We reviewed a number of recipes this week before
narrowing our selection down to one for those who are
adventuresome and like to try new things. This recipe is
a real taste treat for our readers who like okra and it is
a good introduction to okra for those who have avoided it
in the past. I [ \

Pickled Okra _

Select enough fresh okra to firmly pack six pint jars _
and trim so that a portion of the stem remains intact.In .
sterilized pint jars place one clove of garlic and one
whole hot pepper pod in each jar. Pack okra firmly in
jar and add one teaspoon dill seed per jar. ?
Combine one-half cup salt, one quart vinegar and one
cup water in saucepan and heat to boiling; simmer five
minutes. Pour vinegar solution over okra and seal jars.
Using this recipe, your pickled okra will retain its
natural color and crispness.
