Thursday, July 4, 2013Volume 127 Number 27Established in 1881 50 Cents E-mail us: news@sctnews.comFor more news, videos, photos Visit us: sumtercountytimes.comTIMES INSIDE: QUICK CLICKSUMTER COUNTY The crowd at the 117th annual Linden Cemetery Picnic was welcomed with the warm graces of family, friends of the community, and just a bit of drizzly rain that kept most of those in attendance cozy in their lawn chairs beneath their tents perched under the coverage of trees. Hundreds of people came out to support the fundraising event some by donating cakes to be sold in auction, as well as the sale of sno-cones, barbecue meals and beverage, including the traditional lemonade. The event first started in 1842 when most Sumter County residents commuted to the event in horse-and-wagon to lend support and commemorate fallen veterans and other local residents. The Linden Cemetery is a staple of Sumters history and a monument holds memories of Linden. The Wall of Memory was the brainchild idea of Norris Bryan, later approved and established three years ago by the Linden Cemetery Committee. It serves to memorialize citizens at Linden who may be buried elsewhere but will long be remembered. Each plaque is set at an affordable fixed rate and gives details of the individuals name, who they are kin to, and their involvement in military service and the like. The annual picnic is by no means and easy event to coordinate. The event takes three months to plan for and funds go towards the maintenance and upkeep for the cemetery grounds, said Sheriff Bill Farmer. We have plenty of acres of vacant space for more burials and room for expansion, he said. Farmer was this years master of ceremony and board of directors member of the Linden Cemetery Association. Hundreds showed their support with their attendance and amongst the crowd were community leaders and plenty of decades of families. Steeped in tradition, the event is capPet of the week Times change, yet support for Linden remains Second arrest in drug case A second person was arrested in connection with a scheme to traffic in prescription drugs illegally obtained from the theft of a Sumter County doctors prescription pad. Timothy Andrew Brown Jr., 25, of Ocala, was arrested Saturday for trafficking in a controlled substance. He was placed in the Sumter County jail with bond set at $100,000. Brown is the boyfriend of Jodie J. McElrath, according to sheriffs Capt. Kevin Hofecker. McElrath was arrested June 19 on numerous drug charges and placed in jail where she remains with bond set at $2.2 million. Brown was an accomplice to McElraths actions, Hofecker said. He took an active part in facilitating the crimes, he said. McElrath, 28, Ocala, is charged with 21 counts of trafficking in oxycodone, 22 counts of obtaining a controlled substance by fraud, 32 counts of criminal use of personal identification information and obtaining Xanax. Since her arrest, she has been moved to the Hernando County jail but reBrown is the reported boyfriend of Jodie J. McElrath. McElrath, a former nursing assistant, is accused of stealing a prescription pad from her employer at a Sumter medical facility and illegally obtaining pain medications since last year, according to police reports. She was arrested when she was met by detectives after they learned she was returning to her former place of employment in The Villages to return the stolen prescription pad, Hofecker said. Investigators learned of McElraths illegal activities after receiving information from a Sumter County pharmacy that she was attempting to obtain prescription drugs with the stolen prescription pad, according to police. Authorities say McElrath has been using the stolen pad to obtain the medications from several pharmacies in Sumter County. She was reportedly using different peoples names on the prescription orders. PAGEA4SUMTERCOUNTY(FL) TIMES, THURSDAY, JULY4, 2013 Celebrate Independence from Drunk Driving Family, friends, food and fireworks are a good mix to celebrate Americas birthday but mixing alcohol and driving can turn the celebration into a tragedy. The Florida Highway Patrol will be out in full force during the Independence Day holiday travel period, which runs July 4 through July 7, looking to remove impaired drivers from the road. The Florida Highway Patrol continues our commitment to making the highways a safer place to drive by increasing our patrol efforts during the holiday, said FHP Director, Col. David Brierton. Our troopers will be on the roads, and taking enforcement action when needed, to ensure public safety for Florida motorists by reducing the number of alcohol related crashes. All uniformed FHP personnel will be on duty to patrol interstates and other major state roads throughout the holiday period. The strategy aims to increase the Patrols presence throughout Florida in an effort to deter traffic violations and to enhance services to motorists who break down while traveling or who need other assistance. Some tips from FHP for a safe Fourth of July: Plan a safe way home before the fun begins. Before drinking, designate a sober driver. If youre impaired, use a taxi, call a sober friend or family member, or use public transportation so you are sure to get home safely. If you happen to see a drunk driver on the road, dont hesitate to contact local law enforcement. And remember, if you know people who are about to drive while impaired, take their keys and help them make other arrangements to get to where they are going safely. The Florida Department of Highway Safety and Motor Vehicles provides highway safety and security through excellence in service, education and enforcement. The Department is leading the way to a safer Florida through the efficient and professional execution of its core mission: the issuance of driver licenses, vehicle tags and titles and operation of the Florida Highway Patrol. Lets review a few food safety tips in order to stay safe, enjoyed delicious food and quality family time!! Nothing is worse than being sick when you have something special planned or during a holiday. Taking the time to handle food safely will reduce the chances of foodborne illness. First safety tip starts when shopping at the store and on the trip home. Buy cold foods, especially meat right before you check out and be sure to keep raw meat and poultry separated from other food items in your shopping cart. This will prevent cross-contamination which happens when the juices of the raw meat drips onto other food in the cart. Drive directly home from the grocery store. Remember to always refrigerate perishable food within 2 hours unless the temperature is 90 degrees F or above then refrigerate perishable food within 1 hour. Freeze poultry and ground meat that wont be used in 1 or 2 days and freeze other raw meat within 4 to 5 days. Before you place your meat on the grill be sure to completely thaw meat and poultry before grilling so the meat will cook evenly. Slowly thaw in the lower shelf of the refrigerator in a shallow dish or place sealed packages in cold water. Do not leave your packages of meat on the counter at room temperature to thaw! Marinate meat or any food item in the refrigerator up to 2 days and NOT on the counter. Some larger cuts of beef and pork can be marinated up to 5 days. If you reuse the marinade be sure to let it come to a boil first to destroy any harmful bacteria before you reuse it. Proper temperature in both storing raw meat and cooked meat is very important to know and follow to minimize bacterial growth. If you transport food to another location be sure to keep it cold in an insulated cooler at 40 degrees F or below to minimize bacterial growth. Do not leave the cooler in a hot car, trunk or in the hot sun. Foods should be cooked to a safe minimum internal temperature to destroy harmful bacteria. When cooking on a grill food often browns very fast on the outside so a food thermometer can be used to make sure the food has reached a safe minimum internal temperature. Safe minimum internal temperatures for cooking meats are: Whole poultry, poultry pieces and ground poultry: 165 degrees F; all ground beef, pork, lamb and veal: 160 degrees F; Beef, pork, lamb and veal (steaks, roasts and chops): 145 degrees F and allow to rest at least 3 minutes before carving. Never partially grill meat or poultry and finish cooking later. When reheating fully cooked meats like hot dogs grill to 165 degrees F or until steaming hot. After you have cooked meat and poultry on the grill keep it hot until served at 140 degrees F or warmer. On the grill you can place meat on the grill rack that is not directly over the coals or flames. You can also keep meats warm in an oven set at 200 degrees F. When serving meat do not place cooked meat on the same plate you had raw meat on. Any harmful bacteria present in the raw meat juices could contaminate safely cooked food. Serve within 2 hours or in 90 degree weather meat should not be left out more than 1 hour. Refrigerate any leftovers promptly in shallow containers. Remember when you are not sure if food is safe to eat, when in doubt through it out! Corn on the cob is delicious when it is grilled. Its a quick vegetable grilled for a last minute addition to your dinner or picnic. Take 4 ears of corn, husked lay the ears directly on the grill over very hot coals. Grill by turning to brown them evenly, for 5 to 7 minutes. Season them to taste with butter, olive oil and salt. Enjoy!! And now to a favorite, barbecue ribs. There are lots of recipes out there and everyone has their favorite. Im going to share my Memphis-style barbecue rib recipe with you. Growing up close to Memphis I enjoyed lots of good barbecue. Ingredients: 4 to 5 pounds baby back ribs (2 full slabs), 2 tablespoons kosher salt, 1 tablespoon dark brown sugar, 1 tablespoon paprika, 3/4 teaspoon granulated garlic powder, 1 1/2 teaspoons granulated onion powder, 1/2 teaspoon cumin powder, 1 teaspoon ground black pepper, 1/2 teaspoon cayenne pepper. Barbecue sauce, recipe follows. Directions: Place the ribs on a large baking sheet. In a small mixing bowl, combine the kosher salt, brown sugar, paprika, garlic powder, onion powder, cumin, black pepper, and cayenne. Stir well to combine. Divide the mixture evenly between the racks and rub well onto all sides. Wrap the ribs in 2 layers of plastic wrap. Allow to sit undisturbed for at least 20 minutes, and up to 8 hours before proceeding. (Refrigerate if ribs sit longer than 20 minutes.) Remove the ribs from the refrigerator and allow to come to room temperature for 1 hour. Prepare a stovetop smoker according to the manufacturers instructions. Remove the plastic wrap and place the ribs on the rack in the stovetop smoker. Close the lid and smoke for 1 hour over low heat. Preheat the oven to 275 degrees F. Remove the ribs from the smoker and place on a foil-lined baking sheet. Generously brush the ribs on both sides with the sauce and cover with aluminum foil. Bake for 2 hours. Remove from the oven and allow to rest, covered, for 20 minutes. Using a sharp knife, slice between the ribs and serve, with additional sauce on the side. Barbecue sauce: 1/2 cup red wine vinegar, 1 cup chopped yellow onion, 1 tablespoon minced garlic, 1/4 cup light brown sugar, 2 teaspoons hot pepper sauce, 1 cup ketchup, 1 teaspoon lemon zest and 1/4 cup fresh lemon juice. Combine all of the ingredients in a blender and blend until smooth. Transfer to a nonreactive saucepan and simmer for 20 minutes to allow the flavors to marry. Use immediately, or refrigerate in a nonreactive, airtight container for up to 2 weeks. Yield: 1 3/4 cups. FROM THE GROUND UP Donna Lester UF/IFAS Extension Sumter County Horticulture Program Assistant In 2002, Sumter County Youth Center Manager Della Boysheley, partnered with Wendel Martinkovic, who at the time was the UF/IFAS Sumter County Master Gardener (MG) coordinator, to bring a life-sustaining educational opportunity for the children in the after-school care program. The Sumter County Youth Center supplied the plot of land with lots of seeds to sow and the garden took root. The objective of the Youth Garden is to introduce gardening to children in every aspect of a true functional, productive, sustainable and fruitful garden. The program, affectionately called the Junior MG Busy Bugs Garden Club, is so popular it boasts service to 32 children, ages 5 to 14, with a waiting list. The Busy Bugs learn by doing everything necessary to have a good garden. They dig and prepare the soil and learn to compost including composting with worms. They learn when to plant seasonal vegetables, fruit trees, muscadine grapes, plums and peaches, flowers and shrubs. They learn how to propagate from seeds then transplant seedlings when they are ready for the garden. A favorite activity is hunting for the good and bad bugs and properly identifying them. This ensures that the most rewarding time for the Busy Bugs, harvest time, is a huge success when the veggies and fruits are ready to eat. They share the harvest with family and friends and with others in need. The program has its challenges; and the work is not always easy, but the rewards are priceless. The pictures show the love Busy Bugs have for gardening. The program gives the children precious gifts: a deep understanding of the importance of caring for the land, respecting wildlife and our environment, a clear picture of where our food actually comes from, how much hard work goes into growing this delicious food, and how much fun it is to harvest the bounty and enjoy eating it. Its a true win, win situation. Wendel Martinkovic has since retired from UF/IFAS Extension to start a farm of his own, but he still devotes his time and passion for farming, along with a special group of Master Gardeners: Ann Carraway (butterfly expert), Barb Schroeder, Clarice Maurer, Anita Gray, Barb Peterson, Johanna and Roger Jones, Tom Nielsen, Nick Brown, Carol Frederick, Bridget Smith and Porgy Smith. Other Sumter County master gardeners support the youth garden behind the scenes by raising funds for supplies needed. Jim Davis is the new Master Gardener coordinator; for UF/IFAS Sumter County Extension and is currently studying for his masters in entomology at University of Florida. He will be able to share his expertise with the children for many years to come about their beloved bugs. Martha Maddox, Family Consumer Science agent, will be teaching, exciting food and nutrition lessons for the children. This is a newly added educational series being introduced to the Jr. MG Busy Bugs Garden Club. For other services UF/IFAS Extension has to offer please visit our website at www.sumter.ifas.ufl.edu. Standing inside a cool house, I look out the window and pity the wildlife and farm animals in the oppressive heat. Although they are true survivalists, I am aware that the summer heat affects them too. So what can we do to help make life a bit easier for the wild critters and farm animals through these hot summer months? To prevent overheating, animals need access to shade and water to survive. Trees are natures air conditioners and offer shade for outside animals. To keep water from getting hot and evaporating, put a birdbath under a tree for birds and squirrels. A shallow water ground level birdbath will offer other critters such as lizards, opossums, and armadillos access to water. Always have clean and accessible water available for livestock. I read where a critter mist creates a rainbow and attracts many species of birds. Basically simple to set up, just attach a misting nozzle to a hose. Place in a tree at a 45 degree, and the sunlight shining through the water will create a rainbow. Then go back inside and watch from your window all the wildlife that will come to cool off. Long after the critter mist is turned off, the puddles and wet muddy areas that are left behind will continue to offer wildlife a place to cool down. A critter mist can be used for livestock to cool off too. Be sure nesting houses, toad abodes, and any other shelters you put out for wildlife is in a shaded area and not in direct sunlight. Along with trees, a barn stall or pole barn will also offer welcome shade from the hot sun for horses and cows. Even leaving your grass a bit longer will assist animals. Longer grass will protect wildlife from predators while holding moisture and resisting drought conditions. Animals are trying to beat the heat just as we are. We can make the summer a bit more tolerable for them by just doing a few simple things. Critters will welcome the shade and water you provide, and you get a perfect viewing area from your window to enjoy all the pleasure the critters get just chilling out.
