One weekend a year, Bushnell becomes home to an historic event that marked the beginning of one the longest and costliest wars between Native Americans and United States soldiers. The reenactment of the battle that launched the Second Seminole War is scheduled at Dade Battlefield Historic State Park on Saturday, Jan. 4, and Sunday, Jan 5, from 9a.m. to 4 p.m. both days. The battle begins at 2 p.m. each day. While marching from Ft. Brooke (Tampa) to Ft. King (Ocala) in late December of 1835, Major Francis L. Dade and 107 men were attacked and defeated by a superior force of Seminoles on the very site where the battle will be relived inside the park. Andrew Cripps resigned from his position as executive director of the Sumter County Chamber of Commerce after three years of service. It has been a privilege to serve the businesses of Sumter County, and working with the Chamber staff and board during the past three years, but I look forward to pursuing some new exciting opportunities, Cripps said in a letter to Chamber President Bobby Caruthers. A lot of positive things have happened with the Chamber in the last year and Im looking forward to 2014. Andy was a big part of this transition period, Caruthers noted. Merritt has served as the membership representative for the chamber since 2010 coming from more than ten years in hospitality management. As the primary membership representative for the chamber, Merritt worked closely with current members and doubled the size of the membership in less than two years. During her tenure she also assisted in the creation and development of many of the chambers most popular programs and events such as the Simply Sumter program, the annual Sumter County Beef and Boogie Festival, and more. She is a graduate of Leadership Sumter program and was recognized in 2012 as one of Lake and Sumter Countys Top 40 under 40 business professionals by the South Lake Press. As we move forward, Samantha Merritts knowledge of the chamber and her enthusiasm will continue to be an asset to the Chamber businesses. Since then, the tenth grader has collected thousands of dollars worth of model train pieces, memorabilia, books and magazines. Samantha Merritt Olive Watson makes her way to her Sunday school class and worship service at Wildwood United Methodist Church, every Sunday morning. She has for decades now late last year, she will celebrate her 103rd birthday. Olive was delighted to have her family, including her son, George, by her side as Pastor Mike Beck presented a commendation to her, from the Florida Senate and Senator Marco Rubio. PAGEA4SUMTERCOUNTY(FL) TIMES, THURSDAY, JANUARY2, 2014 Heartfelt gratitude This Christmas, the Refuge at Jumper Creek was incredibly blessed by the residents, houses of worship, agencies and businesses of Sumter County. We are a homeless shelter located in Bushnell; housing not only single people, but families and single parents. Currently we have 15 children on site. The outpouring of gifts and support was overwhelming. Every one of our residents was blessed with gifts, but more importantly with the knowledge that they are cared for in a world that all-too-often averts their eyes from the plight of the less fortunate. The response to our ministry was so generous that we were able to pay it forward. We were able to respond to a plea from another ministry who desperately needed what we were able to supply. Sumter County, we are so grateful and humbled by this support. Please come join us as we show our gratitude by hosting an open house on Jan. 4 at 11 a.m. There will be free food, a bounce house for the children and good fellowship. By Glenn Mollette Arts and Entertainment television was out of line for suspending Phil Robertson for a recent statement that the network executives did not appreciate. They may not have liked his Bible quote but he was stating his personal belief and not speaking on behalf of the network. I realize that he is employed by the network, but that should not prohibit him from stating his opinion. Every American in most circumstances has an opinion and many will disagree or agree depending on the subject. Because someone states something does not mean that it is reality, except in that persons mind. However, there are many circles of shared belief throughout our world. I happen to believe some are right but some are also wrong...in my opinion. My opinion is based on my background, upbringing, Bible reading, education, personal studies, media, folktales and even common sense. I dont like everything I see on television, read in the paper or hear on the radio. However, I have yet to eliminate any of the three from my life. I dont like everything I see and hear in church but I still go. Yet, I believe in the freedom of religion just like I believe in the freedom of people to state their opinions and quote their favorite books whether its the Bible or Readers Digest. As a free society our task is to muddle through the free speech and make a sensible determination. Free speech encourages or offends people. However the goal of speech should never be to limit human rights to anyone. A worthy goal for us all is to use our free speech to make America better even though words can burn as in the case of Robertsons statements. Again, just because somebody makes a statement does not mean that it is reality, except in the mind of the person who made the statement. The statement simply is a window into that persons soul. I may not agree with what you say or even like it but lets please preserve the First Amendment. Welcome to the grand buffet For the past several years on Thanksgiving and Christmas, my husband and I have gone to an out of the way place here in Florida for their Grand Holiday Buffet and they aint lying. Thats one honking spread they put on. Heres just a fraction of this years Christmas menu: roasted pears with herb goat cheese, roasted sweet potato soup with duck cracklings, grilled zucchini with tamarind balsamic reduction, peel-and-eat shrimp with cocktail sauce, made-to-order waffles and omelets, slowroasted prime rib with Au Jus, roast pork loin with black cherry glaze, traditional sweet potato casserole with marshmallows, Yukon Gold garlic mashed potatoes, Bananas Foster, orange creamsicle cake, pecan pie and I cant forget the charcuterie station with cheeses and nuts, fresh fruit, liver pts, antipasto meats and assorted breads and butter. Plus, bottomless glasses of champagne. Weeks before we go we print out the menu and read it out loud, oohing and ahhing and sighing. Drooling and moaning may or may not have taken place on occasion. We look forward to these meals with eager anticipation. However, I must confess that my eagerness is mixed with angst. It seems that although outwardly my stomach may be big and flabby, when it comes to my actual stomach, all you can eat for me is not much. I fill up easily and fast. So every year I strategize over how to approach this annual eating event of Olympic Games scope, such as studying the training tips of championship-winning competitive eaters like Joey Chestnut who can scarf down 68 hot dogs in 10 minutes. Ive tried drinking a gallon of water the day before, hoping to stretch my stomach a bit so I can fit in more food, but so far that hasnt helped. Ive tried wearing loose pants, not eating anything after bedtime the night before, pacing myself as I eat, yet I still cant eat as much as I want. Ive even toyed with the idea of bringing a plastic-lined tote bag with me and stuffing it with shrimp scampi and red velvet cake, but thats just wrong. Besides, I havent figured out how to do it without getting caught. It doesnt seem fair. As I carefully fill my plate with teeny taste-size portions of yummy deliciousness, I watch in envy as everyone around me piles their plates with mountain-size servings, eats it all and then goes back for more. Thats what I want! All I want is more. More baby artichokes, more green beans almandine. More bread pudding with bourbon sauce, more linguini, more pie. Alas, its not to be. (One year I did try to go beyond my limit. Lets just say I overflowed. On my shoes.) Recently, I was thinking about our annual buffet pilgrimages and how bountiful and beautiful they always are. I thought about how full I always feel and my intense longing to be able to contain more and what that really meant. I mean other than the obvious triviality, misguided pettiness and sinful gluttony. I remembered what the psalmist wrote: O taste and see that the Lord is good; blessed is the one who takes refuge in him (Psalm 34:8). Another translation says it like this: Oh, put God to the test and see how kind he is! See for yourself the way his mercies shower down on all who trust in him. At the buffet, my husband especially likes the seafood salad and I like the smoked salmon thats always served whenever we go, and throughout the year we remember how good they taste and how we cant wait to taste them again. Someone once said that all of life illustrates biblical truth, and the truth is that, just as Ive tasted roast turkey with giblet gravy and spirited cranberry orange sauce and delighted in its goodness, Ive also tasted the goodness of God and the sweetness of his mercy and grace. He has been kind to me, patient with my foolishness, faithful despite my unfaithfulness, loving me consistently in all of my unloveliness. God has graciously set a table before me (and you, too), that we may feast, not on seafood salad and smoked salmon, as good as that may be, but on himself, never being full because theres always room for more of him, yet always being satisfied. Being satisfied thats all anyone wants anyway. By Barbara Wo rdTwo $1,000 college scholarships are available this year for South Sumter High School seniors, through the Friends of the Panasoffkee Community Library, Inc. The applicant geographical area includes Sumterville and Lake Panasoffkee. The applicant must meet the requirements listed below, as well as volunteering for 10 hours of service through the Friends of the Panasoffkee Community Library, Inc. Students should inquire at the high school counselors office. Deadline for the application is January 2014 with the date to be announced. Students are encouraged to begin their volunteer hours as soon as possible. An application form is required for the scholarship, which is available from the high school counselor. Requirements include: following the scholarship application process, resident of Lake Panasoffkee (33538) or Sumterville (33585) for current and prior school years proof of residency may be requested. Applicants must volunteer for a minimum of 10 hours, specifically for the benefit of the Friends of the Panasoffkee Community Library, Inc., prior to the end of December 2013 (in preparation for an actual deadline in January 2014). The applicant must have a cumulative GPA of 2.5 unweighted, or above (on a 4.0 scale) for grades nine through 12 (semester one). GPA must be certified by a high school official. Questions asked on the application form include financial need (familys adjusted gross income from last years tax return), other financial considerations, number of people in the family, the students ultimate career goal, what post-secondary institution he/she plans to enter immediately after graduation, extracurricular activities and achievements (including offices held, awards, letters, etc.), community activities or club memberships (that require community service), church or civic activities, citizenship and attendance, a studentwritten essay explaining why the student should receive the scholarship, how the student will spend the money (books, buy a computer, or pay for tuition/fees/room and board, etc.), and references (from a teacher, counselor, minister, employer). The application forms are distributed at a senior meeting by the counselor in December 2013. At the meeting the counselor gives each student a scholarship book that lists various local and state scholarships. The Sumter Schools Enhancement Foundation Steering Committee chooses the recipients in April and the scholarships will be awarded in May. The Friends group looks forward to offering these scholarships each year and strives to maximize the scholarship benefits each year. The Panasoffkee library branch building was recently expanded and now includes a book room that is staffed by the organization, where books can be purchased at a nominal fee between 10 a.m. and noon on Wednesdays or Saturdays. She was praised for her dedication to her church, her Lord and her community. The entire congregation stood and applauded for a long time, because she is well known for humility and service and she is loyal in her support. She was married to the late Allen Pee Wee Watson who passed in 2000. Mrs. Watson Olive was President of the United Methodist Women for the Florida Conference of the United Methodist Church years ago. One outstanding moment in her life was years ago during an annual UMW Conference. The conference was at Florida Southern College and had been planned by Watson, who was president of the organization at the t. She was asked where the guest speaker was going to spend the night. Quickly realizing that the detail hadnt been taken care of, without a pause, Watson replied, Well, with me, in my room! Another time, conference delegates elected her to represent the Florida Conference at the World Methodist Conference in Africa. She was delighted. Theres no one more humble, according to Annie Otto, wife of former pastor Tom Otto. Her devotion to her Lord and to her church and to all things good, is outstanding, notes Otto. She loves her community and is devoted to those she meets. Watson and her younger friend, Lynn Jones, make their way to class and church together and sit together. Jones is 100. Following the presentation, everyone over 90 was asked to stand and be recognized. It was amazing how many stood, said Otto. His mother, Evelyn, searches out opportunities and its not uncommon for her, or his father Charlie, to take him out for handson learning experiences. For example, his mother searched out railroad museums and his father now volunteers with him at the Florida Railroad Museum in Parish. The museum operates on the weekends to the public and does some charters during the week. Because hes still under age, Adam needs his dad for adult supervision, so its something they do together, serving as car hosts. Youre assigned a car and youre responsible for that car, he said, explaining that its taking care of the people in that car as well. Hes also had the chance to be the train man uncoupling and switching on the track and has even been the engineer. My dream is to one day be an engineer for CSX, he said, adding that hes done research on the job and what it will take. In the 10th grade, it wont be too long before Im out of high school. This year, Adam set up a Christmas display, with village houses and scenery. He said the layout took him about 12 hours to put together and one of the trains running is the Polar Express. Looking back on that first Christmas with a train, he said he got two trains and was thrilled. The N-Scale, which we set up, but the one that really got me started was the Lionel. He began to collect early on at that time, Everything was all about Thomas (the Train), he said. And while those items were mostly for young children, hes still collecting some Thomas items, because these days, manufacturers of the electric trains are putting out Thomas parts, he said. I started seriously collecting when I was in the third grade. I started getting more electric train sets and setting them up in my room. He estimates his collection of train memorabilia is between $10,000 and $20,000, noting that parts are very expensive. Set pieces were standard gifts for his birthday and Christmas, with some given in between. The cost of the actual train engine varies, he said, noting it depends on the size and model. These days, with the newer items, the highend pieces can cost thousands of dollars, but Swindell notes, thats not what he has that his pieces are smaller and not as costly. He said theres a lot of history to be learned, through the model train sets. Based on actual trains, he said the favorite in his collection is the Southern Pacific Daylight. A train that runs out west, he explained, adding that the train had a long history and a striking appearance. It was also used as one of the American Freedom Trains in 1976. What I really like about them (train sets), and I believe is most beneficial, is working with electricity. The newer stuff, its mostly circuitry and wiring and technology, he said, pointing out that working with the trains and keeping them running, has been learning a skill. Along with the circuitry and technology, hes also learned to solder, in order to make repairs to the trains. Hes looking at attending a CSX training school in Jacksonville, although his work with the museum can lead to certification as a train engineer, he said. The teens have been taking part in the public events, working everything from games to helping visitors make crafts. At times, theyre dressed in period costume and other times, theyre leading the summer campers. The group works with Dade Battlefield Society member Karen Cloud.

Rinse with cold water; pat dry. In small bowl, whisk olive oil, orange juice, vinegar, salt and pepper. Divide asparagus on salad plates and drizzle with dressing. In food processor, pulse bread to form crumbs. In shallow pan, mix breadcrumbs with 1 tablespoon olive oil; toast until golden, stirring once, about 5 minutes. In large baking pan, mix cauliflower with 3 tablespoons olive oil and salt. Roast until browned, stirring occasionally, about 30 minutes. In large skillet over medium-high heat, heat remaining 1 tablespoon oil; add half prosciutto and cook until crisp. Stir in garlic; cook until fragrant, about 30 seconds. Stir in pasta, cauliflower and wine. Stir well, adding pasta water as needed for a saucy consistency. Stir in parsley and hot pepper flakes. Spoon into shallow bowls; top with remaining Prosciutto di Parma and breadcrumbs. Garnish with additional Prosciutto di Parma slices, if desired. Homes and even cars and trucks are decorated for the holiday. Yet I was surprised to see a beautifully decorated Christmas Belle. Almost every morning I work out at Muscle Bound Gym before going into the office. It was the morning before Christmas Eve, and as I entered the gym, to my surprise, there she was. Belle, a very happy pit bull (her tail never stops wagging) was dressed in her holiday pretties. The 6 year old rescued pit bull loves to dress up, and today she was wearing a necklace with hanging hearts over her collar, and a big red Christmas bow. Belle has many loves in life. She loves her family, she loves people in general, she loves food, and she loves her pretties. Pretties are what the Harris family tells Belle she is wearing, and Belle cant wait to wear her pretties. Belle was rescued at a very young age. She is loved and cared for by Teagen Harris and the rest of the Harris family. She is such a baby, and cries when we are not in sight, says Shawn Harris. Pit bulls get a bad rap. Living in the right environment, they are loving and loyal dogs. It is not the breed that is dangerous, but dangerous people who are irresponsible and cruel. Belle is a perfect ambassador for her breed. She will greet you with a wagging tail and a big signature pit bull smile. She always wants to look pretty and she loves attention.
