Florence Mabel Matthias was born on May 25,
1898 to John Matthew and Mary Margaret
Gumbs on the island of Anguilla. At eleven she
came to St. Thomas with her aunt, Ann Elizabeth
Richardson.
At an early age Miss Florence, as she was
affectionately known, developed a keen interest
in the culinary arts and demonstrated her
competence in this area to a high level of
proficiency.
Knowledge of Florence's expertise was widely
acclaimed and sought after by notable citizens in
the community. Among the many persons
privileged to experience and enjoy her exotic
dishes were: Axel Hoist, President of the Virgin
Islands National Bank; Albert E. Wharton,
President of the Virgin Islands National Bank. pre-
sently known as First Pennsylvania Bank; Hjalmar
Bang, Danish Consul: Catherine Lockhart; Mr. &
Mrs. Herbert Lockhart, Sr.; and Mrs. Gertrude
Dudley Melchoir. She retired in 1970,
Although Miss Florence's schedule was very
demanding, she nonetheless devoted con-
siderable time to Christchurch Methodist
Benevolent Society and St. Joseph- Lodge.
Particularly noteworthy was the warmth, love,
concern and affection she lavished on her
children, grand-children, other relatives and
neighborhood children.
Truly she was a servant of God whose labors
and trials are over. Florence, rest in thy Saviour's
joy.
