Boating events celebrate the holidays south Florida-style

Chestnuts roasting on an open fire. Jack
Frost nipping at your nose.
Yeah, right. This is South Florida, folks.
And in case you haven't noticed, the holiday
rules, to paraphrase a tourism advertising
campaign, are different down here.
For example, one of the more unusual
aspects of celebrating Christmas and Hanuk-
kah in a tropical climate is the bevy of holiday
boat parades.
Once again this year, decorated vessels
will floatdowntheNew River andIntracoastal
waterways in Broward and Palm Beach coun-
ties, cheered on by thousands of spectators.
The processions range from big, splashy
and tightly-controlled reviews like Winterfest
to the neighborhood charm of the Boynton-
Delray Beach Holiday BoatParadeofLights,
which welcomes all crafts regardless of how
large or small the display.
Take your pick, or see them all. Here's
how:

Boynton-Delray Beach
Holiday Boat Parade
The season's firstparade will be launched
6:30 p.m. Dec. 10 when the 22nd Annual
Boynton-Delray Beach Holiday BoatParade
of Lights leaves its starting point south of
Marker 46, just west of the Boynton Inlet.
The route will progress south through
Boynton and Delray, ending at the C-15 Ca-
nal.
Those wanting to participate must regis-
ter for the event before Dec. 7. There are no
entry fees.
Crafts can be of any size and decorated in
any fashion, with the exception of commer-


cial signage, which is notpermitted. Trophies
will be awarded for first and second place in
two size categories for best displays.
As of this writing, a date for the skippers
meeting had not yet been announced.
About25 boats participated in last year's
procession, a low number officials are blam-
ing on Hurricane Andrew and a downturn in
the economy. This year, the parade should
swell back to its normal size of 45 vessels.

Winterfest
Winterfest.,which is entering its 22nd
year, will hold its boat parade 6:30 p.m. Dec.
11. The event is limited to 80 crafts, which
will float up the Intracoastal from Port Ever-
glades north to Lake Santa Barbara in Pom-
pano Beach.
The deadline to register is Nov. 29. Fees
are $75 forprivate vessels, $500 for nonprofit
organizations and $1,500 for corporate-spon-
sored crafts.
A captain's meeting for all entrants will
be held 6 p.m. Dec. 1 at the Marina Bay
Resort, 2175 State Road 84 in Fort Lauder-
dale.
As with last year parade, officials will
strictly enforce theirdecorating requirements.
Trophies will go to the top displays that most
typify this year's theme, "Tropical Fantasy of
Light."
The whole shebang will be led by grand
marshall, television talk show host Regis
Philbin.
For spectators, reserved bleacher seats at
the northeast comer of Las Olas Boulevard
and the Intracoastal are now on sale. Cost is
$15 each.


Parking is available for $3 acar at the city
garage in downtown Fort Lauderdale. From
the.garage, round-trip shuttle service will be
provided to the bleachers from 3 p.m. to 6:30
p.m. and from after the parade till 11:30 p.m.
Cost is 85 cents for adults and 40 cents for
kids and seniors, each way.
Another popular parade spot can also be
found at Birch State Park. Admission is $5
per car or $2 per person for walk-ins.

Pompano Beach Holiday
Boat Parade
Billed as the nation's oldest floating re-
view, the Pompano Beach Holiday Boat Pa-
rade will kick off its 31st year on the water
6:30 p.m. Dec. 12.
Vessels will leave Lake Santa Barbara
and head north to the Hillsboro Boulevard
Bridge.
Last year, 70 crafts entered the parade.
This year, about 100 are expected.
Registration deadline for the event is
Dec. 6. There are no entry fees. A captain's
meeting for entrants will be held 6 p.m. Dec.
7 at the Deerfield Beach Hilton Hotel. The
meeting will be followed by the Captain's
Ball, a party for all those involved with the
event
Crafts, decorated according to this year's
theme of "Paradise on Parade," will compete
for plaques in 17 categories, including two
new added divisions for cigarette boats and
internationally-registered vessels.
The parade will be lead by grand mar-
shals, the Florida Panthers ice hockey team.

Boca Raton Holiday Boat Parade
The 18th Annual Boca Raton Holiday Boat Parade will
leave its starting point at the Delray Beach-Boca border 6 p.m.
Dec. 18.
About 40 or so entries, including grand marshal Billy the
Marlin, will head south along the Intracoastal to the Deerfield
Beach-Boca line; Vessels, decorated to the theme of "Winter
Fantasy on the Waterway," will compete forplaques in various
categories.

There is no entry fee, but registration must bemade by Dec. 10.

A free safety and decorating workshop takes place 7:30
p.m. Dec. 8 at the CoastGuard Auxiliary Base at Red Reef
Park.
The workshop is new this year, along with a waterfront
home and condominium decorating contest.
Entry forms for the shoreline competition must be in by
Dec. 10. There is no charge to register. Judging for the contest
will be held the night of the boat parade.
Spectators who want the best viewing seats for the parade
are advised to go to SilverPalm Park, Red Reef Park, the
Spanish River Bridge, the Palmetto Park Road Bridge and the
Hillsboro Bridge.

New River Holiday Boat
Parade and Festival
The last floating procession of the season, in case you've
missed all the others, will be the Fifth Annual New River
Holiday Boat Parade and Festival, sponsored by the Fort
Lauderdale Jaycees and the Lauderdale Small Boat Club.
Between 75 and 100 vessels will leave the mouth of the
New River 7 p.m., Dec. 18, and travel west to Bradford Marine,
3051 State Road 84.
Entry fees are $35 for privately-owned boats and $50 for
corporate crafts. Registration must be made by Dec. 13. A
captain's meeting will be held, at a date to be later announced.
Trophies will be handed out in several categories, includ-
ing best corporate boat, best privately-owned craft, most
original, best decorations, best music and best use of this year's
theme "Children's Season."
Proceeds from the parade and an adjoining festival at
Bubier Park will benefit the Broward Committee for the
Prevention of Child Abuse.
The Winter Wonderland fest at Bubier Park, locatedon the
New River at the corer of Las Olas Boulevard and Andrews
Avenue, will run from Dec. 17 to Dec. 22, from 3 p.m. to 10
p.m. weekdays and 10 a.m. to 10 p.m. on weekends.
On the night of the boat parade, festival hours will be
expanded from 10 am. to 10 p.m.
Admission to the festival is free. Featured nightly will be
holiday displays, visits from Santa Claus, craft boots, live
entertainment, food and kiddie rides and games.

and Palm Beach counties, giving it the author-
ity to close down the processions if activity on

No police will be on the water during the
New River Holiday Boat Parade, to be held
this year 7 p.m. Dec. 18. Security is instead
provided by the Lauderdale Small Boat Club,
which is sponsoring the parade along with the
Fort Lauderdale Jaycees.
"We don't close the river so there is
normal boat traffic going back and forth while
the parade is taking place," said Ron Bowen,
Jaycees executive director. "We usually have
a lot of cooperation, however. There's never
been a problem."

Waterfront residents deck the halls in annual competition-

Public boat tour and land party to help raise funds for charities

Last Christmas season, Dr. Willis Dickens transformed his
home into a holiday spectacle of multi-colored lights, ball-
room dancers and costumed Disney characters.
Dickens plans to do some decorating again this year and is
waiting on drawings from his son, an artist for the motion
picture industry in California, before he beings the actual work
of transforming his 150-foot lot into a holiday show piece.
"I was thinking maybe doing something with a Jurassic
Park theme," said Dickens, a neurologist who lives in Fort
Lauderdale's Rio Vista neighborhood.
But don't expect to hear any reports of drive-by dinosaur
sightings because the display can only be seen via boat.
The two-story residence, in the 1800 block of Southeast
Ninth Street, will be one of several waterfront properties
decked out for the 16th Annual Shoreline Decorating Compe-
tition.
This month will mark Dickens' fourth year in the shoreline
competition. The contest is sponsored by the Fort Lauderdale
Area Association of Realtors and is open to anyone residing
along the waterfront from Port Everglades north to Lake Santa
Barbara in Pompano Beach.
"It's a really fun thing to do and it's so South Florida,"
Dickens said. "Where I originally come from, in Minnesota,

competition, said Robert E. Reitz, shoreline decorating com-
petition chairman and Fort Lauderdale real estate agent.
The judging for this year's competition will be held 6 p.m.
to 9 p.m., Dec. 8. Registration for waterfront property owners
is free.
Judges and paid guests will leave the dock at Yesterday's
restaurant aboard the400-passengerLauderdale Princess yacht
to view the entries. A land party, with an all-you-can-eat-
buffet, dancing and a raffle drawing, will be held later that
night at the restaurant.
Proceeds from the event at Yesterday's will benefit Easter
Seals, Child Care Connection and Habitat for Humanity, Reitz
said.
Last year, the realtors association raised $7,000 for the
groups, he said.
"The first 14 years we held the competition, participation
was limited," he said. "It's was a very low key operation with
very little publicity."
When the realtors association began hosting the land party
and raffle in 1992, they noticed not only a jump in entries but
increased attention from television news crews as well, he
said.
"Making the competition into a fund-raiser got people's
interest," Reitz said.

Recommendation advised when seeking a mechanic

Q: I'm lookingforan honest reliable
mechanic to do preventive maintenance
on my boat. Ijust brought itdownfrom my
home in New York, where it was main-
tained by a competent marine mechanic. I
just can't believe the attitude and unethi-
cal way the boat yards and mechanics
operatedownhere. Estimates are given in
an offhandedway andldon'tknow ifl can
trust or rely on the people giving them. As
a mechanic yourself, what should I do or
lookfor in my search for someone to work
on my vessel.

A: Usually the dealers who handle your
make boat can recommendreputable mechan-
ics. Boating clubs, Coast Guard Auxiliaries or


Power Sqaudron groups can also be helpful in
making suggestions. I personally belong to the
Eastern Shores Yacht Club and we know of
good canvas people, fiberglass, bottom paint-
ing and others. It stands to reason club mem-
bers will not recommend an incompetent me-
chanic to a fellow member. There are many
good mechanics around and a recommenda-
tion is the best way to find them.

Q: I have navigational, mast and
other lighting fixtures on my boat. I've
noticed a lot of corrosion when replacing
the bulbs. What causes this?

A: Dampness causes corrosion. When I
replace a bulb or socket or fuse, I coat them
with a little Vasoline so they will not rust or
corrode. Do the same on your battery cables.
Do it now so that in an emergency, you'll have


no problems. Do the screws on the covers and
fixtures, as they also go bad.

Q: I had a terrific thumping and
knocking every time I went into gear. I
checked the engine, shaft and motor sup-
ports. As long as I didn't go into gear, all
was okay. Next, I checked the prop for
dings and strut and cutlass bearings, also
okay. Finally, I hauled the boat to check
for bent shaft or whatever (had to do a
bottom paint anyway) and found a wire
line and sinker around the shaft at the
stuffing box. Only knocked when shaft
turned. Did bottom, put boat back in wa-
terany noise was gone. Thoughtyou would
like to know.

A: We'd appreciate any other out-of-


the ordinary fixes by readers.

Note: Every boater should keep both a
fire and water alarm aboard when tying up for
the night or even when cruising. Both can run
on nine volt batteries. A water alarm will sense
leaks in the bilge. I have both of them on my
boat and another water alarm next to hot water
boiler in case it also springs a leak.

Local sailing club seeks potential racers


To the Editor:
Fort Lauderdale's Gulfstream Sailing
Club is offering racing clinics to introduce
sailboat owners to ocean racing. The club
holds four series of buoys races each year, a
coastal race series and an offshore race series.
Gulfstream is also the organizer of the nation-
ally recognized Stoli Cup, a two race series
held in Fort Lauderdale in early January.
Each buoys series consists of five Sunday
races, held on the Gulfstream race course off
Fort Lauderdale beach between Bahia Mar
and Sunrise Boulevard.
In the recent Columbus Day Regatta on
Biscayne Bay, almost 10 percent of boaters
racing were from the Gulfstream Sailing Club.


Race seminars, which are free, take place
two weeks before the start of each season to
prepare the novice for the real thing, with a
theory seminar held the night before race day.
Classroom seminars delve into topics such
as racingrules, procedures,crew assignments,
rules of the road, safety at sea, starting proce-
dures and tactics and the psychology of rac-
ing. On the race course, each boater will have
an experienced club skipper on board to offer
advice.
Race seminars are offered for every type
boat. Two distinct fleets include the Perfor-
mance Handicap Rating Formula Fleet and
the Assigned Rating Class Fleet.
The PHRF boats are usually recognized


as race boats light, maneuverable and de-
signed to race. ARC boats are traditionally
cruising style boats, heavier and less maneu-
verable by design, but more comfortable on
the open ocean.
Also, for those skippers having difficulty
in finding a complete crew, Gulfstream offers
access to a large computerized crew pool of
interested members.

BISCAYNE NATIONAL PARK:

A boater's destination for scuba diving and snorkeling

About a half million visitors a year find their way to
Biscayne National Park, an 182,000-acre site stretching
from Homestead to Key Largo.
Only about 50 national parks exist in the entire country.
"We are unique among them in that we have a complete
eco-system within the park," said Marilyn Hause-Loftus, a
park ranger and director of education.
Established as a national monument in 1968, Biscayne
gained park status only in 1980. In October, it celebrated its
25th birthday.
Growth is still happening.
This year, the 3.5-acre Soldier Key was purchased from
private owners for development. Plans had called for the
key to be promoted as a Caribbean island destination with
a tour boat offering day cruises from Miami. After debris
from Hurricane Andrew is hauled away, plans call for the
key to be restored with a pristine landscape. How much
access the public will be allowed remains in question since
the key is home to endangered loggerhead turtles and terns.
Although Everglades National Park is better known
and attracts more visitors, Biscayne is described as an
example of what 21st century parks will resemble.
Biscayne's features center around coral reefs not
sand.beaches snorkel and scuba sites, fishing, available
moorings for afee and camp grounds located on Elliott Key,


best known among boaters as the overnight turnaround point
for the annual Columbus Day Regatta.Public docks remain
available at Adams and Boca Chita Key, where there's picnic
areas and nature trails. BocaChita also has a primitive camping
area and a picturesque ornamental lighthouse open at intervals.

almost to the surface,
providing fine views for
snorkelers.

Dade's well known Stiltsville, that community of houses
built on stilts, also lies within the park's boundaries. Some
homeowners received permission to rebuild their structures,
although their leases expire in 1999.
In recent years the park's fish-rich waters have been
further enhanced by releases of hatchery-grown red fish.
Next year, construction should begin on a new visitor
center that will house a museum, theater and concession, said
Hause-Loftus.


A series of canoe tours of the park's inshore mangrove
will also be launched next year. In the meantime, canoes can
be rented.
Glass bottom boats also offer coral reef sightseeing,
snorkel trips and scuba dives, with park naturalists conduct-
ing tours.
Camp sites are available at Elliot Key, but amenities are
scarce. Park officials recommend calling in advance to plan
visits with a ranger.
Water sports enthusiasts and naturalists will also be in
close proximity to John Pennekamp State Park and the
offshore waters of the National Marine Sanctuary. Divers
will find over a dozen wrecks charted in park waters.
Notable among them are Arakanapka at Fowey Rocks,
Ledbury, which is south of Fowey, Laguna, off Long Reef,
and the wreck of a schooner lying west of Ajax Reef.
Equally inviting are the many coral reefs that rise
almost to the surface, providing fine views for snorkelers.
Although there is a marina at the park's Convoy Point, the
only launch ramps for trailered boats are located at Home-
stead Bayfront Park and Black Point Park marina, reached
on Coconut Palm Drive (Southwest 248th Street). The
Intracoastal Waterway plunges through the heart of the
park, inside the reef.

Residents fear jet noise from airport expansion plan

DANIA Charles Stephens has spent the past 21 years
living on Dania's waterfront and has no intention of moving -
not that he could even if he wanted to anyway.
"We're stuck," said Stephens, a marine insurance ad-
juster. "Would you buy a home in this area if you knew there
was the possibility of large jets flying nearby?"
Stephens and his fellow homeowners have lived in the
shadow of the Fort Lauderdale-Hollywood International Air-
port for years. But now, plans to expand the airport's south
runway from 5,200 feet to 9,000 feet have residents worried
about increased noise.
Currently, the runway is used by light, private aircraft. A
new, longer landing strip, estimated to be completed around
the year 2000, would play host to large commercial craft.
The expansion has affected the futures of residents living
in about 1,000 homes, most on waterfront lots, said Dania City
Commissioner Bob Mikes, who lives in the Melaleuca Gar-
dens area, which sits about a mile from the south runway.
"If the expansion goes through, it'll [distance] be reduced
to several hundred feet," he said.
Airport officials are working on several studies, including
one that will determine whether it's necessary to acquire the
surrounding residential properties to complete the project.
Findings from the study will be presented to the Broward
County Commission sometime in December, saidJim Reynolds,

airport spokesman.
The commission already approved the runway plan in
May, a move that angered many Dania residents.
"As soon as the county commission gave their approval
for the project it immediately impacted our area," Mikes said.
"There are people here who have sunk their entire life savings
into their homes. We have some of the oldest waterfront
residences in the county here, not to mention one of the last
middle-class waterfront areas."
Many homeowners are counting on the federal govern-
ment to halt the airport project because it may endanger
sensitive wetlands, Mikes said.

Meanwhile, the Dania City Commission doesn't intend
to sit back. They have allocated nearly $400,000 to hire

attorneys, land consultants and noise experts to prepare
reports for a possible court battle, Mikes said.
For Stephens, who lives in Nautilus Isles, an expanded
runway could spell disaster for his business, which he conducts
out of his home.
"The noise would be an economic kick in the butt," he
said. "I couldn't even watch my own TV."
Beulah Lair, a Nautilus Isles homeowner since 1989, said
she's also concerned but remains hopeful.
"We love it here and we don't want to move," she said.
"Maybe by the time they get the runway done and operating,
the planes won't be so noisy."
Reynolds said the airport plans to use the runway prima-
rily for aircraft With quieter engines.
According to preliminary reports, indications are that the
noise probably won't have much of an impact on many of the
homes, he said.
"Only the homes closest to the airport, in the first or
second row of Melaleuca Gardens will be severely affected,"
Reynolds said. "We may have to buy those residences."
If a buy-out is inevitable, the airport will either keep the
properties or sell the land to private developers for commercial
use, he said.
Runway backers are saying the expansion is needed to
accommodate the airport's increase in traffic.
"If it doesn't go through, we anticipate delays for take-offs
and landings," Reynolds said.

Environmental officials, coastal condo communities and
landscape consultants are embroiled in a dispute over how low
sea grapes can be trimmed without damaging the plant's root
system.
Waterfront property owners want permission to trim sea
grapes that are obstructing their view of the ocean. In the past,
some property owners have clipped the endangered plants too
low, violating the county's coastal protection laws

Now, county environmental officials are suggesting that a
committee be formed to study whether trimming actually
threatens the plant's health.
"Absent of any evidence that sea grape pruning is harmful,
we want to see the relaxation of arbitrary height limits on
pruning," said dune restoration consultant Robert Barron.
Barron argues that lowering the seagrapes would allow the
planting of certain sea grasses with root systems thought to
better anchor dunes.

But critics say that a lower dune canopy would offer less
protection from storms, blowing sand and wave action. Lower
vegetation could also impact sea turtle hatchlings by failing to
provide a sufficient buffer from street lighting, which is
believed to draw the endangered reptiles.
Currently, county environmentalists are conducting a
small-scale experiment by studying the impact to seagrapes
that have been trimmed. But it could take seven years before
the results are documented, county officials said.

Contest judges consider 'creativity, color and spirit'

contest judge, said last year's panel rated the
entries on originality, creativity, color and
spirit.
"It was amazing how much effort people
put into their designs," she said. "Sometimes
it's hard to get in the holiday spirit when it's
90 degrees outside. This at least made every-
thing seem more like Christmas."
StanleyLevine, aretiredrestaurant owner,
said it took five days and some help from his
friends to set up last year's display at his Fort
Lauderdale home in the 2900 block of North-
east 37th Street.
The scene, dubbed "Ice Skating on the
Intracoastal," netted Levine the Realtor's
Choice Award for bestoverall design. He was
presented with a silver trophy and a $500
savings bond.
"It was a very prestigious to win some-
thing like that,"Levine said. "It was an honor."


Levine decorated his 250-foot property
with a real ice skating rink and thousands of
twinkling lights.
Through a friend of a friend, Levine man-
aged to get six skaters from New York, all
former entertainers with the Ice Capades com-
pany. He also commandeered a few friends to
come dressed as Santa Claus, a snowman and
Christmas carolers.
"I think it's really special living on the
water," Levine said. "I wanted to decorate my
backyard for all the boaters to see. I'd like to
see more people do it. It really livens up the
area."

Although the entire ice skating show was
"quite expensive," homeowners needn't put
out a lot of money to impress the judges,
Levine said.
"It doesn't have to be an elaborate pro-


duction," he said. "Just do something nice and
original. And use plenty of lights. Truthfully,
the more lights the better."
Levine will be out of town for this year's
competition, the first he will have missed in
five years.
"I thought I'd give someone else a chance
to win," he said, laughing.
Last year's theme was "One Enchanted
Evening." This year, people are being asked
to give their own impressions of "Tropical
Fantasy of Lights," Reitz said.
The 1993 Realtor's Choice winner will
receive two round-trip airline tickets to any-
where in the United States. Other prizes, to be
later announced, will also be awarded for first
place in the following categories: residential,
low-rise condo and apartments, high-rise
condo and apartments, marine and commer-
cial and restaurants, Reitz said.
About 587 homes are located on the
Intracoastal, along with another 100 or so
offices, restaurants, marinas and multi-family
dwellings, Reitz said.
In late November, waterfront residents


and business owners will receive newsletters
and door-to-door invitations for the upcom-
ing competition.
The event has always been a percussor to
the annual Winterfest holiday boat parade,
with homeowners keeping their decorations
up for the floating procession, Reitz said.
"The homes become-a backdrop for the
parade," he said. "It's nice for the boaters, so
they don't have to go up and down the
Intracoastal in the dark."

ing are $45 per person, or $30 for the land
party only.

DEEP RIVER, CONN.- To passersby, the Deep River
Marina looks like a village park with its wetlands and wildlife
rehabilitation center.
But it's actually a thriving business where management

a wetland area, is home to about 300 boats and offers a full-
service boatyard. On-land facilities have been designed to

Marina owners Douglas and Karen Van Dyke were also
the first in the area to install a sewage pump-out facility forboth
resident and transient boats and a portable toilet dump station.

Seafood lunch delightful on sunny Biscayne Bay

There's a lot to be said for Sunday lunch, especially if
your dining companion is Biscayne Bay and large, feasting
seagulls your entertainment.
This was our backdrop during a recent afternoon at
Mike Gordon Seafood Restaurant in North Miami; an old
establishment with modest beginnings. According to lore,
the place got its start in the late '40s as a bait shop where
locals could also buy sandwiches and fish dinners. Then,
everything was prepared by Ann Gordon and her son, Mike,
a pair of hearty New Englander's transplanted from Maine.
Mike, a well known power boater on the race circuit, died
just this year, leaving the place to his sons, John and Gary.
The structure itself has evolved through the years,
thanks to acts of nature such as a hurricane and later, a fire
that consumed the building.
Today, patrons find two large dining rooms lined in
dark paneling and sectioned off for smokers and non
smokers. The entrance-way is a collage of powerboat
photography. It's a laid-back atmosphere, which should not
imply that you can't dress up if you feel like it.
Tables are covered with checkered pattern cotton cloth,
with a basket of sea biscuits as a centerpiece. Slices of
pumpernickel bread come later.
At lunch time, the menu is concise and to the point,
paying homage to cold water seafood as well as the tropical


varieties.
You'll find all the big tourist pleasers Maine and
Florida lobster, stone crabs (in season), grouper, whole
yellow tail snapper, scallop dishes. Note: The prices listed
here apply specifically to lunch; dinners are higher.
A few pasta dishes feature linguine with clams or
shrimp and scallops, or a vegetarian version with just
tomato, basil and mushrooms ($8.25 to $8.75.)
Some specials are also available, i.e., a blackened
snapper dinner with New England clam chowder, fries or
baked potato, and Key lime tart for dessert ($9.95)
But the fish, a large portion, was a tad dry and the
blackening could have left a little more heat on the palate.
The same complaint was also heard from guest No. 1
concerning his shrimp Creole ($8.85).
The grilled shrimp also was somewhat disappointing, as
they lacked any barbecue flavor. But dining companion No.
2 did have compliments for his side dish of rice, prepared
Caribbean-style with green peas, and chick peas. An
accompanying cole slaw was light on the fat and ranked
high on taste unlike other mayonnaise-laden versions.
As a starter, New England clam chowder is a good
choice. Other possibilities might be a bowl of oyster stew
with milk ($3.45), white water clams on the half shell
($3.95) or steamed mussels, prepared in broth with garlic
($4.50).

are also fun; for example, Barcardi rum pie, ($2.75), a
cream pie spiked with the obvious, rich as a cloud.
A Key lime tart ($2.25) is also well done, framed by a
wall of meringue. Meanwhile, a chocolate brownie sundae
is mammoth, and the waitress even though to add a second
small dish of vanilla ice cream on the side to go the distance
of the brownie.
Service, by the way, I'd rate "okay," with one of our
two waitresses having to leave the table to find answers to
basic menu item questions. But there were no long waits for
anything, and everyone was pleasant.
For us, the real showstopper was the huge tarpon
swimming off the docks and the large seagulls fighting for
space among the pilings. It's a nice way to spend an
afternoon.

Cream the onions and bake a pecan pie for

Those of us who enjoy cooking can't wait
for the holidays, an annual baking bonanza
that stays in our memories long after we've
forgotten the presents weve opened. It's a time
for collecting recipes, most of which won't be
repeated until the next holiday season rolls
around again.
When I was growing up in New England,
Mom's kitchen was a perfumery of wonderful
aromas as she went about her Christmas bak-
ing. Our family's favorite: A pecan pie that
was never overly sweet or sticky.

This pie is easily assembled and can be
made in minutes. It's been a treat in my own
home for over 25 years and it gets applause
every time it's served. I've included a recipe
for.pie crust, but if you're pressed for time,
store-bought will suffice.
For your holiday dinner, you may also
want to try my mother's creamed onions, a
New England recipe that makes a perfect side
dish tojust about any main entree. In the spirit
of tradition, both these recipes are now part of
my own daughter's collection.


Mom's Foolproof Pie Crust
2 cups flour
2/3 cup shortening (Crisco)
1 tsp. salt
6 to 8 tbsp. ice water
Note: This makes enough for two pie
crusts.


Combine above using two knives orpastry
blender. Add six to eight tablespoons ice wa-
ter and combine until pastry forms a ball. Roll
in plastic wrap and chill for about an hour. The
trick is to handle the dough with your hands
very much as little as possible, as the heat will
make the dough tough.
The Best Pecan Pie
1 stick butter (room temperature)
1 cup sugar


1 cup dark corn syrup
1/2 tsp. salt
2 tsp. vanilla
1 1/2 tbsp. cornstarch
3 eggs
2 to 2 1/2 cups coarsely chopped pecans
Unbaked 9" pastry shell


In medium size mixing bowl, place soft-
enedbutter, sugar, corn syrup, saltandvanilla.
Beat until thoroughly blended. Add eggs and
beat gently. Fold chopped pecans into mix-
ture.
Bake at 350 degrees on bottom rack of
oven for about 40 to 50 minutes. When done,
pastry edges should be slightly brown and
filling should tremble slightly when pie is
shaken gently. If top of pie gets too dark, cover
with foil. Enjoy with a dollop of whipped
cream.

New England Creamed Onions
In New England where I come from, a
Thanksgiving or Christmas dinner is not com-
plete without creamed onions. These are quite
simple to make. The time consuming part is
peeling these tiny onions, but it's well worth
the taste. If you're not up to it, bottled onions
may be substituted.
You'll need:
*Two to 3 dozen small white pearl onions
peeled (if you cut an X on the bottom of the
onion, it won't separate)
*Salt and pepper to taste
*A dash of cayenne pepper
-3/4 cup grated sharp Cheddar cheese
*1/4 cup butter
*1/4 cup flour
*1 1/2 cups light cream
Cook onions until tender. Drain, reserv-
ing a half cup liquid. Melt butter and blend in
flour. Gradually addreserved onion liquid and
cream, stirring constantly. Cook until smooth
and thickened. Add salt and pepper and cay-
enne and onions and mix lightly. Pour into
baking dish. Top with cheese. Cover and bake
in 350-degree oven for 25 minutes. Then un-
cover and bake for 20 minutes.
This is a good prepare-ahead dish that can
either be baked for the first 25 minutes, cooled
and refrigerated or fully baked before serving.

Sailing's a Breeze
This instructional kit, put together by twin brothers in
Boston, is designed for the beginner (that includes kids)
learning to sail aboard a small craft, say creators Gary and
Mark Solomon. The kit includes an instructional booklet, a
quick reference guide with how-to drawings (one is
laminated for boat use) and a 45-minute video tape. Each
chapter addresses sailing theory, knowledge and skills.

Night Vision Binoculars
Taking advantage of Russian technology, these
lightweight binoculars give boaters the ability to see in
difficult situations at night. They are water resistant, run on
two AA batteries and can recognize the human figure up to
250 yards away. Objects are enlarged two and a half times
their size. Field of view is 15 degrees.

This personal journal was designed by a local artist
inspired by some of south Florida's better known nautical
sights. Jacket designs include watercolors of nautical scenes
at Bahia Mar, the Hillsboro Inlet Lighthouse, the

Town and Cat Cay in the Bahamas.

The Roll-A-Chart
The idea is to keep your charts dry in conditions such as
wind, rain and ocean spray. This plastic case allows charts
to be taped together and attached to two rollers for easy
reading. A grease pencil or dry marker can be used on the
hard, plastic cover to plot course lines.
The Roll-A-Chart measures 15 inches high, 13 inches
wide and two inches deep. It can be anchored to any surface
with suction cups or velcro.

Keeping clothes, food and other items dry is the goal of

Good quality equipment means everything when you're
diving. Today, even the most basic of modern gear is far easier
to use than the best quality old fashioned type. Consequently,
the underwater world is becoming easier and safer to explore
for people of all ages and physical conditions.
To geta good glimpse of the underwater realm, at the very
least a swimmer must own a face mask, fins, and snorkel. And
in order to go deeper and stay longer, one must strap on:scuba
equipment and breath compressed air.
The technique is called "hookah diving," sometimes re-
ferred to as "umbilical diving" or "power snorkeling."
It's quite simple. Divers suit up with mask, fins and
snorkel and dive below using surface supplied air. An air unit
floats above the water and pumps compressed air down to the
diver through a hose. One end of the hose is attached to the
compressor the other end goes into the diver's mouth. Heavy
scuba tanks are not required.
Surface supplied air diving is not a new technique. As
early as the 16th century, salvage divers used primitive diving

bells which contained air from the surface. Sponge divers
utilized the same techniques referred to as "hard hat" diving in
similar devices for years.
In the 1960s, engine company Johnson Evinrude invented
a surface supply system known as the air bouy. The device
floated on top of the surface and pumped air to a diver below.
The concept was brilliant, but the system failed to provide air
that was safe to breathe. Production of the air device was
immediately discontinued.
Since then, many inventors have introduced modern and
sophisticated surface supplied air devices. At last count, there
are five manufacturers of such systems in the United States.
W.C. Brown, a Pompano Beach fish collector, who was
fasinated with Evinrude's idea introduced a system to south
Florida in 1969. Working from his garage, he designed and
developed a device which he called Brown's Third Lung. His
invention not only passed the governments safety standards
but today the device is in demand throughout the world.
In 1985, Brown retired and sold his company. Under the
new ownership of Robert Carmichael and Joesph Sink the
company has continued to grow and improve Brown's concept
with emphasis on safety and training.

Today, the Fort Lauderdale operation offers many differ-
ent types of surface supplied air devices and in addition a wide
range of instructional programs for those who intend to use
their systems.
Surface supplied air is great for addicts who like to stay
down as long as possible and for photographers and scientists
studying the underwater world. At shallow depths above 33
'feet, one can stay down for hours.
To insure safety, it is best to have scuba training from an
accredited diving organization before using a surface supplied
air unit. Instructions include the basic of breathing compressed
air underwater and the do's and don't of staying underwater
fbr long periods of time.
Sales and rentals of air units are available in several resort
area of the United States. Generally, rentals start at about $40
per day.
"My main concern is training," said Larry Coyne, an
instructor at Brownies. "Many people do not realize they are
breathing compressed air when they are using these devices. It
is important that they know the theory in order to be safe."

City approves law
mandating sanitation
services for
liveaboards

FORT LAUDERDALE To help clean up polluted
portions of the city's waterways, commissioners in late
November gave preliminBry approval to a law requiring
landlords to provide pump-out services for their liveaboard
tenants.
The proposed law, approved in a 5-0 vote, is in re-
sponse to studies pinpointing raw sewage as the pollution
source in waterways off Hendricks Isle and Isle of Venice.
The law requires landlords to either install pump out
stations or'hire mobile pump-out companies to provide the
service in all liveaboard areas within the city.
An earlier proposal required landlords to provide ex-
pensive pump-out stations that could have resulted in large
rent increases for liveaboards.
Residents can voice their views at a public hearing
Dec. 7, 5 p.m., at city hall, where the issue will be put to a
final vote.
