Even though the place is traditionally a steak house,
good seafood is available. I was not disappointed by the tuna
steak I ordered, (price varies depending on availability) a
rather large, moist, nicely flavored portion.
The 12-ounce sirloin steak was cooked medium rare as
ordered.
Other beef entrees include a pork chop ($11.29), baby
back ribs ($13.59 for the full order), steak kabob ($9.95) half
pound burger ($4.99) and a variety of steaks like the T-bone,


rib-eye, sirloin and filet mignon and New York strip
(ranging from $8.39 to $16.99 depending on size).
As a side dish, skip the usual French fries or baked
potato and opt for the sweet potato, spiked with brown sugar
and cinnamon.
If after all this you can deal with dessert, then a dish of
the homemade ice cream (flavors change daily, $2.50) is
especially good.

LOW-FAT GRILLED SHRIMP

A Valentines Day dinner that ends with a heart-felt dessert

So it's Valentines Day and maybe you're planning a
romantic dinner on board or at home. Here's a lineup
that works well on this special occasion or anytime
you're hungry for an elegant evening meal.
Leek and Potato Soup, which got raves during our
recent chilly passage from Cuba to Bimini, is a nice
starter. I served it piping hot, but use your own judg-
ment: it also tastes great chilled.
For a low-fat and tasty main entree, you can't beat
Grilled Japanese Shrimp, perfumed with ginger, garlic
and orange.
I've also included a dessert that makes for a lovely
finish. But don't try Mimi's Valentine Pavlova on a hot,
humid day because the meringue will absorb moisture,


making it difficult to keep the outside crisp.
LEEK AND POTATO SOUP
5 medium leeks (white part only)
1 medium onion
2 tablespoons butter
4 to 5 medium potatoes, peeled and diced
4 cups chicken broth
1 cup milk
1 cup heavy cream
Melt butter in a large saucepan and saute sliced leeks and
onions for about 10 minutes on low heat. Add potatoes and
chicken broth to mixture. Cover and simmer slowly until
potatoes are cooked.


Next, put mixture through food processor and puree
before returning to heat Add milk and cream. Simmer until
hot. Some finely chopped pea pods make for a nice garnish.
GRILLED JAPANESE SHRIMP
2 tablespoons finely minced fresh ginger
2 tablespoons minced fresh garlic
2 tablespoons lemon zest
1/4 cup soy sauce
3/4 cup white wine
3 tablespoons brown sugar
juice of 1 orange

barbecue for 3 to 5 minutes per side, depending on size. I
used 4 to 5 large shrimp per person. _

MIMI'S VALENTINE PAVLOVA
4 egg whites at room temperature
1/8 teaspoon salt
1 tablespoon cornstarch
2 teaspoons vanilla
1/4 teaspoon cream of tartar
1 cup granulated sugar
1 tablespoon white vinegar
2 cups heavy cream, whipped
2 tablespoons orange liqueur, whipped into cream
4 cups strawberries


Beat egg whites, cream of tartar and salt until soft peaks
form. Now beat in sugar very slowly until peaks become
glossy. Finish by beating in cornstarch, vinegar and vanilla
- in that order.
On a foiled, lined cookie sheet lightly greased, mound
the egg white mixture into the shape of a heart measuring
about 12 to 14 inches.
Bake at 275 degrees for 1 and 1/2 hours. Remove from
oven and let cool, remove foil and place on serving platter.
Just before serving, spread whipped cream over
meringue and cover with strawberries, raspberries, or a
combination. Slice and serve.

Divers get a dose of winter south Florida-style

While an especially icy winter
continues to chill most of the coun-
try, here in south Florida we're
'" :'q blessed with sunny skies, crystal
Clear waters and great diving.'Tis
the season when our underwater
environment explodes with an ar-
ray of life.
It's an ideal time for a trip to
your favorite reef. Visibility is of-
ten exceptional, offering divers a
view that can range from 50to over
100 feet deep. The ocean offers
temperatures fluctuating from 72 to 82 degrees.
Most divers who experience Florida's winter reef will
agree that there is a noticeable difference in scenery. This is a
place where the unexpected is the norm.
Many of the creatures we divers now see are actually
winter escapees seeking the warmth of the deeper reefs. They
traveling the warm ocean currentoftheGulf Stream,a maverick
flow of water reaching, at times, speeds as great as four knots
per hour.
So you never know what will swim by from one minute
to the next. The sheer number of species is overwhelming and
represents most of the aquatic life present in the Caribbean,
along with northern water species.
Beautiful, disk-shaped angelfish which normally swim
alone now glide along the reefs in large schools. Winter is a
breeding period forthem and they assembly togetherrelatively

It's winter time when French angels can be spotted swim-
ming in large schools.

unafraid of divers. Blue, gray and French angels dash and dart
everywhere.
The spiny lobster, nocturnal animal, will now often sneak out
from the dark holes and crevices of the reef, thanks to passing cold
fronts and winter storms that stir lobsters from their hiding spots.
Winter storms may also trigger lobster migrations when
hundred of the lobsters walk head-to-head over the ocean floor in
a "follow the leader" fashion. If you're lucky enough to be present
for this phenomenon, you will be practically guaranteed a lobster
dinner.
In February, the warm waters of Florida draw different species
of groupers in incredible numbers to spawn on local reefs.
It's great sport for many local divers to watch the groupers
return for their brief spawning frenzies. Large groupers, some 15
pounds and more, generally tend to be very shy fish hiding in the
shadows of reefs, ledges and wrecks, can now be seen in tremen-
dous schools suspended over the reef. This breathtaking sight is
something the diver will not soon forget.

Dress for diving success

Keeping warm is an important consideration during
winter diving. The cold can cause hypothermia, a dan-
gerous chilling of the body. Feeling cold can also be
unpleasant and ruin a dive.
Most divers wear a wetsuit top or full suit to stay
warm. Light weight hoods and gloves provide additional
protection. A wetsuit works by trapping a thin layer of
water between the fabric and skin, with the water quickly
heating to body temperature.
Rental suits are available at most dive shops for
about $8 a day. Should you decide to buy a suit, you'll
have two basic choices: the standard "off-the-rack," or
custom-made suit. Prices vary, but expect to pay from
$180 to $300 for a rack suit. Custom suits will begin at
about $200, rapidly increasing with price as options are
added.
If you find that yourcurrent wetsuit lacks for warmth,
check out ways in which your suit can be altered to add
extra insulation. There are many accessories that can be
sewn to your suit for extra protection, warmth and
fashion.
Food is also thought to affect your body thermostat.
Be sure and eat a healthy, light meal about two hours
before a dive, giving your body enough fuel to keep it
warm. Some experts recommend a meal high in easily
digested carbohydrates and low in protein and fat. Be-
tween dives, dry off andremove wet gear if you feel cold.

Low cost, convenience make canoeing a popular sport

Many water lovers have sought their introduction to
boating via a canoe. The benefits: low cost, convenience and
fun.
A canoe is probably the easiest and most available entry-
level vessel in which a novice can learn to navigate the water.
It's just a matter of mastering a few basic strokes.
Expeditions offered by the Metro-Dade County Park and
Recreation Department are geared for both beginners and
experienced canoeists.
The program includes eight canoes and two naturalist-
guides to lead the expeditions, which allow up to 14 people.
The guest list will be expanded if you bring your own canoe.
Beginners get a dose of quick instruction, says Alice K.
Thurmond, who heads the recreational staff and schedules
various activities. Andnewcomers to the area can learn the best
canoe trails without risking navigational error.
Indian Key is oneof the favorite destinations for the canoe
contingent, according to Thurmond.
"These trips are always full and we have to cut off
registrations," Thurmond says.
The expeditions are cost-conscious and focus on aspects
of Florida that many tourists or residents for that matter -
would never see otherwise.
Prices range from $8 to $35, depending on whether you
rent a canoe or bring your own. Participants are encouraged to


pack a picnic lunch, sun screen, foul weather gear and insect
repellent.
"On my first trip I thought I was [being] prudent with light
rain gear," Thurmond explains. "Then, about half way along
the route, a frontcame through, temperatures plummeted, wind
drove the rain, and I've never been less than double prudent
since then."
New to this year's agenda is a four-hour Sunday afternoon
cruise that takes canoeists through Coral Gables' waterways,
a perfect trip for beginners because of its simplicity. It begins
Feb. 6 and costs $15.
A nine-hour junket takes place Feb. 19 when canoeists
will explore Nine-Mile Pond, where fresh water flowing from
the Everglades meets Florida Bay's salt water. Cost is $25
Hammocks along the route are filled with animals, aquatic
birds and stunted mangroves. Bird watchers consider binocu-
lars a must. The expedition is classed moderate in difficulty
and includes transportation between A.D. Barnes County Park
and launch site.
On March 6 a three-hour trip exploring the mangrove
wilderness of Biscayne Bay will take place starting at 1 p.m.
Cost is $15.
A 10-hour trip, considered moderate in difficulty, follows
on March 19 during a Mud Lake, Bear Lake and Wilderness
Paddle, all accessed via the Homestead Canal. Cost is $30.

The Metro-Dade County Park and Recreation Depart-
ment is offering a Feb. 5th canoe expedition of the 10,000
Islands. The trip is paired with the Everglades Seafood
Festival in Everglades City.

Other water-born activities include a Feb. 5th trip to
Everglades City for the Everglades Seafood Festival which
includes, for a fee, a boat tour of the 10,000 Islands, for a close-
up look at some pristine habitat.
